4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 cup shortening
4 large egg yolks
2 tablespoons lemon juice
8 to 10 tablespoons cold water
FILLING:
7 cups finely chopped peeled apples
2 cups sugar
1/4 cup all-purpose flour
2 teaspoons ground cinnamon
Dash ground nutmeg
GLAZE:
1 cup confectioners' sugar
1 tablespoon 2% milk
1 tablespoon lemon juice

Steps:

  • In a large bowl, combine flour, salt and baking powder. Cut in shortening until mixture resembles coarse crumbs. In a small bowl, whisk the egg yolks, lemon juice and water; gradually add to flour mixture, tossing with a fork until dough forms a ball. Divide in half. Chill for 30 minutes. , Roll out one portion of dough between two large sheets of waxed paper into a 17x12-in. rectangle. Transfer to an ungreased 15x10x1-in. baking pan. Press pastry onto bottom and up sides of pan; trim even with top edge. , In a large bowl, toss the apples, sugar, flour, cinnamon and nutmeg; spread into crust. Roll out remaining pastry to fit top of pan; place over filling. Brush edges with water or milk; pinch to seal. Cut slits in top. , Bake at 375° for 45-50 minutes or until golden brown. Cool on a wire rack. Combine glaze ingredients until smooth; drizzle over bars.

1 teaspoon salt
1 cup cold butter, cubed
1 egg, separated
3 to 4 tablespoons 2% milk

½ cup white sugar
½ cup milk
½ cup heavy cream
¼ cup butter
2 tablespoons cornstarch
2 tablespoons milk
1 teaspoon vanilla extract
2 tart apples - peeled, cored and sliced
1 tablespoon all-purpose flour
¼ teaspoon ground cinnamon
1 (15 ounce) package pastry for double-crust pie
½ cup confectioners' sugar
1 tablespoon milk
¼ teaspoon vanilla extract
1 tablespoon butter, softened

Steps:

  • In a medium saucepan over medium heat, combine 1/2 cup sugar, 1/2 cup milk, 1/2 cup cream, and 1/4 cup butter. Heat until butter is melted, stirring occasionally. In a small bowl, whisk together the cornstarch, 2 tablespoons milk, and vanilla; stir into saucepan. Cook until thickened, stirring constantly. Remove from heat, and set aside to cool slightly.
  • Preheat oven to 400 degrees F (200 degrees C). In a medium bowl, combine the apples, flour, and cinnamon. Mix well.
  • Line a 9 inch pie pan with pie dough. Pour thickened filling mixture into pastry-lined pie pan. Arrange apple mixture evenly over filling. Top with second crust, seal and flute the edges. Cut slits in top crust.
  • Bake for 30 to 40 minutes, or until crust is golden brown and apples are tender. Cool for at least 30 minutes.
  • In small bowl, combine confectioners' sugar, 1 tablespoon milk, 1/4 teaspoon vanilla, and 1 tablespoon softened butter. Blend until smooth; pour evenly over warm pie. Refrigerate for AT LEAST 1 1/2 hours before serving (longer is better).

6 cups thinly sliced peeled apples, divided
1/2 cup sugar

  • Line a 9-in. pie pan with the bottom crust. Place half of the apples in the crust; set aside. , In a bowl, combine sugars, gingersnaps, cinnamon, nuts and butter; sprinkle half over apples in crust. Top with remaining apples and sugar mixture. Roll out remaining pastry to fit top of pie. Cut a few slits in the top and place over apples; seal. 1 egg, separated reserve white (yolk beaten with enough milk to equal 2/3 cup)
1 cup corn flakes cereal, crushed
8 cups cooking apples, cored, peeled and sliced (8 to 10 med apples)
1 cup sugar
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 egg white (reserved egg white)

1 cup powdered sugar

20-22 medium apples, granny smith & golden delicious(peeled & sliced thinly
1 1/3-2 Tbsp lemon juice(1 tbs plus 1 tsp)
1 1/2 c splenda granular
3/4 c brown sugar
1 1/2 tsp cinnamon
1 tsp nutmeg
dash salt
1 c raisins
HOMEMADE PIE CRUST
5 c all purpose flour
1 1/3 Tbsp granulated sugar (1 tbs plus 1 tsp)
1/2 tsp salt
1/2 tsp baking powder
2 tsp cinnamon
1 1/2 c butter flavor crisco
2 jumbo egg yolks (save the whites)
3/4 c ice water
extra sugar for top or use raw sugar or pastry sugar
GLAZE FOR TOP (OPTIONAL)
2 c powdered sugar
1 tsp vanilla extract
1-2 Tbsp milk or more, as much as needed to reach desired consistency

Steps:

  • 1. Preheat oven to 400 degrees F.
  • 2. For the Crust: combine the salt, baking powder,cinnamon and 5 teaspoons of sugarstir to mix.
  • 3. Measure flour and then add cinnamon mixture to flour. Stir together to blend.
  • 4. Add crisco to flour, and mix crisco into flour with a pastry blender or use 2 forks, until flour resembles little small peas.
  • 5. Beat egg yolks, then add the cold water and stir to blend, then pour into flour mixture, and mix together to form a ball. May need to add 1-2 extra tablespoons of cold water. Add just enough to shape dough into a ball.
  • 6. Divide dough into 2 equal portions, put one in fridge, then dust work surface with flour and add remaining dough. Dust rolling pen, then roll dough out in a rectangle shape to fit a 15 X10 inch X 1 inch deep size pan. May need to piece parts of dough together to cover entire bottom of pan. Pinch seams together.
  • 7. Carefully pick rolled dough up and onto rolling pin, then hold over pan, & unroll from rolling pin into pan. Repeat to cover entire bottom of pan. Spread half of apples onto prepared crust.
  • 8. In a small bowl combine splenda, brown sugar, cinnamon, nutmeg, & salt. Stir to mix then sprinkle half of sugar mixture over apples.
  • 9. Add remaining apples, raisins and the rest of the sugar mixture, evenly over apples.
  • 10. Roll our remaining pie crust to cover top of apples. Make slits all over crust to allow steam to escape as apples are cooking.
  • 11. Brush top of crust with egg white, and sprinkle with raw sugar. Bake in preheated 400 degree F. oven for 50 minutes until crust is golden brown. Place a larger pan underneath to catch potential drips. Allow apple slices to cool completely before adding the glaze.
  • 12. To make the glaze combine powdered sugar, vanilla and 1 to 2 tablespoons of milk or as much as needed to reach spreading consistency. Whisk together and drizzle over cooled apple slices. Cut and serve PLAIN OR WITH OPTIONAL GLAZE. Garnish each slice if desired.

  • My Note: I also added a little cinnamon to the glaze which added just the right extra touch in my opinion. Try this- you'll love it. Oh- and warm each slices in the microwave about 25-30 seconds. It's so much better that way! A couple of suggestions: 1) The recipe suggests serving the pie cold, but try it at room temperature, or slightly warm (30 seconds in the microwave should do it) 2) The thinner your apple slices, the better! Try it with pear and/or peach. Adding walnut pieces is a nice variation. Use aluminum foil at the end of baking to keep the crust from getting too brown. A little extra cinnamon or lemon zest in the glaze is good. (I use an extra deep dish, make a lattice top and extra custard and glaze.) Make 2 and hide 1 if you want leftovers. Delicious!

I have had this recipe for years.I have changed the type of apples and made one crust and topped with cool whip instead of whipped cream. Arrange the apples in a circle, it shows through the glaze and place the cool whip in the center.

7 granny smith apples, peeled, cored, wedges or 7 cups tart apples
3/4 cup white sugar
1 1/2 cups unsweetened pineapple juice
3 tablespoons cornstarch
1 tablespoon margarine
1/2 teaspoon vanilla
1/4 teaspoon salt
1 pie crust, baked, cooled
whipped cream or Cool Whip

Steps:

  • In large pot add 1 1/4 cup pineapple juice and sugar. Bring to a low boil, add apples.
  • Simmer about 4 minutes, apples should be tender but not soft.
  • With slotted spoon take out apples and drain in colandar, have a dish underneath to catch liquid.
  • In small bowl, add 1/4 cup pineapple juice and cornstarch. Stir to dissolve.
  • Add to hot pineapple mixture, stirring until thickened. Turn the heat down when thickening. Should be clear and not milky.
  • Take off the heat. Stir in margarine vanilla and salt. Cool about 30 minutes, do not stir. Take any juice drippings from apples and stir into mixture.
  • Pour half of the mixture in the pie shell covering bottom.
  • Arrange apples in the circle around the shell. Spoon other half over the applies, smooth with the back of a spoon. Chill.Before serving top with whipped cream or cool whip in the center.
  • Optional Serving: Place 8 slices of Kiwi fruit on top of pie for 8 servings.

  • 5. Beat egg white with fork until foamy; brush over top crust. Combine remaining cinnamon and 2 tablespoons sugar in small bowl; sprinkle over crust. Bake for 45 to 60 minutes or until lightly browned.
  • 6. Combine powdered sugar, vanilla and enough milk for desired glazing consistency in small bowl. Drizzle over warm bars.
  • 7. Recipe Tip: If pastry dough does not form a ball easily, add up to 1 tablespoon additional milk, 1 teaspoon at a time.

1 (300 ml) can regular sweetened condensed milk or 1 (300 ml) can eaglebrand low fat sweetened condensed milk
1 1/2 cups sour cream
1/4 cup frozen apple juice concentrate, thawed
1 egg
1 teaspoon vanilla
1 9 inch storebought ready made graham cracker crumb crust (or shortbread or chocolate)
2 apples, pared & thinly sliced
2 tablespoons butter
1/2 cup apricot preserves, warmed

Steps:

  • Whisk together Eaglebrand, sour cream, juice concentrate, egg& vanilla;pour into pie crust.
  • Bake in a pre-heated 350 degree oven for 25-30 mins.
  • or until center is set.
  • Cool.
  • Saute apples in butter until tender; arrange on top of baked pie.
  • Spoon preserves over apples to glaze.
  • Chill thoroughly.

CRUST:
3 3 3 cups all-purpose flour
1 1 1 teaspoon salt
1 1/3 1 1/3 1/3 cup shortening (I used butter flavored Crisco)
1 1 1 egg, slightly beaten
1 1 1 tablespoon vinegar
3 3 3 tablespoons cold water
to sugar (optional, to sprinkle on the crust for "crunch")
APPLE PIE:
8 to 10 8 to 10 10 cups sliced apples (I used Jonagolds, Gravensteins and Granny Smith)
1 1 1 cup sugar
1 1 1 teaspoon cinnamon (optional)
1/4 1/4 1/4 teaspoon nutmeg
1/8 1/8 1/8 teaspoon allspice
1/2 1/2 lemon
3 3 3 tablespoons Instant ClearJel (purchased online at King Arthur Flour) OR
2 2 2 tablespoons flour
2 2 2 tablespoons boiled apple cider, OPTIONAL (purchased online at King Arthur Flour)
3 3 3 tablespoons unsalted butter, cubed into small pieces
GLAZE:
1/2 1/2 1/2 cup powdered sugar
1 to 2 1 to 2 2 teaspoons water
Whisk the water into the sugar until all lumps are gone, and it is a thick, drizzling consistency

Steps:

  • CRUST (NOTE: I use my food processor): In the food processor, with the blade attachment, and combine the flour and salt. Add the shortening, and pulse until the dough is crumbly and sticks together. Add the egg and vinegar and pulse until the dough is just combined. If using a pastry cutter: Combine flour and salt. Cut in shortening with a pastry blender until dough is crumbly and the size of small peas. Combine egg, water and vinegar and add to flour mixture. Mix with a fork until dough stick together. Divide the dough in half, and heap onto plastic wrap. Shape the dough into a disc and refrigerate. This can be done a day or two ahead, or even frozen for a couple of weeks. Roll out on well-floured board to desired thickness and ease into pie pan. NOTES: I find that this pie crust can be more challenging to work with, because of the egg. It tends to break apart, and needs "patching". It can be a little frustrating, but it's worth it. The end result is that the crust is very tender. Yes, you can make this pie in a traditional pie pan. The flat apple pie makes this easier to serve to larger crowds, and is easier to work with the dough. PIE FILLING: Peel, core and slice the apples (I bought an apple, corer and peeler and love how fast and easy it is to do this.) Mix the ClearJel (or flour) to the sugar and whisk together and pour over the apples. Add the spices, then the lemon juice and stir to combine. Using a half-sheet baking pan, spray with non-stick coating. Place the bottom half of the pie crust, leaving at least a 1/3" overhang. Evenly spread the apple filling and dot with small pats of butter. Roll the second crust and carefully place over the pie. Cut slots for steam with a paring knife. OPTIONAL: I like to whisk one egg with a splash of water and brush it over the top layer of the pie crust, so it will bake a beautiful golden brown. Then, I sprinkle coarse sugar on top for a crunchy texture. Place the pie on a large baking sheet (I placed mine on a baking stone) and bake at 375°F for 30 to 45 minutes, until golden brown and the apples are bubbly and caramelized. TO GLAZE THE PIE: I like to balance a cooling rack of my kitchen sink. Mix the glaze, and then spoon over the hot pie. You can also add chopped walnut pieces, but my family doesn't like nuts, so I didn't. I'll bet that's delicious!

2 pie crusts ready made,or homemade
3/4 c granulated sugar
3 Tbsp flour
7-8 peeled and sliced apples
2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/4-1/2 c raisins
2 Tbsp fresh apple cider
3 Tbsp butter
GLAZE
1/2 tsp cinnamon
1 c powdered sugar
3 Tbsp fresh apple cider

Steps:

  • 1. Place crust dough in to pie pan. Heat oven to 350 degree's.
  • 2. peel and slice apples in to 16 slices each. Mix sugar,spices,and flour together. Toss with the apple slices ,and raisins in a bowl.
  • 3. drizzle the cider over the apples. Dot with butter. Place top crust on top of it,and crimp edges. Put slits in top of crust to vent for steam. Cover outside of crust with foil. remove foil half way through baking time. Place in oven and bake about 40 -50 minutes, or until apples are tender. Pie is golden brown.
  • 4. Making the icing. Combine all ingredients together and stir until blended well. Remove pie from oven. While pie is still hot frost the pie. Cool and serve!

FOR PIE
8 to 10 large not tart and more soft textured apples [Braeburn or something similar]
1 stick butter [melted]
1 c white sugar [plus extra for tossing on apples]
1/2 c brown sugar packed
1 large egg
1 c all-purpose flour [+ 4 Tbsp for topping]
2 Tbsp cinnamon [+ extra for tossing on apples]
1 tsp nutmeg
1 tsp vanilla
1/2 c milk
1/2 c brown sugar
1/4 c soft butter
1 deep dish pie crust, bottom only
lemon juice to coat apples
1 jar(s) caramel ice cream topping
CARAMEL GLAZE
1 c caramel ice cream topping [I use sugar-free]
4 Tbsp all-purpose flour

Steps:

  • 1. Peel & thinly slice apples, place in large bowl, drizzle with lemon juice enough to coat and toss to cover apples.
  • 2. Sprinkle sugar & cinnamon [enough to coat apples] on to sliced apples and toss, set apples aside.
  • 3. Melt 1 stick butter in a medium bowl. Add the sugars, egg, 1/2 c flour, 2 Tbsp cinnamon, 1 Tsp each vanilla and nutmeg, and 1/2 c milk; mix well.
  • 4. Pour mixture over the sliced apples and stir until well blended. Place apple mixture into pie dish with unbaked crust. There will be enough apples that you will want to press them into the crust and mound them up in the center.
  • 5. Next, mix together the cup of flour, 1/2 c brown sugar, and 1/4 c softened butter. Mix well with a fork. Sprinkle this on top of the apples and press down so it doesn't fall off the pie.
  • 6. Place in a preheated 350 F oven. Bake 60 minutes. I recommend placing foil or a baking sheet under the pie dish for drips.
  • 7. While the pie is baking, mix the cup of caramel topping with the 4 Tbsp flour.
  • 8. After pie has baked for 60 minutes, slide it out of the oven and pour the caramel mixture over the top. Pour caramel in a circular motion from the center and it will run down to cover the pie. This pie will run over and some of the caramel will run off onto the baking sheet.
  • 9. Bake for an additional 10 to 15 minutes until the caramel looks like its glazing and setting. Carefully remove the pie from the oven and let cool.
  • 10. The 2nd mixture of the flour, butter, and sugar is all the topping there is to this pie besides the caramel glaze. There is NO top crust. (The caramel glaze recipe is shown at the bottom of the recipe.)

4 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1-1/2 cups shortening
2 egg yolks
2/3 cup ice water
FILLING:
14 cups thinly sliced peeled tart apples
4 teaspoons lemon juice
1 teaspoon vanilla extract
3/4 cup sugar
3/4 cup packed brown sugar
2 teaspoons ground cinnamon
1/4 teaspoon salt
3 tablespoons butter
2 tablespoons milk
GLAZE:
1/2 cup confectioners' sugar
1 tablespoon water
1/8 teaspoon vanilla extract

Steps:

  • In a bowl, combine flour, sugar, salt and baking powder. Cut in shortening until crumbly. Beat egg yolks and water; add to flour mixture, tossing with a fork until dough forms a ball. , Divide dough in half. Roll out one half to fit the bottom and up the sides of an ungreased 15x10x1-in. baking pan. , Toss apples with lemon juice and vanilla; set aside. Combine sugars, cinnamon and salt. Place half of the apples over crust; sprinkle with half of the sugar mixture. Repeat; dot with butter., Roll out the remaining pastry to fit top of pie; place over filling. Seal and flute edges. Brush with milk. , Bake at 375° for 50-55 minutes or until golden brown. Cool for 10 minutes. Combine glaze ingredients; drizzle over pie.

1 Tbsp all purpose flour
1/2 tsp cinnamon
1 pkg.of pastry for a double crust pie
THE GLAZE
1/2 c confectioners sugar
1 Tbsp milk
1/2 tsp vanilla
1/8 tsp cinnamon
1 Tbsp butter, softened

Steps:

  • 1. IN A SAUCEPAN COMBINE 1/4 CUP BUTTER, 1/2 CUP MILK, 1/2 CUP CREAM N 1/2 CUP SUGAR. HEATING TILL BUTTER IS MELTD STIRRING OCCASIONALLY. IN A SMALL BOWL WHISK TOGETHER CORNSTARCH 2 TBLSP. OF MILK N VANILLA. STIR INTO SAUCEPAN UNTIL THICKENED, STIRRING CONSTANTLY. REMOVE FROM HEAT N COOL SLIGHTLY.
  • 2. IN A MEDIUM BOWL COMBINE PEELED, SLICED APPLES WITH FLOUR, CINNAMON. MIX WELL.
  • 3. PREHEAT OVEN TO 400 DEGREES. FILL A PIE CRUST WITH APPLES, THEN POUR CREAM MIXTURE OVER N AROUND APPLES. TOP WITH SECOND CRUST SEAL N FLUTE EDGES. (IF CRUST BREAKS USE UR FINGERS DIPPD IN A LITTLE WARM WATER N SMOOTH TOGETHER) CUT THREE SLITS ONTOP CRUST.
  • 4. BAKE FOR 30-40 MINUTES (SINCE EACH OVEN IS DIFFERENT CHECK @ 30 MINUTES...OK IF DARK GOLDEN COLOR) COOL FOR ATLEAST 30 MINUTES.

1 package refrigerated pillsbury pie crust
3/4 cup sugar
2 tablespoons flour
1/2 teaspoon cinnamon
1/8 teaspoon salt
6 cups sliced peeled tart apples (about 5 medium)
3 tablespoons butter
2 tablespoons orange juice
1/2 cup confectioners' sugar
4 1/2 teaspoons orange juice
1/2 teaspoon grated orange peel

Steps:

  • Preheat oven to 400 degrees.
  • Line a 9 inch pie plate with one of the crusts from the purchased package.
  • In a large bowl, combine the sugar, flour, cinnamon and salt.
  • Add apples, toss to coat.
  • Spoon apple mixture into crust.
  • Dot with butter, sprinkle with orange juice.
  • Place second crust over filling; trim, seal and flute edges.
  • Cut small slits into top crust.
  • Bake at 400 degrees for 40-45 minutes or until crust is golden brown and filling is bubbly.
  • In small bowl, whisk glaze ingredients until blended.
  • Spread over warm pie.
  • Cool on wire rack.
