This is a recipe for a refreshing German Cucumber Salad. Called Gurkensalat, it's a staple side salad you'll find versions of in every household in Germany. It's particularly favoured during the warmer weather for its cooling effects, as well as alongside rich mains such as German Pork Knuckle.It will go with virtually any European or Western dish, as it has a clean, neutral flavour.The dressing is very thick at first, but it naturally becomes diluted with the cucumber juices so you end up with a thinner, white dressing. This makes this Cucumber Salad refreshing rather than cloying. Don't skip the dill, it really makes it!

2 English / telegraph cucumbers ((ie. long cucumbers. Sub 4 x Lebanese cucumbers, Note 1))
1/2 cup sour cream ((sub plain, thick yogurt))
1 tbsp white vinegar ((plain distilled vinegar))
1 tsp white sugar
1 tbsp fresh dill (, finely chopped)
1/2 tsp salt
Black pepper

Steps:

  • Peel cucumbers and finely slice into 2mm / 0.2" slices using a mandoline (or by hand and show off your knife skills!)
  • Mix dressing ingredients in a small bowl.
  • Toss cucumbers with dressing, then set aside for at least 4 hours or even overnight. The cucumbers will soften and leach juice which will thin the dressing to the right consistency.
  • Serving: Toss well then transfer to bowl for serving. Serve chilled for the most refreshing flavour!

A traditional German favorite that I have loved since I was a child. This recipe is quick, easy, and delicious. Substitute cider vinegar for a different flavor. I prefer to leave the skins on the cucumbers for more texture and flavor, but they can also be peeled prior to slicing if desired. Flavor is best when marinated for several hours before serving.

2 large cucumbers, sliced thin
½ onion, sliced thin
1 teaspoon salt
½ cup sour cream
2 tablespoons white sugar
2 tablespoons white vinegar
1 teaspoon dried dill
1 teaspoon dried parsley
1 teaspoon paprika

Steps:

  • Spread cucumbers and onion on a platter; season with salt and let rest for 30 minutes. Squeeze excess moisture from cucumbers.
  • Stir sour cream, sugar, vinegar, dill, and parsley together in a large bowl.
  • Fold cucumber and onion slices into the sour cream mixture.
  • Refrigerate 8 hours to over night; garnish with paprika to serve.

My husband and I have been trying to replicate the cucumber salad we have at our favourite little German restaurant. This isn't quite the same, but close enough. recipe adapted from razzledazzlerecipes.com.

2 whole cucumbers
1/3 cup finely diced onion
4 garlic cloves, chopped
2 sprigs fresh dill, minced
2 tablespoons olive oil
3 tablespoons red wine vinegar
2 tablespoons sugar (or use less, to taste)
1 teaspoon salt
fresh ground black pepper, to taste

Steps:

  • Peel cucumbers, slice thin, and drain off all excess liquid.
  • Combine with remaining ingredients in bowl; mix well.
  • Marinate at least two hours, or preferably, overnight.
