This turkey cooked on a gas grill comes out juicy with a lovely brown, crisp skin.

1 (12 pound) whole turkey, neck and giblets removed
3 cups water
2 cups butter
2 tablespoons seasoned salt (such as LAWRY'S®)
2 cubes chicken bouillon granules
1 tablespoon ground black pepper

Steps:

  • Preheat an outdoor grill to 400 degrees F (200 degrees C). Place turkey breast-side up in a roasting pan.
  • Put water in a large pot and bring to a boil. Add butter, seasoned salt, bouillon cubes, and black pepper to the pot; stir basting liquid well to combine.
  • Draw up 30 milliliters basting liquid in a marinade injector; inject throughout bird. Pour remaining liquid into bottom of roasting pan, cover with aluminum foil.
  • Bake turkey on the preheated grill, basting every 30 minutes, until no longer pink at the bone and the juices run clear, about 3 1/2 hours. An instant-read thermometer inserted into the thickest part of the thigh should read 165 degrees F (74 degrees C). Remove turkey from grill, keep covered, and allow to rest in a warm area 10 to 15 minutes before slicing.

CHILI SPICED SMOKED TURKEY BREAST (ON THE GAS GRILL)



Chili Spiced Smoked Turkey Breast (On the Gas Grill) image

Smoking the turkey was easy and resulted in THE most juicy and moist turkey DH or I had ever eaten! Cooking with indirect heat was key. I found the inspiration for this recipe on the web but have added some fresh herbs. You will not believe how the smoke flavour permeates the meat!

1/4 cup lime juice
2 tablespoons olive oil
2 teaspoons cocoa powder
2 teaspoons paprika
2 teaspoons brown sugar
1 teaspoon salt
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon chili powder
4 garlic cloves, minced
6 lbs turkey breast, bone in
3 cups mesquite wood chips
Pam cooking spray
1 teaspoon fresh sage leaf, chopped
1/2 teaspoon lemon rind, grated

Steps:

  • Combine the first 10 ingredients.
  • Marinade Turkey breast in a large ziplock bag or dish for 2 hours.
  • Soak wood chips in water for at least 1 hour.
  • Drain the wood chips well and make a smoke 'bomb' using 1 cup of moistened wood chips wrapped in thick tin foil with numerous holes poked in it.
  • Heat BBQ to 350-400.
  • When heated turn off the right side. Place smoke 'bomb' on the side with the flame and the turkey breast, skin side up, on the right side of the grill.
  • Maintain temperature of grill at about 300 degrees.
  • After every hour, replace the smoke bomb with a fresh one.
  • Allow meat to cook slowly using indirect heat until the internal temperature reaches 160 degrees, approx 2 1/2 to 3 hours.
  • Sprinkle with sage and lemon.
  • Tent with foil and allow to rest for 10 minutes before carving.
  • ENJOY and wait for the compliments!

MESQUITE SMOKED CAJUN WHOLE TURKEY COOKED ON GAS GRILL

Turned out mighty tasty! Combined several recipes to get one we thought we might like....next time maybe a little more kick.

8 3/4 lbs turkey
2 teaspoons garlic powder
1 teaspoon thyme
1/2 teaspoon cayenne
1 teaspoon italian seasoning (Mrs Dash )
1/2 teaspoon clove
1/2 teaspoon allspice
butter-flavored cooking spray, as needed
1 cup mesquite wood chips, soaked in water and drained

Steps:

  • Preheat grill on high. Turn down to maintain (medium) 350 degrees.
  • Place smoker box of wet mesquite chips on grill.
  • Remove neck and giblets from cavity, rinse turkey, and pat dry.
  • Mix spices in a small bowl, set aside 1 TBSP of mixture, and put some of the mixture in the cavity and some under the skin.
  • Spray turkey with butter spray and pat reserved spice mixture on the skin of the turkey.
  • Place turkey breast side down, turning back wing tips, on the grill over a dip pan.
  • Cook turkey for 11 to 13 minutes per pound (internal temperature 180 degrees in thigh and 170 degrees in breast.
  • Note: At halfway point, turn turkey if needed for even cooking. 10- 18 pound turkey takes 2 to 3 hours. We turned our turkey at 1 1/2 hours. To reach internal temperature of 170 in breast we cooked it for 1 1/2 more.
  • Let stand 15 minutes before carving.
