2 lb beef tenderloin tips or stew meat
1 (10.5 oz) can cream of mushroom soup
1 packet brown gravy mix
1 packet dry onion soup mix
1 cup water or ginger ale soda

Steps:

  • Preheat oven to 300 degrees.
  • Place the meat into a 9 x 13 inch baking dish.
  • In a bowl, combine the mushroom soup, brown gravy, onion soup, and water/ginger ale.
  • Pour the soup mixture over the beef. Cover pan with aluminum foil.
  • Place in the oven at 300 degrees and bake for 3 hours. Here is the important thing - leave this in the oven for the whole 3 hours. No removing the foil to peek on the beef until the 3 hours is up!
  • Carefully remove foil. It will be steamy and you don't want to get burned! Let sit for a few minutes to cool and serve over cooked rice, egg noodles, or mashed potatoes. Serves 6-8

ROAST BEEF WITH GINGER AND JUS



Roast Beef with Ginger and Jus image

1 (3-pound) boneless rib roast, at room temperature (see note)
8 slivers fresh ginger
Coarse salt and ground pepper
1 1/2 cups beef stock
1/4 cup soy sauce

Steps:

  • Preheat oven to 500 degrees F.
  • Make 8 (1-inch) deep incisions on the top of the roast. Insert 1 piece of ginger into each incision. Season entire roast with salt and pepper and place in a roasting pan. Roast for 15 minutes then lower the heat to 350 degrees F. Roast the beef to an internal temperature of 130 degrees F on an instant-read thermometer, for medium-rare, about 45 minutes.
  • Remove the beef from the pan, tent it with foil and allow to rest for 15 minutes.
  • Pour or spoon out most of the oil from the roasting pan. Place the roasting pan over medium-high heat. Pour in the beef stock and the soy sauce. Scrape the bottom of the pan with a wooden spoon or spatula to release the browned bits. Bring the liquid to a simmer and cook until reduced by half, about 5 minutes.
  • To serve, slice the beef thinly and spoon warm sauce over top.
  • Note: A boneless rib roast is an excellent cut of beef for roasting. If you prefer to use a less expensive cut, you could substitute a sirloin tip or bottom round rump roast.

2 lb lean stew meat
1 10 3/4-oz. can cream mushroom soup
1 c ginger ale

Steps:

  • 1. Pre-heat oven to 350 degrees.
  • 2. In a greased casserole dish, sprinkle onion soup mix over beef.
  • 3. Spoon mushroom soup over meat; add ginger ale. DO NOT STIR.
  • 4. Bake covered at 350 degrees for 2 hours. DON'T PEEK. Serve over noodles or rice.

1 pound small new potatoes
1 (16 ounce) package baby carrots
7 pounds beef brisket
1 cup beef broth

  • Layer the onions, potatoes, and carrots into the bottom of a large Dutch oven. Place the brisket on top of the vegetables.

1 jar(s) beef gravy, 12 oz.
1/2 c ginger ale
3 lb beef chuck roast
vegetable oil for searing

Steps:

  • 1. In the bottom of your Crock Pot, whisk together the onion soup, ginger ale, and gravy. Set aside.
  • 2. In a large skillet on medium-high heat, heat the oil (put just enough in to cover the bottom of the pan).
  • 3. Sear the roast for up to 2 minutes on all sides.
  • 4. When you have seared all sides of the roast, place the roast in the gravy mixture in the Crock Pot. Flip it over to make sure the roast is covered in gravy.
  • 5. Put the lid on the Crock Pot and cook on low for 8 hrs or 5 hours on high.

1 (1 ounce) package dry onion soup mix
1 (12 fluid ounce) can or bottle ginger ale
3 carrots, cut into 1 inch pieces
1 small onion, sliced

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place the brisket in a roasting pan fat side up. In a medium bowl, stir together the ketchup, soup mix and ginger ale; pour over the brisket. Arrange carrots and onion around the edge of the roast if using. Cover the roast with a lid or aluminum foil.

1 teaspoon peppered seasoned salt
3/4 cup classic-style stir-fry sauce
2 tablespoons ketchup
2 tablespoons rice vinegar
2 teaspoons grated gingerroot or 1 teaspoon ground ginger
1 bag (1 pound) frozen stir-fry bell peppers and onions, thawed

Steps:

  • Spray 12-inch nonstick skillet with cooking spray. If beef roast comes in netting or is tied, do not remove. Sprinkle beef with peppered seasoned salt. Cook beef in skillet over medium-high heat 5 to 6 minutes, turning once, until brown on both sides.
  • Spray 5- to 6-quart slow cooker with cooking spray. Place beef in cooker (if necessary, cut beef in half to fit in cooker). Mix stir-fry sauce, ketchup, vinegar and gingerroot in small bowl; pour over beef.
  • Cover and cook on Low heat setting 8 to 9 hours.
  • Place beef on platter; cover to keep warm. Add stir-fry vegetables to mixture in cooker. Increase heat setting to High. Cover and cook 15 to 20 minutes or until peppers are tender. Remove netting or strings from beef. Serve pepper mixture with beef.
