3 eggs
1 1/2 cups white sugar
6 tablespoons cocoa
1 cup vegetable oil
2 cups grated zucchini
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
3/4 cup walnuts (may substitute chocolate chips if you wish) (optional)

Steps:

  • Preheat oven to 350°F Lightly grease two 9x5 inch loaf pans.
  • In a large bowl, combine eggs, sugar, cocoa, oil, grated zucchini, and vanilla; beat well.
  • Stir in the flour baking soda, salt and cinnamon.
  • Fold in the walnuts.
  • Pour batter into prepared loaf pans. Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of a loaf comes out clean.

This rich chocolate zucchini bread makes the perfect afternoon snack whenever you're in need of a chocolate fix.

Number Of Ingredients 12

1 stick (½ cup) unsalted butter
¾ cup plus 2 tablespoons light brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1⅔ cups all purpose flour, spooned into measuring cup and leveled off with a knife
⅓ cup Dutch-process cocoa powder (ok to substitute natural cocoa powder)
¾ teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon espresso powder or instant coffee (optional)
2 cups shredded zucchini, gently packed (you'll need about 2 medium zucchini; do not wring out the liquid)
1 cup semi-sweet chocolate chips

Steps:

  • Preheat the oven to 350°F degrees and grease an 8½ x 4½-inch loaf pan with nonstick cooking spray.
  • Place the butter in a large microwave-safe mixing bowl and microwave for one minute, or until just melted. Stir in the brown sugar until completely smooth. Add the eggs and vanilla and stir until incorporated. (Be sure to add the eggs after the brown sugar is mixed in, as the hot butter alone could cook the eggs.)
  • Whisk together the flour, cocoa powder, salt, baking powder, baking soda and instant coffee (if using) in a medium bowl. Add to the butter mixture and stir until well combined. It will be very thick.
  • Stir in the shredded zucchini and chocolate chips. (It will still be thick -- that's okay.)
  • Spoon the batter into the prepared loaf pan and spread evenly. Bake for 60 to 65 minutes, or until a toothpick or cake tester inserted into the center comes out clean (save for perhaps a smear from the melted chocolate chips). Let the loaf cool on a rack for about 10 minutes before turning out onto a rack to cool completely.
  • Freezer-Friendly Instructions: The bread can be frozen for up to 3 months. After it is completely cooled, wrap it securely in aluminum foil, freezer wrap or place in a freezer bag. Thaw overnight in the refrigerator before serving.

8 tablespoons (1 stick) unsalted butter, at room temperature, plus more for buttering the pan
1 1/4 cups all-purpose flour, plus more for dusting the pan
2 tablespoons unsweetened cocoa powder (not Dutch process)
1/2 teaspoon baking soda
1/4 teaspoon fine salt
3/4 cup sugar
2 tablespoons vegetable oil
1 large egg, at room temperature
1 teaspoon pure vanilla extract
1/4 cup buttermilk, at room temperature
1 cup shredded zucchini (about 8 ounces)
2 ounces semisweet chocolate, finely chopped
One 1/4-inch thick lengthwise slice zucchini, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-4-by-3-inch loaf pan and dust with flour, tapping out the excess.
  • Whisk the flour, cocoa, baking soda and salt together in a medium bowl.
  • Beat the butter and sugar in a medium bowl with an electric mixer on medium-high speed until light and fluffy, about 4 minutes. Continue to mix and drizzle in the oil and beat until incorporated. Beat in the egg and then the vanilla.
  • Reduce the mixer speed to low and beat in the flour mixture in 3 additions, alternating with the buttermilk in 2 additions, beginning and ending with the flour, scraping the sides of the bowl occasionally. Fold the zucchini and chocolate into the batter and pour into the prepared pan. Center the zucchini slice, lengthwise, on top of the batter.
  • Bake until a toothpick inserted in the center comes out clean, about 55 minutes. Cool completely in the pan on a wire rack.

DRY INGREDIENTS
2 1/2 c flour
1 tsp baking soda
1/2 tsp cinnamon
4 Tbsp ghirardelli chocolate unsweetened cocoa
CREAMED INGREDIENTS
1 1/4 c sugar
1/2 c softened margarine
1/2 c canola oil
1 tsp vanilla
2 eggs
ADD
1/2 c buttermilk
1 c pecans, chopped
3/4 c mini semi-sweet chocolate chips
2 c grated zucchini

Steps:

  • 1. Mix all dry ingredients together in bowl.
  • 2. In separate bowl, cream sugar, margarine, oil, vanilla and eggs. Add dry ingredients.
  • 3. Mix in buttermilk, pecans, chocolate chips and zucchini.
  • 4. Pour into two greased and floured loaf pans. Cook at 325 degrees for approximately 50-60 minutes until toothpick comes out smooth. Remove from pans. Cool and slice.
