GOLDEN GAZPACHO DIP

Look for the yellowest tomatoes and the brightest yellow squash for this soup-inspired dip. As the dip rests, it may give off liquid, which can be drained if you like.

Number Of Ingredients 7

¾ pound yellow tomatoes
1 yellow bell pepper, quartered, seeded, cut into large pieces
1 yellow squash, halved lengthwise and cut into large pieces
1 tablespoon cider vinegar or white balsamic vinegar
4 teaspoons olive oil
¾ teaspoon salt
⅓ cup snipped fresh dill

Steps:

  • Core tomatoes and cut a shallow X in bottom of each with a knife. Fill a bowl with ice and cold water. Blanch tomatoes in a large pot of boiling water for 10 seconds. Remove with a slotted spoon and immediately transfer to ice water. Peel tomatoes, then halve horizontally. Squeeze tomatoes over a bowl to remove seeds.
  • Pulse pepper, squash, vinegar, olive oil, and salt in food processor 2 or 3 times, until very coarse. Cut tomatoes into large chunks, add to food processor along with dill, and pulse several times until combined but still slightly chunky. Serve immediately or chill until ready to serve.

3 tablespoons vegetable oil or 3 tablespoons olive oil
1 1/2 tablespoons cider vinegar
1 teaspoon salt
1 teaspoon garlic salt
1/4 teaspoon pepper
1 (4 ounce) can chopped ripe olives (with liquid)
1 (4 1/2 ounce) can chopped green chilies (with liquid)
2 -3 tomatoes, finely chopped
4 -5 green onions, finely chopped

Steps:

  • Blend oil and vinegar.
  • Add salt, garlic salt and pepper.
  • Stir.
  • Mix with olives and liquid, green chiles and liquid, tomatoes and onions.
  • Chill several hours for flavors to mix.
  • Serve cold with tortilla chips.
  • Variation: Add 3 or 4 peeled, pitted and diced ripe avocados at serving time.

2 tomatoes, chopped fine
1/2 green pepper, chopped fine
1 bunch green onions, chopped fine
1 can(s) black olives, drained well and chopped fine
1 jar(s) green olives, drained and chopped fine
1 Tbsp olive oil
1 Tbsp red wine or balsamic vinegar
1/4 c taco sause
6 dash(es) tabasco sauce
1 can(s) green chiles, drained
dash(es) garlic salt

Steps:

  • 1. Finely chop all ingredients. Add seasoning and mix well. Adjust ingredients and flavoring to taste. Chill.
  • 2. Serve with Scoops or tortilla chips, with sour cream on the side.

3 avocados (peeled pitted and diced)
4 green onions (thinly sliced)
4 oz can diced green chiles
3 Tablespoons olive oil
1 1/2 Tablespoon cider vinegar
1 tsp garlic salt
12 tsp salt
14 tsp pepper
serve with Tortilla chips (the lime ones are delicious with this)

Steps:

  • Combine tomatoes, avocados, onions and chiles in a large bowl; set aside. Whisk together olive oil and remaining 4 ingredients; drizzle over vegetables and toss well. Cover and chill.

8 oz. cream cheese, softened
1/4 c. sour cream
2 oz. shredded cheddar cheese
2 tbs. minced fresh cilantro
1 garlic clove, pressed
1 sm. tomato, seeded and chopped
2 green onions, sliced
1/3 c. chopped cucumber
Baked Pita Chips (recipe included)

Steps:

  • In medium bowl, combine cream cheese and sour cream. Mix well. Stir in cheddar, cilantro, and garlic. Cover. Chill 2-3 hours for flavors to blend. Transfer to 8 or 9" pie plate just before serving. Top w/ tomato, onion, and cucumber. Serve w/ baked pita chips. Baked Pita Chips 4 pita bread rounds Preheat oven to 400º. Cut each round crosswise in half. Split each piece in half to form a total of 16 half-rounds. Cut each piece in half to form 2 triangles. Arrange in single layer on baking sheet. Bake 8-10 min. or till crisp and light brown. Remove from pan. Cool completely. Yield 32 pita chips
