Fresh or canned pineapple chunks
Ham slices cut into squares
Kabob sticks
1 Pineapple (trimmed and cut into wedges)
½ cup butter (melted)
¾ cup brown sugar (packed)
2 Tablespoons Honey
1 teaspoon imitation coconut extract

Steps:

  • If using wooden kabob sticks, soak them in water for at least 20 minutes before barbecuing.
  • Alternate ham squares and pineapple chunks on your kabob sticks.
  • In a medium sized mixing bowl combine melted butter, brown sugar, honey and coconut extract. Warm the glaze in the microwave for about 30 seconds and then lather it over the warm barbecued pineapple and ham kabobs.

One 9- to 10-pound bone-in fully-cooked smoked ham (butt or shank half)
1 tablespoon whole cloves, optional
Two 20-ounce cans sliced pineapple
20 maraschino cherries
2 cups honey
2 cups light brown sugar

Steps:

  • Let the ham sit at room temperature for about 30 minutes.
  • Preheat the oven to 325 degrees F.
  • Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Push the cloves into the ham, if using, placing them at the intersections of the cuts. Put the ham, flat-side down, on a rack in a roasting pan.
  • Drain the pineapples, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
  • Pour 1/4 inch water in the bottom of the pan and tent the ham with foil.
  • Roast until an instant-read thermometer inserted in the thickest part of the ham (avoiding bone) registers 130 degrees F, about 2 hours 30 minutes (or about 15 minutes per pound).
  • Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Simmer, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
  • Increase the oven temperature to 425 degrees F.
  • Uncover the pan and carefully brush a third of the glaze all over the ham. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes.

1 lb. Sugardale Simple Carve Boneless Smoked Ham, 1" cubed
1/2 fresh pineapple, cubed into 1" pieces
1 medium red onion, cut into 1" pieces
1 large green bell pepper, cut into 1" pieces
1/2 c. brown sugar
1/2 c. pineapple juice (canned or fresh)
1/2 c. ketchup
1 Tbsp. Worcestershire sauce
1 Tbsp. white vinegar
2 tsp. hot sauce (6-8 shakes)
1/2 tsp. garlic powder
1/4 tsp. pepper

Steps:

  • Begin by cubing the ham into 1" pieces. Cut the fresh pineapple into 1" chunks and cut the pepper and onion into 1" pieces.
  • Skewer the ham, pineapple, pepper and onion on to pre-soaked, wooden skewers or metal skewers.
  • In a bowl, whisk together the brown sugar, pineapple juice, ketchup, Worcestershire sauce, vinegar, hot sauce, garlic powder and pepper. Whisk together until brown sugar dissolves into the liquid. Glaze should be smooth.
  • Place the kebabs on a grill that has been pre-heated to medium-high heat. Brush the kebabs with the glaze. Grill the kebabs for 4-6 minutes per side, turning them twice. After turning each time, brush the kebabs again with the glaze.
  • After cooking, remove from the grill and serve right away while warm.

1 (6 pound) fully-cooked, bone-in ham
1 fresh pineapple
2 (6 ounce) cans pineapple juice
1 cup brown sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place the ham, cut side down, into a roasting pan.
  • Cut the skin off the pineapple with a sharp knife and cut out any brown spots of skin left behind. Slice the pineapple into 1/2-inch slices and cut the cores out of the slices. Pin the slices onto the ham with toothpicks.
  • Bake ham in the preheated oven until a meat thermometer inserted into the thickest part of the ham reads 140 degrees F (60 degrees C), 1 1/2 to 2 hours.
  • While the ham is baking, mix the pineapple juice and brown sugar in a microwave-safe ceramic or glass bowl and microwave on medium power until the glaze is boiling and slightly thickened. Work carefully because the glaze will be sticky and very hot.
  • Pour about half the glaze evenly over the ham and pineapple about 1 hour before the end of baking; pour the rest over the ham about 30 minutes before the end of baking.

1 fully cooked bone-in ham (7 to 9 pounds)
Whole cloves
GLAZE/SAUCE:
2 tablespoons cornstarch
1/4 cup cold water
2-1/2 cups packed dark brown sugar, divided
1 can (20 ounces) unsweetened crushed pineapple, undrained
1/4 cup lemon juice
2 tablespoons Dijon mustard
1/4 teaspoon salt
1 cup packed light brown sugar

Steps:

  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern; insert a clove in each diamond. Cover and bake 2 to 2-1/2 hours or until a thermometer reaches 130°., Meanwhile, in a large saucepan, dissolve cornstarch in water; stir in 2 cups dark brown sugar, pineapple, lemon juice, mustard and salt. 1 (8 ounce) can cubed pineapple in juice, 1/4 cup juice reserved
2 tablespoons light sodium soy sauce
2 tablespoons dark brown sugar
1/4 teaspoon ginger, freshly grated
2 pounds cubed ham or ham steak

  • In a 9 x 9-inch glass casserole dish, add 1/4 cup of the canned pineapple juice, soy sauce, brown sugar and ginger. Whisk to combine until sugar is dissolved. Add in pineapple chunks and ham. 1 (20 ounce) can pineapple chunks or use fresh pineapple (our favorite way!)
2 cups of ham chunks - little leftover pieces of ham are perfect for this!
Skewers , metal or wooden
2 cups precooked rice (our favorite is Jasmine)

Steps:

  • GRILLED KABOBS:
  • If using bamboo skewers, soak for 15 - 30 minutes prior to filling with meat and fruit.
  • Prepare grill per grill specifications
  • Using a Kabob skewer, skewer pineapple and ham, alternating between the two.
  • Grill kabobs for 10 - 20 minutes on indirect flame flipping half way through allowing ham and pineapple to caramelize. You may need to do this in batches.
  • While kabobs cook, base with pure maple syrup, once per side.
  • When heated through, serve immediately over rice.

1/4 cup unsweetened pineapple juice
