GINGER CREAM COOKIES
Soft ginger cookie. Tastes better after a few days in storage. My mom's recipe.

Steps:
- Cream the shortening, sugar, egg, molasses and water. Mix in the flour, salt, ginger, nutmeg, cloves and cinnamon. Cover and chill for 1 hour.
- Preheat oven to 400 degrees F (205 degrees C).
- Drop teaspoonfuls of dough onto ungreased cookie sheets about 2 inches apart. Bake for about 8 minutes.

GRANDMA'S SOFT GINGER COOKIES
These are a softer cookie rather than a snap cookie. I love these, they are one of the first cookies I made. Thanks for the recipe grandma!

Steps:
- Whisk flour, baking powder, cinnamon, ginger, cloves, and salt together in a bowl.
- Beat brown sugar and butter in a separate bowl with an electric mixer until creamy. Mix in molasses, egg, and candied ginger. Gradually mix in dry ingredients until combined. Chill dough in the refrigerator for 1 hour.
- Preheat the oven to 375 degrees F (190 degrees C). Grease a cookie sheet.
- Roll chilled dough into 1/2-inch to 3/4-inch balls. Dip balls in white sugar to coat and place on the prepared cookie sheet.
- Bake in the preheated oven until edges are golden, 8 to 10 minutes. Cool on the baking sheet briefly before removing to a wire rack to cool completely.

GRANDMA'S GINGER COOKIES
Everyone marvels at the "thinness" of these cookies. They're very easy to handle when rolling out. Voted "Favorite cookie" of our hometown radio station in 1992. I called in for the recipe and have been baking them ever since. These are especially good during the holidays.

Steps:
- 1. Mix in order given, ( I whisk the spices and salt into one of the cups of flour), and add enough flour to make a soft dough. Putting dough in refrigerator over night makes it easier to handle.
- 2. Roll out thin (1/8 inch or less) on pastry cloth. Using a 3 inch scalloped cookie cutter, cut out cookies and place on an UNGREASED cookie sheet. (May sprinkle sugar on top of unbaked cookie but seems to create bubbles).
- 3. Bake in hot oven, 350 degrees for 5-8 minutes. Cool a moment on cookie sheet.
- 4. Don't be afraid to handle the dough. If cookies look pale, they're not done; bake until beginning to turn color. Don't use the 4 inch cookie cutter. Once cooled, cookies can be stored in airtight container and freeze well, also.
