1 lb filet mignon, thinly sliced
2 tablespoons finely grated fresh ginger
4 garlic cloves, minced
1 medium onion, grated
1/4 teaspoon smoked paprika
2 small dried hot red chilies, crumbled
1/4 teaspoon coarse salt
1 teaspoon extra virgin olive oil
1 bunch kale, stems discarded, leaves cut into 3 pieces each and rinsed several times (1 1/2 lbs)
1/2 cup low sodium beef broth
1/2 teaspoon fresh ground black pepper

Steps:

  • Combine beef, ginger, garlic, onion, paprika, chilies and salt in a bowl, making sure beef is well coated.
  • Heat oil in a large saute pan over med high heat.
  • Add beef mixture, and cook stirring frequently, until lightly browned, 2 to 3 minutes.
  • Stir in kale, cover and reduce heat to med low.
  • Cook, stirring occasionally, until wilted and tender, 5 to 7 minutes.
  • Uncover, and raise heat to med high.
  • Add stock and cook stirring and scraping bottom of pan, for 1 minute.
  • Season with pepper.

¾ cup cornstarch
½ cup water
2 eggs
1 pound flank steak, cut into thin strips
½ cup canola oil, or as needed
1 large carrot, cut into matchstick-size pieces
1 green bell pepper, cut into matchstick-size pieces
1 red bell pepper, cut into matchstick-size pieces
3 green onions, chopped
¼ cup minced fresh ginger root
5 garlic cloves, minced
½ cup white sugar
¼ cup rice vinegar
3 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon red pepper flakes, or to taste

Steps:

  • Place cornstarch in a large bowl; gradually whisk in water until smooth. Whisk eggs into cornstarch mixture; toss steak strips in mixture to coat.
  • Pour canola oil into wok 1-inch deep; heat oil over high heat until hot but not smoking. Place 1/4 of the beef strips into hot oil; separate strips with a fork. Cook, stirring frequently, until coating is crisp and golden, about 3 minutes. Remove beef to drain on paper towels; repeat with remaining beef.
  • Drain off all but 1 tablespoon oil; cook and stir carrot, green bell pepper, red bell pepper, green onions, ginger, and garlic over high heat until lightly browned but still crisp, about 3 minutes.
  • Whisk sugar, rice vinegar, soy sauce, sesame oil, and red pepper together in a small bowl. Pour sauce mixture over vegetables in wok; bring mixture to a boil. Stir beef back into vegetable mixture; cook and stir just until heated through, about 3 minutes.

1 ¼ teaspoons chicken bouillon granules, divided
1 teaspoon white sugar, divided
1 tablespoon ginger juice
3 tablespoons water, divided
1 teaspoon cornstarch
2 tablespoons vegetable oil, divided
1 (4 inch) piece ginger root, peeled and sliced
14 ounces Chinese broccoli, sliced

Steps:

  • Toss beef strips with 1 teaspoon chicken bouillon granules and 3/4 teaspoon sugar in a bowl. Marinate in the refrigerator, 20 minutes to 1 hour.
  • Combine remaining 1/4 teaspoon chicken bouillon granules, 1/4 teaspoon sugar, and ginger juice in a bowl.
  • Mix 2 tablespoons water with cornstarch in a small bowl. Add to bowl with ginger juice mixture; stir.

1/2 tablespoon safflower oil
1/4 lb kale, chopped coarsely
1 teaspoon soy sauce
1/4 cup water
1 teaspoon toasted sesame seeds (optional)

Steps:

  • In a medium skillet, cook the ginger root in oil, stirring, over medium heat for 1 minute.
  • Add the kale and raise the heat to medium high.
  • Add the soy sauce and water, and stir-fry until the kale is wilted but still slightly crunchy, about 3 minutes.
