4 cups finely shredded cored Napa cabbage
1 cup daikon in fine julienne
2 medium-size cucumbers, peeled, seeded and cut in julienne
1 tablespoon finely minced seeded fresh red chili, or to taste
6 scallions, finely chopped
1/3 cup rice vinegar
2 teaspoons grated fresh ginger
2 tablespoons Asian sesame oil
2 tablespoons peanut or grapeseed oil
Salt and freshly ground black pepper
2 tablespoons chopped cilantro leaves

Steps:

  • Place Napa cabbage, daikon, cucumbers, chili and scallions in large bowl, and mix.
  • Mix vinegar and ginger in small bowl. Beat in oils. Pour over cabbage mixture, and toss. Season to taste with salt and pepper, fold in cilantro, and serve.

1 small cucumber, peeled and julienned
1 medium carrot, peeled and julienned
2 cups shredded green cabbage
1 cup shredded red cabbage
Salt
pepper
2 teaspoons peeled and grated ginger
Juice of 1 large lime

Steps:

  • Put the cucumber, carrot and cabbage in a large bowl. Season with salt and pepper and toss well.
  • Add the ginger and lime juice, then toss again. Let the vegetables marinate for at least 10 minutes.

2 tablespoons yuzu rice vinegar, such as O brand
1/3 cup fresh lime juice (from 2 limes)
1 tablespoon grated fresh ginger (from a 2-inch piece)
1 tablespoon sugar
2 tablespoons vegetable oil
Kosher salt and freshly ground pepper
4 cups finely shredded Savoy or green cabbage
2 cups finely shredded red cabbage
2 cups finely julienned carrots (from 3 to 4 medium)
Toasted sesame seeds, for serving

Steps:

  • Whisk together vinegar, lime juice, ginger, and sugar. Whisk in oil; season with salt and pepper. Toss in a large bowl with cabbages and carrots. Top with sesame seeds.

2 cups shredded cabbage
1 small carrot, shredded
2 tablespoons finely chopped sweet onion
1 to 2 radishes, shredded
2 tablespoons white balsamic vinegar
1-1/2 teaspoons lime juice
1 teaspoon sesame oil
1 garlic clove, minced
1/2 teaspoon minced fresh gingerroot
1/4 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon crushed red pepper flakes
1/2 teaspoon sesame seeds, toasted

Steps:

  • In a small bowl, combine the cabbage, carrot, onion and radishes. In another bowl, whisk the vinegar, lime juice, oil, garlic, ginger, sugar, salt and pepper flakes. Pour over cabbage mixture; toss to coat. Cover and refrigerate for at least 1 hour. Sprinkle with sesame seeds just before serving.
