3 large eggs
2 egg yolks
1 cup sugar
2 tablespoon sweet rice flour
2 tablespoon tapioca starch (or 1/4 cup of your preferred gluten-free flour blend )
1 teaspoon gluten-free vanilla extract (or paste)
1 1/2 cups canned light coconut milk
2 tablespoons softened dairy-free butter substitute (Such as Earth Balance Vegan Sticks)
1/2 teaspoon kosher salt
1 1/4 cup flaked sweetened coconut

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F.
  • Beat eggs with sugar in a large mixing bowl.
  • Add gluten-free flours , vanilla, coconut milk, softened dairy-free butter substitute, salt, and flaked coconut. Beat just until ingredients are combined.
  • Pour pie mixture into an ungreased 9-inch pie plate .

1/2 cup Bisquick™ gluten free mix
1/2 cup sugar
3/4 cup evaporated milk
1 tablespoon butter, softened
1 1/2 teaspoons pumpkin pie spice
1 teaspoon vanilla
2 eggs
Whipped topping, if desired

Steps:

  • Heat oven to 350° F. Spray 9-inch glass pie plate with cooking spray.
  • Lightly spoon Bisquick into measuring cup, level off with knife. In large bowl, stir all ingredients except whipped topping with wire whisk until blended. Pour into pie plate.

1/2 c bisquick, or gluten free bisquick one cup of bisquick can be substituted by a mix of one cup of flour, 1½ teaspoons of baking powder, ½ teaspoon of salt, and 1 tableorspoon of oil or melted butter.
3/4 c sugar
4 eggs
2 c milk
1 c coconut, flaked
1 tsp vanilla
1 Tbsp butter, softened
MAGICALLY MAKES IT'S OWN CRUST

Steps:

  • 1. Combine all ingredients and pour into 9 inch buttered pie pan. Like magic, it layers into a crust, custard, coconut topping.
  • 2. Bake at 400 degrees for 25-30 minutes until custard sets.
