BOK CHOY SOUP WITH PORK
Bok choy soup is a typical quick and easy soup for the Cantonese. It is prepared by boiling the bok choy in a broth with some meat, commonly pork slices.

Steps:
- Wash the bok choy under running water serval times. Soak the bok choy for half an hour to remove any insecticide that might have been used on the bok choy.
- Cut the bok choy lengthwise to half to review the beautiful layers.
- Lightly bashed two cloves of garlic and get ready with a few slices of ginger.
- Cut the pork into thin slices. Marinate with ingredients B for fifteen minutes.
- Bring the water and chicken broth to a boil in a soup pot.
- Throw in the garlic and ginger and the bok choy, and wait until it returns to a boil.
- Simmer over medium heat for two to three minutes.
- Add the marinated pork slices, and continue boiling for one minute.
- Transfer to a soup bowl to serve.

BOK CHOY PORK SOUP
This is a family favorite dish that was pass down to me by my late mother. She was raised on this during the late 40's early 50's when money was little & food was less. It is a perfect soup for any cold wet raining day & it is very filling

Steps:
- 1. 1st slice & rinse the bok choy. Drain well & place in a large pot. sprinkle in a little of the salt & pepper. Then drizzle over some of the oyster sauce, ginger root & 1/2 of the bay leaf. Slightly cook over low heat.
- 2. Slice the boneless pork chops into thin bite size stripes. In a medium size frying pan over medium heat add in the pork, salt, pepper & the 1/2 of the bay leaf. Fry just until no more pink in color.
- 3. In the pot just before the bok choy is tender add in the broth & pork. Let simmer over low heat for 30 minutes. Stirring every so often. Bring to a little boil.
- 4. Serve in serving bowl. Eat alone or ladle over rice.
GINGERY PORK & BOK CHOY SOUP RECIPE - (5/5)

- 1. Place your stock in the slow cooker. Peel the ginger and cut into 1/2-inch slices; add to crockpot. Peel garlic and lightly smash with the flat side of a knife; add to crockpot. Cover and cook on high for 2 hours or low for 4 hours (or more). 2. When you're ready to eat, heat a large skillet over medium-high heat, add 2 tablespoons water, and when it starts to boil, throw in the bok choy, sautéeing in the steam until it's just tender. Divide among serving bowls. In the same pan, stir fry your desired amount of pork until it's hot. Place the pork in the serving bowls, then ladle hot broth into the bowls until the veg and meat are almost covered. Sprinkle the top with sliced scallions and garnish with wedges of hard-boiled egg, if using.

- Cook noodles according to package directions; drain and rinse with water. Meanwhile, in a Dutch oven, combine bok choy, pork, broth, soy sauce, ginger and garlic; bring just to a boil. Reduce heat; gently simmer, uncovered, 5-7 minutes or just until bok choy and pork are tender., Add noodles to soup. Serve immediately. If desired, sprinkle with green onions and serve with chili sauce.

Steps:
- Soak dry porcini mushrooms in 250 ml of hot water for 5 - 10 minutes. Drain, but save the water.
- In a large pot over medium heat sauté shallots and garlic in the oil for 3 - 4 minutes until onions are translucent and garlic is fragrant.
- Add porcini mushrooms, the water they soaked in, vegetable broth, ginger and soy sauce. Bring to a boil, then reduce heat to low, cover and simmer for 10 - 15 minutes.
- Add bok choy and cook for 5 minutes, until tender.
- Before serving stir in Chinese spice mixture and chili powder.
- Meanwhile, prepare the rice noodles according to the instructions on the package. Drain and divide noodles among four bowls. Add bok choy soup to the noodles.

- In a large zip-top bag, combine soy sauce, ginger, lemon juice, and 1 tablespoon oil. Add pork and shake to coat. Refrigerate 1 hour (or overnight).
- Heat broiler, with rack 8 inches from heat. Place pork on a rimmed baking sheet and season with salt. Broil until browned, 8 minutes. Tent with foil and let rest 10 minutes.
- Meanwhile, in a medium skillet, heat remaining tablespoon oil over medium-high. Add garlic and red-pepper flakes; cook, stirring, until fragrant, 30 seconds. Add bok choy; saute until crisp-tender, 4 minutes. Season with salt and serve with pork.
