PAN-ROASTED CARROTS WITH MINT AND PARSLEY GREMOLATA

Steps:
- Place the carrots, broth and 1 teaspoon of the oil in a large skillet and bring to a boil over medium-high heat. Cover, reduce the heat to medium and continue to cook until the carrots are tender, 12 to 14 minutes. Uncover and cook, stirring, until the liquid has evaporated and the carrots are lightly browned, another 2 to 3 minutes. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper.
- Meanwhile, combine the mint, parsley, juice, zest and remaining 3 teaspoons oil in a small dish. Sprinkle with salt and pepper. Toss the warm carrots with the herb mixture.

ROASTED CARROTS WITH HONEY AND MINT

- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Place the carrots on the baking sheet.
- In a small saucepan, melt the butter over medium heat. When the butter has melted, remove the pan from the heat. Add the brown sugar and honey, and stir to combine.
- Pour the butter mixture over the carrots. Sprinkle with the mint, salt and pepper. Toss to combine. Roast the carrots until tender and lightly golden, 20 to 25 minutes. Transfer to a platter and garnish with fresh mint.
MINTED GLAZED CARROTS
Found on bunch carrots from Siri Produce Inc. in Oregon. DON'T use those awful "baby carrots" from the grocery store. Whole carrots (small-medium sized) and organic are best. If the carrots are small leave whole but if they are medium-sized cut in half lengthwise. If your carrots are good quality they don't need to be peeled. Recipe adapted slightly.

- Lightly steam the carrots in a steamer basket. Drain.
- Wash out the pot, dry it with a towel then heat the pan on medium heat.
- Add the butter and sugar until butter is melted and sugar has dissolved.
- Add the carrots to the pan and cook until butter starts to brown, the carrots have a nutty fragrance and are fork tender.
- Arrange the carrots on a serving platter.
- Season with salt (we liked it with French grey sea salt) and cracked black pepper. Garnish with the mint. Serve immediately.
GLAZED FRESH PEAS AND CARROTS WITH MINT AND DILL
Steps:
- Cut a 1/2-inch piece from a carrot at an angle. Roll the carrot until the cut side faces up and cut another 1/2-inch piece at an angle. Continue rolling and cutting both carrots.
- Combine the carrots, onion, 1 tablespoon of the butter, 1/2 teaspoon salt, and 3 tablespoons water in a medium saucepan. Cover and cook over medium heat until very tender, about 10 minutes. A knife should be able to pierce through a carrot with no resistance.
- Meanwhile, combine the peas and 3 tablespoons water in a large saucepan. There should be just enough water to coat the bottom of the pan. If there isn't, add more water as needed. Bring to a boil, then simmer, stirring occasionally, over medium heat until the peas are just tender, 8 to 10 minutes.
- Add the carrot mixture and the remaining 1/2 tablespoon butter to the peas. Cook, stirring frequently, until the vegetables are glazed and bound by a thin, creamy sauce, about 2 minutes.
- Transfer to a serving bowl and top with mint and dill.
ORANGE-GLAZED CARROTS WITH MINT
A simple and tasty side dish from Fine Cooking. I don't cut the carrots as stated, I just use whole baby carrots.

Steps:
- Cut the carrots on the diagonal into 3-inch lengths.
- Cut thicker pieces in half lengthwise to make them uniform in size.
- Heat the oil in a 9-inch saute pan over moderate heat.
- Add the carrots and cook until lightly browned on all sides, about 3 minutes per side.
- Season with salt and pepper.
- Add the ginger, garlic, and shallots and cook over medium-low heat, stirring occasionally, until the shallots are softened, 5-7 minutes.
- Add the honey, orange juice, soy sauce and water.
- Cover with a round of waxed paper that fits snugly on the vegetables.
- Cook the carrots slowly on top of the stove, stirring occasionally, until the carrots are tender and the juices have formed a glaze, 30-40 minutes.
- Garnish with the mint.
GLAZED CARROTS WITH THYME
Cooking carrots in a bit of water, butter, and sugar brings out their delicate flavor and coats them with a thin glaze. Instead of baby carrots, you can substitute medium carrots, cut into thin slices. Dill or parsley would work here as well.

- Place mint sprigs in bottom of large saucepan; place steamer rack in pan. Add just enough water to touch bottom of steamer rack; place carrots on rack.
