This is the easiest marinade I have ever used, and one of the most popular with my family. This recipe also works well with any cut of chicken--thighs, legs, etc.

- In a large, nonporous bowl, combine the garlic and the soy sauce. Add the chicken and turn to coat well. Cover and marinate in the refrigerator for at least an hour.
- Preheat an outdoor grill for medium high heat and lightly oil the grate.
- Grill chicken over medium high heat for 10 to 15 minutes per side, or until internal temperature reaches 180 degrees F (80 degrees C). Discard any remaining marinade.

SOY-GARLIC GLAZED COLA CAN CHICKEN
Crack open a can of cola for a more kid-friendly version of beer can chicken.

- Marinate the chicken: Place the chicken in a large resealable gallon-sized plastic bag and add half of the can of cola, 2 sliced garlic cloves, 2 smashed ginger coin and 1/2 cup soy sauce. Seal the bag, put it in a rimmed dish and marinate for at least 2 hours or up to overnight in the refrigerator, flipping the bag periodically for even distribution of the marinade.
- Make the glaze: Meanwhile, combine the sake with 3 tablespoons brown sugar, 1/3 cup water and the remaining 1/2 cup soy sauce, 4 sliced garlic cloves, and 2 smashed ginger coins in a small saucepan. Bring to a gentle simmer and cook for 5 minutes to develop flavor. Using a fork, stir the cornstarch in a small bowl with 1 tablespoon water. Whisk the cornstarch slurry into the sauce. Simmer the sauce for 1 minute more. Remove from the heat and add 1 teaspoon vinegar. Cool to room temperature, then strain, discarding the solids. Set aside 1/4 cup for drizzling at the end.
- Make the pickled peppers: Place the sliced peppers in a medium bowl. Bring 1/2 cup of water to a boil with 1/2 teaspoon salt, then pour over the peppers. Let sit 10 minutes, then drain. Return the peppers to the same bowl. Add 1/4 cup vinegar, 2 tablespoons water, 1/2 teaspoon salt and remaining tablespoon of brown sugar, and stir to dissolve. Set aside.
- Take the chicken out of the fridge 30 minutes before cooking. Remove from the marinade, and pat dry with paper towels. (Discard the marinade.)
- Prepare a grill for medium indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off one of the middle burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
- Lightly sprinkle the chicken all over with salt and pepper, and place its cavity over the cola can so that the chicken is sitting upright. Carefully put the chicken on the can on the indirect side of the grill, with the back facing the hotter side. Cover and cook until an instant-read thermometer inserted in the breast (avoiding the bone) reads 140 degrees F, 35 to 40 minutes. Baste the chicken all over with the glaze and cover for 5 minutes. Turn the chicken so that the breast is facing the hotter side. Baste a second time, and cover again until the thermometer reads at least 165 degrees F in the thickest part of the thigh, about 25 minutes more. Carefully remove from the grill and let rest 20 minutes before carving. Drizzle with some of the glaze and sprinkle with the sesame seeds. Serve the pickled peppers on the side.

Steps:
- Grab a big bowl.
- Place chicken wings in bowl.
- Coat wings with soy sauce, leaving a little puddle for them to marinate in on the bottom.
- press the garlic through a garlic press & scatter around (or chop finely).
- Grind about a teaspoon of black pepper on top.
- Throw in some cayenne if you're feeling daring, I just eyeball it.
- Cook some jasmine rice in the rice cooker, the chicken is great with it! But can also be made alone. I get mahatma jasmine rice at the grocery store, nice and cheap!
- Marinate for at least 2 hours, but keep in mind the longer it marinates. the tastier the wings will be. I like to prep it before bed and cook it the next day for dinner. Perfect!
- After marinating, preheat the oven @ 375 degrees & pop the wings in , after 30 minutes turn them over and let cook for another 30 minutes and voila! Dinner is served :).

I have made these many times in the past for my parties and there is never any left everyone loves these and I always get asked for the recipe! If you are serving this for a get together I suggest to double the recipe to make 40 wings --- plan ahead the wings have to marinate for 24 hours, frozen thawed wings retain more moisture it is best to use fresh chicken for this --- make certain to have lots of napkins when you serve these!

- Paper towel dry all the wings to remove as much moisture as possible.
- In a large bowl stir together the first 8 ingredients.
- Stir in the chicken wings; toss to coat.
- Cover and refrigerate for 24 hours.
- When ready to bake set oven to 400 degrees F.
- Arrange the wings on greased baking sheet/s.
- Pour the marinade into a small saucepan.
- Bake the wings for about 50-60 minutes, turning and basting with the marinade occasionally.

CHICKEN SPRING ROLLS WITH GARLIC SOY DIPPING SAUCE
Healthy and tasty! Often when I go to make a new recipe, I'll search and find sometimes 3 or more that sound good. I'll then make a combination of them, more than likely adding or omitting a few ingredients to suit my palate. This is one of those times. I really liked the resulting spring rolls and I hope you do too! Make sure that if you don't want to cook the wrappers, you get the ones that can be soaked for a few seconds in water, then made into a wrap and eaten immediately.

- Combine all ingredients for the dipping sauce and set aside.
- Heat oil in skillet or wok over high heat. Add the garlic, ginger, cabbage, carrot, scallions and bean sprouts. Cook for 2 minutes or until the cabbage is just limp.
- Add the noodles and chicken; continue to cook until heated through.
- Stir in the hoisin and oyster sauces; toss to coat the mixture. The filling should be moist, but not wet. Remove from heat and allow to cool. Toss in chopped cilantro.

- Cut chicken into one-inch pieces and place in a shallow dish.
- In a small saucepan, combine soy sauce or tamari, mirin, sake or sherry, brown sugar, garlic and ginger. Bring to a simmer and cook for 7 minutes, until thickened. Reserve 2 tablespoons sauce for serving. Pour remaining sauce over chicken, cover, and chill for at least one hour (and up to 4 hours).

SOY-GARLIC FRIED CHICKEN
This is Chef Solomonov's homage to the addictive Korean fried chicken at Café Soho in North Philadelphia. The key to the sticky richness of the glaze is kecap manis, an Indonesian sweet soy sauce, along with tons of roasted garlic. This sweet-salty-funky shellac works wonders when brushed on crunchy fried chicken.

- Roast garlic: Preheat the oven to 350 degrees F. Cut head of garlic in half horizontally to expose the cloves (you don't need to cut all the way through). Drizzle the cut surface with olive oil, close the halves back together, and wrap securely in a double layer of foil. Roast until the cloves are tender and golden brown, 45-60 minutes. Unwrap and set aside to cool.
- Soy-Garlic Glaze: In a medium bowl, add kecap manis, white soy sauce, sherry vinegar, and red pepper flakes. When garlic is cool enough to handle, gently squeeze the roasted cloves into the bowl. Stir with a spoon to break up the cloves, then whisk until combined (it's okay to leave some small pieces!). Set aside.(Note: Makes a little less than 2 cups of Soy-Garlic Glaze. Leftover Soy-Garlic Glaze can be stored in the refrigerator in an airtight container for up to 2 weeks.)
- Cure chicken: In a large bowl, add salt and mustard and onion powders, and combine until well blended. Add the chicken pieces and get in there with your hands to coat each piece well. Put the coated pieces of chicken on a baking sheet lined with parchment paper, keeping the skin intact; lightly cover with parchment paper or plastic wrap. Refrigerate for at least 4 hours or up to overnight.
- Bring the cured chicken to room temperature. (You don't want to fry ice-cold chicken, because it won't cook all the way through, and it will chill the frying oil.) Meanwhile, make the batter: In a large bowl, add the cornstarch, flour, and salt. Slowly pour in the cold water, whisking continuously, until the mixture is smooth and the consistency of thin pancake batter. Add more water as needed to thin the batter.
- Heat oil: Clip a candy or deep fry thermometer onto a large, heavy pot. Add enough canola oil to fully submerge the chicken pieces-about halfway up the side of the pot. (Oil expands as it heats, so don't overfill the pot.) Heat the oil over low heat until it reaches 300 F. (It's fine if the oil temperature goes up to 350 degrees F, because it will drop once the chicken goes in.) Coat chicken: When the oil is hot, add all the chicken into the batter and fully coat each piece.
- First fry: Starting with the dark meat, use tongs to pick up each piece and allow the excess batter to drip off. Gently swirl the tip of the chicken in the oil to set the crust; this will prevent the chicken from sticking to the bottom of the pot. Then ease the rest of the piece into the oil. Repeat with all the chicken pieces. Use a slotted spoon or spider strainer to make sure the chicken pieces don't stick together or to the bottom of the pot. If they do stick, gently separate them with the spoon; try not to tear the delicate crust! Use the slotted spoon to remove any stray bits of batter.
- After 10 minutes total, use the slotted spoon to transfer the chicken pieces to drain on a wire rack or paper towels on a baking sheet. The chicken will not be fully cooked-there's a second fry. Let the chicken rest, 15-20 minutes. Meanwhile, reheat the oil to 350 degrees F. (Note: The chicken can be made to this point up to 1 day ahead and refrigerated; bring it back to room temperature before the second fry.) Second fry: When the oil is hot, fry the chicken pieces again, this time for 4 minutes or until golden brown and crispy.Use the slotted spoon to transfer the chicken pieces to drain on a clean wire rack set over a paper towel-lined baking sheet.
- Glaze chicken: Brush glaze onto warm chicken, then flip to brush other side. (It's fine to brush the glaze all over the chicken several times!) Serve immediately. (Note: Frying oil can be reused several times for frying chicken. Cool the oil completely, then pour through a fine-mesh strainer into a clean jar. Cover and store in the refrigerator for up to two weeks.)

- Before breading, pat chicken with paper towel to remove excess liquids. In a large zip lock bag, combine clour, panko, garlic salt and pepper, shake well.
- Crust each chicken evenly with panko mixture. Deep fry in oil on medium to high heat until chicken is golden on each side.

- Make sesame vegetables:
- In a heavy skillet heat vegetable oil over moderate heat until hot but not smoking and cook bell pepper, mushrooms, scallions, and red pepper flakes, stirring, until vegetables are golden and cooked through, about 5 minutes. Toss vegetables with sesame oil and salt and pepper to taste.
- Make chicken:
- In a small bowl combine soy sauce, Sherry, brown sugar, garlic, gingerroot, and salt and pepper taste and stir until sugar is dissolved. Gently pound chicken between 2 sheets of plastic wrap until about 1/4 inch thick. In a large sealable plastic bag marinate chicken in soy sauce mixture, turning occasionally, 25 minutes.
- In a heavy skillet heat oil over moderate heat until hot but not smoking. Remove chicken from marinade, letting excess drip off and reserving marinade, and cook until browned and cooked through, 3 to 4 minutes on each side. Transfer chicken to plate and keep warm. Pour reserved marinade through a sieve into skillet and boil until reduced to about 2 tablespoons.
- Drizzle chicken with sauce and serve with sesame vegetables.
KOREAN FRIED CHICKEN WITH SOY-GARLIC GLAZE
Korean fried chicken is double fried, guaranteeing it's cooked and tender on the inside, golden and crispy on the outside. While many versions feature a spicy gochujang-based glaze, this one opts for a soy-garlic sauce with just a hint of heat from gochujang. In lieu of gochujang, you can use another Asian chili sauce, any of which will bring its own unique flavor profile. You could also swap in the red chile flakes gochugaru, another Korean pantry staple.

- Toss the chicken with 2 teaspoons salt and 1/2 teaspoon pepper. Whisk 1/2 cup cornstarch and 1/4 teaspoon baking powder in a medium bowl. Coat the chicken in the cornstarch mixture, shaking off any excess. Transfer to a rack set on a baking sheet and let sit, uncovered, to set the coating, 30 minutes.
- Meanwhile, heat 2 tablespoons vegetable oil in a small saucepan over medium heat. Add the garlic and ginger and cook, stirring, until just softened but not browned, about 2 minutes. Add the vodka and 1/3 cup cold water and whisk until the batter is smooth and very thin (about the consistency of half-and-half). If needed, add more water, 1 tablespoon at a time, to thin the batter.
- One at a time, dip about half the chicken pieces in the batter, letting any excess drip off. Then, using tongs, hold the chicken halfway in the hot oil for 1 to 2 seconds before letting go completely (this will prevent the chicken from sticking to the bottom of the pot). If any pieces stick together, gently separate them with the tongs. The oil temperature will drop; adjust the heat as necessary to maintain a temperature between 300 degrees F and 325 degrees F. Fry the chicken until the coating is crisp but not browned, about 6 minutes. Remove to a rack set on a baking sheet to drain. (The chicken will not be fully cooked at this stage.) Let the oil temperature return to 350 degrees F before frying the remaining chicken.
- Double-fry the chicken: Increase the oil temperature to 375 degrees F. Working in two batches, fry the chicken again until the coating is browned and very crisp, 4 to 6 minutes for wings and 6 to 8 minutes for drumsticks. Adjust the heat as necessary to maintain a temperature of 350 degrees F. Remove with tongs and transfer to a clean rack set on a baking sheet; brush all over with the sauce. Sprinkle with sesame seeds.
BROILED SOY, GARLIC, CITRUS CHICKEN
This is a Kikkoman Soy Sauce recipe. Love the flavor blend of citrus soy & garlic. I like to add 1/2 tsp chili flakes to this recipe. I will adapt this recipe for BBQ and post instructions

- Combine Soy, Orange juice, Lime juice& garlic in a large zip lock bag.
- Place chicken breasts in the bag,press out the air, seal, flip to coat all sides of the chicken.
- Marinate for apprx 20 minutes, turning the bag a few times.
- Remove chicken from the marinade and discard the marinade.
- Place chicken, skin side down 5" below broiler for 8 minutes, turn over and continue broiling for apprx 6 minutes longer or until the breasts are fully cooked, time depends on the size of the breasts.

This quick soy garlic chicken instant ramen is a sauced noodle recipe rather than a soup, with crispy Korean-inspired pan-fried chicken.

- Bring 6 cups of water to a boil for the noodles. Quickly coat the chicken using 1 of the sauce packets. Then immediately dredge the chicken pieces in potato starch on both sides.
- Heat a nonstick skillet over medium high heat. Add the oil, and pan-fry the chicken until crispy on both sides, about 5-6 minutes per side. Remove the chicken from the pan, and set aside.
- To the pan you cooked the chicken in (over medium heat), add the shallot and garlic, and cook for 2-3 minutes, until the shallots begin to turn translucent. Add the second sauce packet, mirin, sesame seeds, brown sugar, rice vinegar, and gochujang, if using. Simmer for about 3 minutes, until thickened.
- Meanwhile, add the noodles to boiling water and cook for 3 minutes. Drain and add the noodles to the pan of sauce along with the scallion. Toss to coat, and divide into 2 bowls. Top with the chicken, and serve.
