GARLIC SEAFOOD ALFREDO PASTA

This pasta dish is WONDERFUL!.... Kind of a cross between a seafood scampi and a creamy Alfredo sauce, which are two of my favorites! Easy to make and your family and friends will love it!

Number Of Ingredients 16

1/2 cup butter (1 stick)
4 garlic cloves, finely minced
3 tablespoons all-purpose flour
1 1/2 cups milk
4 ounces cream cheese, softened, cubed
1 cup parmesan cheese, grated
1 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon dried parsley
1 lb linguine (or use your favorite pasta)
2 tablespoons butter
1/2 lb shrimp, peeled, deveined and tails removed
1/2 lb sea scallops
1/2 teaspoon salt
1/2 cup broccoli floret
1/2 lb crabmeat, cooked

Steps:

  • In a medium size skillet, melt the butter over medium heat. Add the garlic and cook until aromatic, (about 2 minutes), stirring constantly, and taking care not to let the garlic burn.
  • Sprinkle in the flour and whisk for about 1 to 2 minutes, just to get the flour a little heat and mix with the butter and garlic. Slowly whisk in the milk and cream cheese, whisking until the mixture is smooth. It will look curdled at first, but continue whisking for 2-3 minutes, it will come together to form a smooth, creamy sauce. Stir in the Parmesan cheese, salt, pepper and parsley. Stir until the cheese is melted and the sauce is the desired consistency. (Cook for 2-3 minutes for a thicker sauce or remove right after the cheese is melted for a thinner sauce). Set aside and keep warm.
  • In a large size Dutch oven or large size sauce pan, over high heat, bring 6 to 8 cups of water to a boil, add a dash of salt and about a tablespoon of oil to the water. Once the water is a consistent rolling boil, add your pasta and reduce heat to medium. Boil pasta until al dente, (about 8 to 12 minutes), stirring occasionally to keep the pasta from sticking together.
  • In a medium size skillet, add 2 tablespoons butter over medium-high heat, add shrimp and scallops and salt, sauté until shrimp turn an orange color, now, quickly and gently fold in the broccoli and crabmeat.
  • Add the Alfredo sauce to the Al dente pasta, toss well to coat the pasta in sauce and then gently fold in the seafood mixture. Serve hot.
  • Makes 4 to 6 servings of pasta and sauce.

1 pound sea scallops
1/2 pound fettuccine
1 cup dry white wine
1 cup seafood stock
2 large cloves garlic, minced
1 large lemon, grated and juiced (reserve juice)
1 large shallot, finely chopped
2 tablespoons extra-virgin olive oil, divided
2 tablespoons butter, divided
salt and freshly ground pepper, to taste
dill, to taste, freshly chopped, garnish
water, for boiling

Steps:

  • In a large pot, bring salted water to a boil over high heat. Cook pasta according to packaging directions, or until al dente. Rinse scallops, remove muscle and pat dry with paper towels. Season with salt and pepper. In a large sauté pan, heat 1 tablespoon olive oil and 1 tablespoon butter over medium-high heat. When butter melts into the olive oil, cook scallops for 2-3 minutes on either side, or until browned. Transfer to a plate and keep covered. (Do not over cook scallops, as they will become rubbery.) Using the same pan, drizzle in the rest of your olive oil and butter, and cook your garlic, shallots (both seasoned with salt and pepper) and lemon peel, stirring frequently, for 2 minutes. Pour in your wine and let reduce 1-2 minutes. Then add seafood stock. Let reduce 3 minutes. Add the lemon juice (making sure to catch the seeds) and cook for 1 minute. Take your cooked pasta and add it to the sauce. Cook for 30 seconds and toss to coat well. Transfer to serving plates and top with scallops and fresh dill.

2 tablespoons light margarine or 2 tablespoons butter
2 cloves minced garlic
3 tablespoons all-purpose flour
1 1/4 cups chicken broth or 1 1/4 cups vegetable broth
1/2 cup nonfat sour cream

Steps:

  • Melt margarine on stovetop and add garlic.
  • Saute 1 minute.
  • Add flour and stir another minute.
  • Add chicken broth and cook stirring until sauce thickens.
  • Stir in sour cream.
  • Serve over chicken, seafood, pasta or a mixture.

If frozen, run the seafood under cold running water to thaw quickly or if time permits, thaw overnight. For the best grilling results, blot the scallops dry with paper towels before placing on the grate. Health It Up Twist: For a veggie-rich option, serve the seafood over a bed of steamed green beans, sliced sweet peppers and zucchini, instead of pasta. Simply delicious!!

1 cup fresh basil leaf, lightly packed
1/2 cup garlic and herb marinade (Diana)
1/4 cup olive oil
2 tablespoons parmesan cheese, grated
2 teaspoons lemon zest
1 lb large scallop
1 lb extra-large shrimp
3/4 cup frozen peas, thawed
1/2 cup chopped tomato
1/2 cup green onion, sliced
4 cups cooked linguine

Steps:

  • Preheat grill to high; grease grate well. Pulse basil, Marinade, Parmesan, and lemon zest in a food processor or blender until basil is finely chopped.
  • Toss seafood with half the marinade mixture; reserve the remaining half.
  • Grill seafood, turning once for 4-5 minutes or until scallops and shrimp are opaque.
  • Toss hot seafood with reserved marinade mixture, peas, tomatoes, and green onions.
  • Serve over hot pasta.
