1 tablespoon minced fresh gingerroot
2 garlic cloves, minced
2 tablespoons butter
2 tablespoons olive oil
2 plum tomatoes, diced
3/4 cup chicken broth
3 teaspoons minced fresh parsley, divided
3 teaspoons minced fresh basil, divided
1-1/2 teaspoon cornstarch
1 tablespoon cold water
1/2 pound uncooked medium or large shrimp, peeled and deveined
2 cups cooked angel hair pasta

Steps:

  • In a large skillet, saute ginger and garlic in butter and oil for 1 minute or until tender. Stir in the tomatoes, broth, 1-1/2 teaspoons parsley and 1-1/2 teaspoons basil. Combine cornstarch and cold water until smooth; add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened., Reduce heat; add shrimp. Simmer, uncovered, for 2-3 minutes or until the shrimp turn pink. Add the pasta and remaining parsley and basil; toss to coat.

6 small sweet potatoes (about 3 1/2 pounds), peeled and cut into 1-inch-thick pieces
2 1/4 cups unsweetened coconut milk
6 cups chicken broth, homemade or low-sodium canned
1 teaspoon kosher salt, plus more to taste
1 1/2 tablespoons fresh lime juice
3 tablespoons minced fresh ginger
3 tablespoons fresh lemon juice
2 tablespoons canola oil
1/4 teaspoon kosher salt
1 1/2 pounds large shrimp, shelled and deveined
4 large bananas, peeled and cut across into 1/2-inch-thick slices
1 cup unsweetened coconut flakes, lightly toasted
1 cup sliced almonds, toasted
1/2 cup coarsely chopped cilantro
Tabasco sauce

Steps:

  • To make the soup, combine the sweet potatoes, 1 cup of coconut milk and the chicken broth in a large saucepan. Bring to a boil, lower heat and simmer until the potatoes are soft, about 15 minutes. Place in a food processor and puree until smooth. Mix in the remaining coconut milk and the salt. Reheat before serving, and stir in the lime juice and additional salt, if needed.
  • To make the condiments, combine the ginger, lemon juice, oil and salt in a shallow dish. Add the shrimp and toss to coat. Refrigerate for 1 hour. Preheat the broiler. Remove the shrimp from the marinade and broil until cooked through, about 5 minutes. Set aside. Place the bananas on a greased baking sheet and broil until nicely browned, about 3 minutes. Place the shrimp, bananas, coconut, almonds and cilantro in separate bowls.
  • Ladle the soup into 6 bowls. Serve, passing the condiments, including Tabasco, separately.

2 tablespoons olive oil
2 teaspoons grated fresh ginger
1 teaspoon minced garlic
1/2 lb bay scallop, patted dry-lightly seasoned with salt and pepper
1/2 lb medium shrimp, cleaned and peeled lightly seasoned with
salt and pepper
1 red bell pepper, seeded and cut into thin strips
1 small onion, thinly sliced
1 teaspoon sugar
4 cups snow peas, strings removed and cut in half on the diagonal (1/2 lb.)
1 1/2 teaspoons dark sesame oil (to taste)
1/2 cup toasted sliced almonds
soy sauce
fresh cilantro

Steps:

  • In a large nonstick skillet, heat 1 tablespoon oil over medium high heat.
  • Add ginger, garlic, scallops & shrimp and sauté just until firm and opaque in the center, 2-3 minutes.
  • Transfer to a plate.
  • Cook onions, peppers, sugar and snow peas in 1 tablespoon olive oil till tender crisp.
  • Add scallops and shrimp back to pan for 2 more minutes.
  • Season with sesame oil and soy sauce.
  • Plate over jasmine rice and top with toasted almonds.
  • Garnish with Cilantro.

1/2 cup chicken stock or low-sodium broth
2 tablespoons Soy sauce
1 teaspoon Chinese Chili-Garlic Sauce
1 teaspoon Cornstarch
2 tablespoons vegetable oil
1/4 cup fresh ginger, cut into matchsticks
1/2 pound snow peas
1 pound medium shrimp, shelled, deveined
4 scallions, thinly sliced on bias

Steps:

  • In a small bowl, whisk the chicken stock with the soy sauce, Chinese chile-garlic sauce and cornstarch.
  • In a large nonstick skillet, heat the vegetable oil until shimmering. Add the ginger matchsticks and stir-fry over moderately high heat until they are softened, about 1 minute. Add the snow peas and stir-fry until crisp-tender and the ginger is beginning to brown, about 2 minutes. Add the shrimp to the skillet and stir-fry for about 1 minute. Add the scallions and stir-fry for 30 seconds. Whisk the chile sauce, add it to the skillet and stir-fry until the shrimp are opaque throughout and the sauce is thickened, about 1 minute longer. 4 cups broccoli, cut in bite size pieces
3 tablespoons soy sauce
2 tablespoons rice vinegar
1 1/2 tablespoons brown sugar
1 tablespoon fresh ginger, chopped
1 teaspoon chili paste with garlic
2 1/2 teaspoons toasted sesame oil
4 scallions, thinly sliced
2 cups corn
1 lb large shrimp, peeled and deveined

Steps:

  • Place the broccoli in a steamer and gently steam until tender crisp, about 4 minutes.
  • Transfer to a clean tea towel, and lightly pat the broccoli to absorb excess water.
  • Whisk the soy sauce, vinegar, brown sugar, giner, and chile garlic paste until sugar begins to dissolve.
  • Heat a wok or large non-stick skillet over high heat.
  • Add oil and when it ripples, add the scallions, corn and shrimp.
  • Stir-fry for 2 to 3 minutes, or until the shrimp are opaque.
  • Add the broccoli, soy mixture, and stir-fry until all ingredients are coated with the sauce and heated through.
  • Serve over rice.

3 ounces bean threads vermicelli (cellophane noodles)*
4 teaspoons oriental sesame oil
2 tablespoons rice vinegar
2 tablespoons chopped fresh cilantro
2 tablespoons minced seasoned sliced ginger (also known as sushi ginger)*
1 tablespoon minced pickled jalapeños
2 teaspoons honey
12 ounces uncooked medium shrimp, peeled, deveined, tails left intact
4 green onions, sliced
2 garlic cloves, minced
2 teaspoons cornstarch
1/2 cup water
*Available at Asian markets and in the Asian section of many supermarkets.

Steps:

  • Cook noodles in large pot of boiling water until just tender but still firm to bite, stirring occasionally. Drain. Transfer to bowl. Add 2 teaspoons sesame oil to noodles and toss to coat.
  • Mix vinegar, cilantro, ginger, jalapeños and honey in small bowl. Season shrimp with salt and pepper. Heat remaining 2 teaspoons sesame oil in heavy large skillet over medium-high heat. Add green onions and garlic; sauté until aromatic, about 3 minutes. Add vinegar mixture and shrimp to skillet; stir until shrimp are just cooked through, about 3 minutes. Dissolve cornstarch in 1/2 cup water. Add mixture to skillet; stir until liquid thickens, about 2 minutes.
  • Mound noodles on platter. Arrange shrimp over and serve.

1/4 cup soy sauce
2 teaspoons finely chopped gingerroot
1/4 cup white vinegar
2 tablespoons sugar
2 tablespoons sweet sake or apple juice
1 1/2 teaspoons salt
2 to 3 tablespoons thinly sliced green onions

Steps:

  • Arrange shrimp in single layer in shallow glass or plastic container.
  • Heat soy sauce to boiling in 1-quart saucepan; add gingerroot. Reduce heat; simmer 5 minutes or until most of the liquid is absorbed. Stir in vinegar, sugar, sake and salt. Pour over shrimp. Cover with plastic wrap and refrigerate at least 2 hours but no longer than 12 hours.
  • Remove shrimp from marinade with slotted spoon; arrange on serving plate. Sprinkle with onions.

juice of 1 orange, strained
1 TB extra-virgin olive oil
2 TB ginger root, grated
POACHING BROTH
1 bottle clam juice
1 TB ginger root, chopped
2 cloves garlic, chopped
1/2 cup dry sherry
VINAIGRETTE
2 TB fresh lemon juice, strained
2 TB fresh lime juice, strained
1 shallot, minced
1/2 cup cilantro, chopped
1-inch piece ginger root, grated
1 tsp Dijon mustard
1 tsp soy sauce
1 tsp hone
1 tsp roasted sesame chile oil
SALAD GREENS
1/2 head romaine or escarole, cleaned and torn into bite-size pices
1 bunch watercress, stems on
1/2 cup mint leaves, chopped
1/2 cup basil leaves, torn

Steps:

  • In a medium bowl, blend all the marinade ingredients. Add the shrimp, toss, and marinate for 1 hour. In a large saucepan over medium-low heat, poach the marinated shrimp in the poaching broth until they turn pink.Save the broth and freeze it for another time. Let the shrimp cool. In a large bowl, toss the greens and shrimp with the vinaigrette. Serve with rice crackers, canned kumquats and/or mandarine oranges, and plum wine or Chinese beer.

1 teaspoon Chaat Masala or store-bought
1 pound extra-large shrimp (about 20) shelled and deveined, with tails left on
1 piece fresh ginger (1-inch), peeld and cut into thin matchsticks
1 clove fresh garlic (large), minced
2 tablespoons fresh lime juice or lemon juice
1 teaspoon , coarsely ground ajwain, seeds
1/2 teaspoon salt, or to taste
1/4 teaspoon cayenne pepper, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
2 tablespoons vegetable oil
2 tablespoons minced fresh mint leaves
2 cups mixed baby greens
1 red bell pepper, cut into thin 1 1/2-inch matchsticks
1 yellow bell pepper, cut into thin 1 1/2-inch matchsticks
1 small seedless cucumber, such as Armenian or Japanese, cut into thin 1 1/2-inch matchsticks
3 to 4 scallion, white parts only, thinly sliced

  • 1. Prepare the chaat masala. Place the shrimp in a large non-reactive bowl. Add the ginger, garlic, lime juice, ajwain seeds, salt, cayenne and black peppers and mix well, making sure all the shrimp are well coated with the marinade. Refrigerate about 2 hours. 2. Heat the oil in a large nonstick wok or saucepan over medium-high heat and cook the mint leaves, stirring, about 30 seconds.
