GINGERSNAP MINI MUFFINS
A sweet & spicy little muffin that is great for breakfast, lunch boxes or a snack. The recipe comes from Gooseberry Patch's Country Baking cookbook.

Steps:
- Preheat oven to 375 degrees.
- In large mixer bowl, combine sugar, brown sugar, molasses, egg, baking soda, cinnamon, ginger, cloves and zest.
- Beat at medium speed until well mixed.
- Add flour and sour cream; continue beating well.
- Spoon batter into greased mini muffin pans, filling cups 3/4 full.
- Bake at 375 for 11-14 minutes or until toothpick inserted in center comes out clean.
- Let stand 5 minutes then remove from pan.
- Sprinkle with powdered sugar.

SUGAR 'N SPICE MINI GINGERBREAD MUFFINS
Perfect combination of sugar and spice makes everything nice. These mini gingerbread muffins are a favorite when the family is home for the holidays. Sprinkle with powdered sugar and serve with marmalade.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease two 24-cup mini muffin pans.
- Combine molasses, margarine, white sugar, brown sugar, egg, lemon zest, baking soda, cinnamon, ginger, and cloves in a large bowl. Beat using an electric mixer at medium speed until well mixed. Add flour and sour cream; continue beating until well mixed.
- Spoon batter into the prepared muffin cups, filling each 3/4 full.
- Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 10 to 12 minutes. Let stand for 5 minutes before removing from the pans.

SNAPPY GINGER MUFFINS
Meet the Cook: To tell the truth, I cook out of necessity but enjoy myself when I bake! I make these for school lunches and my husband to take with him to work. - In a bowl, beat the oil and sugars. Beat in molasses and egg. Combine the flour, baking soda, cinnamon, ginger and salt; stir into molasses mixture alternately with water. , Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 20-25 minutes or until muffins test done. Cool in pan for 10 minutes before removing to a wire rack.

GINGERBREAD MINI-MUFFINS (JASON'S DELI COPY CAT )
Jason's Deli is one of my favorite places to eat. Their mini gingerbread muffins are so delicious and are little bites of Christmas! The best thing about this recipe is how simple it is, you can whip it up in about 10 minutes. However, in my opinion these gingerbread muffins taste MUCH better if you let them sit for a while....

- 1. Preheat oven to 350 degrees (F). Spray/butter muffin tins.
- 2. Combine sugar, flour, soda, salt and spices in a bowl.
- 3. In a separate bowl mix the egg, molasses, milk, and butter.
- 4. Add the wet ingredients to the dry and stir until just blended.
- 5. Add to muffin tins** (about 3/4 full, these muffins don't rise too much, so you don't have to worry about them overflowing) and bake for 15 minutes. If making normal sized muffins, it'll be more like 20 minutes. Muffins are done when a toothpick comes out clean.
- 6. **If you don't have buttermilk (I almost never do), just add 1 tbsp. of white vinegar or lemon juice to a cup of regular milk and let sit out for about 10 minutes.**
