2 1/2 cups Original Bisquick™ mix
1/4 cup packed brown sugar
1/3 cup molasses
1/4 cup whipping cream
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 egg
1 cup powdered sugar
2 tablespoons butter or margarine, melted
1 teaspoon grated lemon peel
1 tablespoon lemon juice

Steps:

  • Heat oven to 425°F. Spray cookie sheet with cooking spray.
  • In large bowl, stir gingerbread ingredients until soft dough forms. On surface dusted with Bisquick mix, roll dough in Bisquick mix to coat. Shape into ball; knead 10 times. Pat dough into 8-inch round on cookie sheet. Cut into 8 wedges, but do not separate.
  • Bake 13 to 15 minutes or until set and starting to brown.
  • Meanwhile, in small bowl, mix powdered sugar, butter and lemon peel with spoon. Stir in lemon juice until glaze is smooth enough to drizzle. Drizzle glaze over wedges. Carefully separate wedges. Serve warm.

1/2 cup shortening
1/3 cup sugar
1 cup molasses
3/4 cup hot water
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
3/4 teaspoon salt
1 egg
Butterscotch Sauce, if desired

Steps:

  • Heat oven to 325°F. Grease and flour bottom and sides of square pan, 9x9x2 inches.
  • Beat all ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 3 minutes, scraping bowl occasionally. Pour into pan.
  • Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Serve warm or cool.

1/4 cup dark rum or water
1/2 cup golden raisins
1/4 pound (1 stick) unsalted butter
1 cup unsulphured molasses
1 cup (8 ounces) sour cream
1 1/2 teaspoons grated orange zest
2 1/3 cups all-purpose flour
3/4 teaspoon baking soda
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon kosher salt
1/3 cup minced dried crystallized ginger (not in syrup)
1 cup confectioners' sugar, optional
2 tablespoons plus 1 teaspoon freshly squeezed orange juice

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8 by 8-inch cake pan and line with parchment paper. Grease and flour the pan.
  • Place the rum and raisins in a small pan, cover and heat until the rum boils. Turn off the heat and set aside. Place the butter and molasses in another small pan and bring to a boil over medium heat. Pour the mixture into the bowl of an electric mixer fitted with the paddle attachment. Cool for 5 minutes, then mix in the sour cream and orange zest.
  • Meanwhile, sift the flour, baking soda, ginger, cinnamon, cloves, and salt together in a small bowl. Mix with your hands until combined. With the mixer on low speed, slowly add the flour mixture to the molasses mixture and mix only until smooth. Drain the raisins and add them and crystallized ginger to the mixture with a spatula. Pour into the prepared pan and bake for about 35 minutes, until a toothpick comes out clean. Set aside to cool completely.
  • When the cake has cooled, whisk together the confectioners' sugar and orange juice and pour it onto the gingerbread, allowing it to drip down the sides. Allow the glaze to set. Cut the gingerbread into 9 squares.

1/4 cup cinnamon-sugar
1/2 teaspoon ground ginger
2/3 cup fat-free (skim) milk
1/4 cup molasses
1 egg, slightly beaten
1 tablespoon grated orange peel

Steps:

  • Heat oven to 400°F. Place paper baking cup in each of 12 regular-size muffin cups.
  • In large bowl, stir together Bisquick mix, 3 tablespoons plus 1 1/2 teaspoons of the cinnamon-sugar and the ginger; make well in center of mixture. In small bowl, mix milk, molasses, egg and orange peel with whisk. Add to dry ingredients, stirring just until moistened. Divide batter evenly among muffin cups, filling half full; sprinkle remaining 1 1/2 teaspoons cinnamon-sugar over batter.
  • Bake 12 minutes. Immediately remove from pan to cooling rack. Serve warm.

Steps:

2 tablespoons vegetable oil

Steps:

  • In large bowl, stir all pancake ingredients with wire whisk until well blended. Heat griddle or skillet over medium-high heat (375°F). (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.) Brush with vegetable oil if necessary or spray with cooking spray before heating.
  • For each pancake, pour 1/4 cup batter onto hot griddle. Cook 2 to 3 minutes or until bubbles form on top and edges are dry. Turn; cook other side until golden brown.
  • Using 3 1/2 to 4-inch gingerbread boy or girl cookie cutter, cut one shape from each warm pancake. Decorate as desired using icing and candies.

Bisquick Gingerbread image

1 3/4 c bisquick baking mix
1 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground cloves
2 medium eggs
1/2 c brown sugar
1/2 c milk
1/2 c molasses
1/4 c melted shortening or butter

Steps:

  • 1. Preheat oven to 350 degrees. Grease 8 inch square baking pan. Mix all dry ingredients together and set aside. Beat eggs and milk together. Melt shorting or butter and add to egg mixture. Add molasses and beat well. Pour into greased baking pan. Bake 40 minutes in 350 degrees oven. Slice into 2 inch squares.
