1/4 teaspoon kosher salt
1/8 teaspoon white pepper
1/3 cup 100% apricot fruit spread, warmed
1 tablespoon orange juice

Steps:

  • Preheat oven to 350°.
  • Place hens, breast side up, on a rack in a shallow roasting pan. Sprinkle with salt and pepper. Bake, uncovered, for 30 minutes.
  • In a small bowl, combine spreadable fruit and orange juice. Spoon some of the apricot mixture over the hens.
  • Bake 30-35 minutes longer or until golden brown and juices run clear, basting several times with remaining apricot mixture.
  • Let stand for 5 minutes before serving.

1 shallot, minced
1 tablespoon butter
Zest of 2 clementines plus 1 cup clementine juice
1/2 cup jarred cranberry sauce
1 packed tablespoon brown sugar
1 sprig fresh rosemary
4 Cornish game hens, rinsed and dried
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • In a small saucepan, saute the shallots in the butter over medium heat until translucent, about 5 minutes. Add in the clementine zest and juice, cranberry, brown sugar and rosemary. Simmer until thick, about 10 minutes. Set aside to cool.
  • Season the game hens liberally with salt and pepper. Using a basting brush, paint each bird entirely with the glaze. Cover the wing tips with foil to keep them from blackening too much.
  • Place the glazed birds in an enameled cast-iron Dutch oven. Roast for 20 minutes, and then reglaze the birds. Check after 15 more minutes; if the sugars in the glaze are turning too brown, lightly tent the Dutch oven with foil to protect the skins. Baste again after 45 more minutes, then check with an instant-read thermometer after another 5 minutes; the thighs must register at 165 degrees F, the breasts at 170. Let rest for 10 minutes and serve.

Cornish game hens are festive and readily available. I've even made them the centerpiece of a holiday meal. These little birds cook much more quickly than other holiday roasts, such as lamb or ham. I normally figure on one hen (in the 1 1/2- to 2-pound range) to serve every two guests - especially if you also plan to have a first course and a dessert.

4 Cornish game hens (about 1 1/2 pounds each), cut down the backbone with heavy-duty scissors and spread open
2 cups kosher salt
3 tablespoons olive oil
2 medium-large onion, cut into medium dice
1 cup dried apricots, cut into medium dice
½ cup apricot jam
¼ cup balsamic vinegar
½ cup pistachio nuts, coarsely chopped
½ cup chopped fresh parsley

Steps:

  • Brining the hens before roasting improves their flavor: Dissolve 2 cups of kosher salt in a clean bucket filled with 5 quarts of water. Add prepared hens and soak for 2 hours. Rinse thoroughly; pat dry.
  • Adjust oven rack to upper middle position, and heat oven to 450 degrees.
  • Heat oil in a large skillet. Saute onions until softened, about 7 minutes. Stir in apricots, then spread mixture onto a large (about 18-by-12-inch) lipped cookie sheet. Lay hens over the mixture. Mix jam and vinegar, and brush all but a few tablespoons over hens.
  • Bake hens, brushing 2 or 3 times with remaining jam mixture and accumulated pan juices, until hens are golden brown and juices run clear, about 45 minutes. Turn heat from bake to broil, then cook until hens are spotty brown, watching carefully so they don't burn, 4 to 5 minutes.
  • Transfer hens to a large platter with tongs, then cut in half at the breastbone to create individual servings.
  • Return apricot dressing to the oven and broil to evaporate some of the excess liquid, about 5 minutes longer. Stir in pistachios and parsley. Spoon in a mound next to hens.

1 medium red onion, quartered
4 garlic cloves, peeled
6 sprigs fresh thyme

Steps:

  • Preheat oven to 450 degrees. Stir together maple syrup and cumin; season with salt and pepper. Using kitchen twine, tie hen legs together, then tuck wing tips underneath. Place hens on a rimmed baking sheet and rub with 1 teaspoon oil; season with salt and pepper.
  • Roast 10 minutes. Remove sheet from oven and add carrots, onion, garlic, and thyme. Toss vegetables with 2 teaspoons oil and season with salt and pepper. Roast 20 minutes.

1/4 cup water
6 ounces apricot preserves (sugar free)
1/2 teaspoon cinnamon
garlic powder
cooking spray
aluminum foil
1 tablespoon olive oil
1 garlic clove, minced
1 stalk celery, finely chopped
1 small onion, finely chopped
6 -8 dried apricots, finely chopped
1/2 cup brown rice
1/2 cup long grain and wild rice blend (ParExcelence)
2 cups chicken broth

Steps:

  • For glaze: Put 1/4 cup water, apricot preserve and cinnamon in a microwave safe bowl.
  • Microwave on high about 20 seconds.
  • Stir to blend.
  • If not blending well, microwave another 10 seconds.
  • Stir again till smooth.
  • For rice: Sauté garlic, celery, onion, apricots in oil about 5 minutes.
  • Add brown rice; sauté another 3 minutes.
  • Add 2 cups chicken broth and 3-4 tablespoons of glaze sauce.
  • Bring to a boil.
  • Lower heat to a low simmer.
  • Simmer covered 10-15 minutes.
  • Add pilaf rice.
  • Stir, cover and simmer 15-25 minutes or longer until liquid is absorbed.
  • Allow to cool. (This could be done earlier in the day if you see fit).
  • For Hens: Preheat oven to 400°F; line a 13 x 9 pan with foil and spray foil with cooking spray.
  • Wash hens, remove giblets and pat dry.
  • Sprinkle with garlic powder in and out of hens.
  • Stuff with rice mixture.
  • Brush with glaze mixture.
  • To prevent over browning make a foil tent.
  • Crease a sheet of foil crosswise through the center to form a tent leave 1-2 inches between top of hens so heat can circulate crimp on sides.
  • Bake 30 minutes.
  • Remove foil and brush with glaze.
  • Bake uncovered until hens are tender and juices run clear, about 40-45 minutes, basting about every 10-15 minutes until glaze is used up.
  • 2-4 servings depending on appetite.

1 cup wild rice, rinsed
Coarse salt and freshly ground black pepper
2/3 cup coarsely chopped chestnuts (either fresh or from a jar or can), toasted
1/2 cup finely chopped onion
2 teaspoons finely chopped fresh thyme
1 teaspoon finely chopped fresh sage
3 tablespoons finely chopped flat-leaf parsley, plus more for garnish
1 1/2 tablespoons finely chopped fresh dill
4 Cornish game hens, rinsed and patted dry
1 cup pomegranate juice
2 cups homemade or canned store-bought low-sodium chicken stock
1/2 cup white wine, optional
1/2 cup all-purpose flour
1 cup plain Greek yogurt
2 cloves garlic, finely chopped
2 tablespoons extra-virgin olive oil
2 tablespoons finely chopped fresh mint
1/4 cup pomegranate seeds
1/2 cup crumbled feta cheese

Steps:

  • In a 2-quart saucepan, combine rice, 3 cups cold water, and 1 teaspoon salt. Bring to a boil over high heat. Immediately reduce heat to low, cover, and cook until all the liquid has evaporated, 45 to 55 minutes.
  • Preheat the oven to 375 degrees with rack in center of the oven. Transfer rice to a large bowl, along with chestnuts, onion, thyme, sage, parsley, and dill; stir to combine. Lightly season the cavity of each game hen with salt, and loosely fill with equal amounts of stuffing, leaving a little space in each for the rice to expand during roasting. Any remaining stuffing may be baked in a covered heatproof dish; set aside.
  • Using kitchen twine, truss hens by tying the legs together tightly, looping each side of the string around a wing, and bringing the string all the way around the bird tightly to hold the legs together and the wings close to the body.
  • Season hens with salt and pepper, and place breast side down on a rack set in a roasting pan. Roast for 15 minutes, and baste with pomegranate juice. Continue basting with remaining pomegranate juice every 15 to 20 minutes. During the last 25 minutes of roasting, place the reserved stuffing into the oven to heat. When 10 minutes remain, flip the hens over and continue roasting until the hens are dark golden brown and the juices run clear when pierced at the thigh. Total cooking time for hens will be 50 to 55 minutes or until an instant-read thermometer inserted into the thickest part of the thigh, not touching the bone, should register 175 degrees to 180 degrees.
  • Remove hens and stuffing from the oven. Transfer hens to a platter. Cover with foil, and let rest for 10 to 15 minutes. Place roasting pan on the stove over medium-low heat. Add 1/2 cup chicken stock. Using a wooden spoon, scrape up any browned bits from the roasting pan. Add wine, if using. Sift flour into the roasting pan, and stir to combine. Slowly whisk in 1 1/2 cups stock. Cook until mixture has thickened, 5 to 6 minutes. The consistency of the gravy may be adjusted with a teaspoon or two of stock or wine. Season with salt and pepper.
  • In a small bowl, combine the yogurt, garlic, and olive oil. Gently stir in the mint and pomegranate seeds. Season with salt and pepper.
  • Place a hen on each of 4 plates. Spoon gravy over hens and garnish with parsley, feta cheese, additional stuffing, and yogurt sauce.

2 tablespoons canola oil
2 cornish game hens, halved

  • In a small bowl, combine juice, jerk seasoning and oil. Rinse halved hens and pat dry with paper towels. Put the hens in a zip-top bag and pour in the marinade. Turn hens in the bag to coat evenly. Close the bag and refrigerate for 2 to 4 hours.

I marinate at least 2 hours, baked at 400º for 50 minutes or until the chicken is cooked through. I poured marinade over the chicken before baking and basted every once in awhile as it was baking. This recipe is adapted from the Southern Living 2000 Annual.

1 tablespoon honey

1/4 cup honey
1/4 cup cider vinegar
1/4 cup Dijon mustard
3 tablespoons vegetable oil
1 tablespoon soy sauce
1 tablespoon fresh tarragon - chopped or 1 teaspoon dried
1 teaspoon paprika
1/2 teaspoon pepper
STUFFING
2 tart green apples - cored and quartered
6 tablespoons raisens
6 green onions - cut into thirds
6 celery stalks - cut into thirds
3 small cinnamon sticks broken in half

Steps:

  • MARINADE: combine apple juice and honey in medium saucepan. stir over low heat until honey dissolves. Mix in cider vinegar, Dijon mustard, oil, soy sauce and herbs and spices. HENS stuff each with one apple piece, on tablespoon raisins, 3 green onion, 3 celery and cinnamon stick. Tie legs to hold shape.Place in a large baking dish and pour marinade over hens. Chill at least 2 hours or overnight. Preheat oven to 350. Grease 2 large roasting pans, Remove hens and place breast side down in greased roasting pans. Pour 1 tablespoon marinade into each plan and place 1 apple quarter in each pan. Roast for 30 minutes, basting occasionally. turn breast side up and continue roasting until juice run clear when thickest part of thigh is pierced. Discard stuffing and tent hens. combine apple quarter from each pan with pan juices in large skillet. Add remaining marinade and boil until liquid is reduced to 2 cups. puree mixture until smooth. Return to skillet and season, bringing to simmer. Spoon sauce over hens and serve.

Hens:
6 (1- 1½ lb) Cornish Game hens, thawed
1 Tbsp olive oil
2 Tbsp Garam Masala seasoning
Salt and fresh ground pepper
Stuffing:
1 Tbsp olive oil
2 c. diced sweet potato
¼ cup diced fresh Jalapeno
1 box cornbread stuffing mix
¼ cup butter
¾ cup water
¾ cup apple juice
1½ c. diced red apple - such as Macintosh or Jonathan.
Sauce:
1 Tbsp Tamarind Concentrate - found in Asian section or Asian markets
1 tsp sesame oil
1 tsp soy sauce
3 Tbsp Teriyaki sauce
1 Tbsp Garam Masala seasoning
½ cup pure (real) maple syrup

Steps:

  • Preheat oven to 450° F. Rinse Game Hens and pat dry with paper towels. Brush lightly with olive oil and season with garam masala, salt and pepper. Set hens aside while preparing stuffing. To prepare stuffing, toss diced sweet potatoes with olive oil in a microwave safe shallow dish - such as a pie plate. Microwave on high 6-8 minutes, stirring ever 1-2 min or until potatoes are nearly cooked. Meanwhile bring water, apple juice, butter and jalapenos to a boil. Remove from heat. Stir in stuffing mix. Cover and let sit 5 min. Stir in sweet potatoes and apples. Lightly stuff cavities of Game Hens with stuffing. Arrange hens in 9 x 13 baking dishes. Leave some space between birds so air can circulate. Roast birds for 30 minutes. While birds are roasting, combine all sauce ingredients. Remove hens from oven, brush with sauce, return to oven and cook for another 20-30 min, brushing with sauce occasionally.

2 Cornish hens
1/2 cup ginger orange marmalade
4 garlic cloves, minced
salt & pepper
vegetable stuffing (for Cornish Hen)
vegetable oil (for brushing the birds)
1 orange, sliced

Steps:

  • Wash the hens and dry.
  • Salt and pepper the hens.
  • Stuff the birds with the vegetable dressing.
  • Cover the birds loosely with foil and bake in 375°F oven for 45 minutes.
  • Uncover and continue baking for 15 minutes.
  • Mean while mix the marmalade and garlic in a small pot to melt the marmalade.
  • Paint the birds with the glaze, decorate with the orange slices and continue baking for 15 minutes or until golden and the birds are done (watch you don't burn the birds).

3 tablespoons butter
2 tablespoons slivered almonds
2 tablespoons chopped onion
1 box Uncle Bens Wild Rice Chicken Flavor
2 cups chicken broth Seasoning pack from Uncle Bens
1/2 teaspoon salt
2 Cornish game hens
salt to taste
1/4 cup melted butter

Steps:

  • 1. Melt 3 tablespoons butter in a medium saucepan over medium heat. Stir in the almonds, onion, and uncooked wild rice . Saute 5 to 10 minutes. Mix in the chicken broth and seasoning package. Bring to a boil. Reduce heat, cover, and cook 45 minutes until rice is tender and easily fluffed with a fork. 2. Preheat oven to 400 degrees F (200 degrees C). 3. Season the Cornish game hens inside and out with salt, and stuff with the rice mixture. Place the hens breast side up on a rack in a baking pan.. 4. Apple Glaze • 12 ounces of apple juice concentrate, thawed • 3 tablespoons of water • 2 teaspoons of cornstarch • 1 teaspoon of cinnamon • 1 teaspoon lemon juice Mix 1/2 cup of the apple juice concentrate with water and pour over the hens. Place in the oven and bake for 45 minutes. While the hens are baking, prepare the sauce on your stovetop. Combine the remaining apple juice concentrate, cornstarch, cinnamon, and lemon juice in a small saucepan and mix well. Simmer over medium heat until thickened, stirring frequently. Remove from heat. When the hens have been in the oven for 45 minutes, remove them and brush them with the apple and cinnamon glaze. Return them to the oven and bake for approximately 10 or 15 minutes longer. When ready, the hens should be browned and the internal temperature should be 180 degrees Fahrenheit or higher.

1 Cornish hen, 1 1/2 to 1 3/4 lbs, defrosted
1/4 teaspoon salt
1/8 teaspoon pepper
1 small apple, cut into 1/2 in ch pieces
1 tablespoon packed brown sugar
1/2 cup whole berry cranberry sauce
1 teaspoon cognac or 1 teaspoon brandy
1/4 teaspoon ground cinnamon

Steps:

  • Wash hen and pat dry.
  • Sprinkle cavity with salt and pepper.
  • Toss apple pieces with brown sugar.
  • Place apple pieces in hen cavity.
  • Tie drumsticks together with heavy string.
  • Place hen, breast side down, on roasting rack.
  • In small bowl, stir cranberry sauce, cognac and cinnamon.
  • Baste hen with half the cranberry glaze.
  • Microwave on High 8 to 12 minutes, or until juices run clear and meat near bone is no longer pink, rotating 1/2 turn ever 2 to 3 minutes.
  • Turn hen breast side up after half the cooking time and baste with remaining glaze.
  • Variation - Honey-Soy Glazed Cornish Hen: Substitute half small onion, quartered, for the apple and brown sugar in cavity. Substitute 2 tablespoons honey, 1 tablespoon soy sauce, 1/4 teaspoon dry mustard and 1/8 teaspoon ground ginger for the glaze ingredients. Microwave glaze at High 30 to 45 seconds, or until heated, stirring to dissolve honey. Continue as directed.
  • Glazed Cornish Hens for Two: Double all ingredients. Prepare as directed except microwave hens at High 16 to 20 minutes.

Years ago I found this recipe on a box of Uncle Ben's original rice. I can always get the man at the meat counter to cut these in half for me even when they are frozen. My daughter loves getting her own "little chicken"

1/4 cup apple jelly
1/2 teaspoon cinnamon
2 rock cornish game hens, halved
1 (6 ounce) box long grain and wild rice blend
salt
2 teaspoons apple jelly
1 1/2 cups red seedless grapes, halved or 1 red apple, cored and coarsely chopped
1/2 cup thinly sliced celery
1/3 cup unsalted cashews

Steps:

  • Combine 1/4 cup of jelly and cinnamon in a small sauce pan.
  • Heat and stir until melted; set aside.
  • Place hen halves, skin side up on a rack in a shallow roasting pan; sprinkle with salt.
  • Roast in 350 degree oven for 20 minutes.
  • Brush with the jelly/cinnamon mixture.
  • Roast for 20 to 30 minutes longer or until browned and tender.
  • While hens are roasting, cook rice and contents according to the package directions.
  • Stir in 2 tablespoons apple jelly, grapes and celery.
  • Sprinkle cashews over rice and serve with the hens.
