2 tablespoons olive oil
1-1/2 pounds fresh green beans, trimmed
1 cup thinly sliced onion
12 garlic cloves, peeled and halved
1/4 to 1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons balsamic vinegar
1/3 cup pine nuts, toasted

Steps:

  • Brush a 15x10x1-in. baking pan with the oil. Place the green beans, onion and garlic in a single layer in pan. Sprinkle with salt and pepper. Bake, uncovered, at 400° for 25-30 minutes or until crisp-tender, stirring twice. , Transfer to a serving bowl. Drizzle with vinegar and toss to coat. Sprinkle with pine nuts.

  • Preheat oven to 450°F. Toss green beans with olive oil on large rimmed baking sheet. Roast until browned and almost tender, stirring occasionally, about 10 minutes. The hanger steak is a thick strip of meat from the underside of the beef cow. It hangs between the rib and the loin and is part of the diaphragm. It is similar to the skirt steak because it is full of flavor but can become tough if it is not prepared correctly. This can be a really nice cut of meat to serve your family without paying too much for it. I am going to give you detailed instructions on how to do just that. Enjoy!

4 (6 ounce) hanger steaks - fat and silver skin trimmed
1 ½ tablespoons canola oil
salt and pepper to taste
1 pound fresh green beans, trimmed
2 cloves garlic, minced
¼ cup canola oil
salt and pepper to taste
1 cup water
¼ cup white sugar
4 whole shallots
3 fluid ounces port wine
1 cup demi glace
½ cup butter, room temperature

Steps:

  • Lightly cover the steaks with canola oil and season generously with salt and pepper; cover and place in refrigerator until ready to grill.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Place a sheet of aluminum foil on about 1/3 of the grill surface.
  • Bring a large pot of generously salted water to a boil. Cook the green beans in the boiling water until heated through yet still firm, 5 to 7 minutes. Drain. Transfer to a large bowl. Add the garlic and 1/4 cup of canola oil to the green beans and toss to coat. Season with salt and pepper; set aside.
  • Stir the water, sugar, and shallots together in a saucepan until the sugar dissolves; cover the pan and bring the mixture to a boil. Drain the liquid and return the shallots to the pan. Add the port wine and demi glace to the saucepan and place over medium heat; cook until the liquid reduces to about half its original volume. Stir the butter into the mixture until it melts. Remove the pan from the heat. Season with salt as needed. Keep the saucepan covered until the steaks are prepared.
  • Spread the green beans onto the part of the grill prepared with aluminum foil and allow to finish cooking while grilling the steaks.
  • Cook the steaks until they start to firm, and are reddish-pink and juicy in the center, about 2 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Allow the steaks to rest 5 minutes before placing onto individual plates. Spoon the sauce over the steaks. Serve the green beans on the side.

1 lb fresh green beans (thin beans preferred, but any type will work)
6 shallots, peeled, and cut into thin slivers
5 large garlic cloves, peeled and cut into thin slices
2 tablespoons olive oil (original recipe called for 3, but I thought 2 was plenty)
1 teaspoon salt (or less)
fresh ground black pepper
1/4 cup flat leaf parsley, very finely chopped
1/4 cup almonds, chopped (I used sliced almonds and only slightly chopped them)
1 teaspoon lemon zest

Steps:

  • Preheat oven to 450°F (If you're cooking other things you can use a slightly lower temperature, just increase the time a little.).
  • Trim ends from green beans. If using thin, long beans, cut in half crosswise into pieces about 2 inches long. Peel and cut shallots and garlic, then place with beans in plastic bowl. Add olive oil, salt, and pepper, and use a wooden spoon to toss until beans, shallots, and garlic are well coated with oil.
  • Spray roasting pan with nonstick spray or mist with olive oil, then arrange the vegetables in a single layer. (I like to cover the pan with foil, then spray the foil for even easier clean-up.) Roast 12-15 minutes for thin beans, or slightly longer for regular beans, until beans are slightly shriveled, and shallots and garlic are lightly browned.
  • While beans cook, toss together chopped parsley, chopped almonds and lemon zest. When beans are done, toss hot beans with parsley/lemon/almond mixture and serve immediately.

1 (1 1/2-inch) piece fresh ginger, peeled (about 2 ounces) or 1 tablespoon bottled ginger juice
1 pound green beans, trimmed
2 to 3 shallots, sliced crosswise into 1/4-inch-thick slices
2 tablespoons extra-virgin olive oil
Coarse salt and freshly ground black pepper
1 clove garlic, finely minced
2 tablespoons coarsely chopped fresh cilantro or mint (or a mix of both)

Steps:

  • Preheat oven to 450 degrees with a rack set in center of oven. Line a heavy-bottomed rimmed baking sheet with parchment paper; set aside.
  • Finely grate ginger, if using fresh, on a microplane grater. You should have about 2 tablespoons grated ginger. Squeeze ginger over a small fine mesh sieve set over a bowl or in a piece of cheesecloth into a bowl, extracting as much liquid as possible. You should have about 1 tablespoon ginger juice. Discard grated ginger.
  • Place beans and shallots on prepared baking sheet; drizzle with oil and season with salt and pepper; toss to combine. Transfer to oven and cook, until beans are tender and browned in spots and beginning to shrivel and shallots are browned in spots, 15 to 20 minutes, tossing once or twice during cooking.

3 Tbsp olive oil
3 clove garlic
DRESSING OPTION 1
3-4 tsp dijon mustard
1/4 tsp dried rosemary, crushed

1 Tbsp red wine vinegar

  • 1. If using green beans, remove stems and halve. If using asparagus, trim off woody pieces and save for another use. Boil vegetables in salted water, 3 to five minutes. Drain and immediately drop into ice water. Let sit for another three minutes.
  • 2. Meanwhile, mixrowave coarsely chopped garlic and olive oil in 30 second intervals until fragrant. Be careful not to burn the garlic or have the oil too shallow. I do it in a small tea cup. Reserve 1 tablespoon of garlic infused oil and toss the remaining oil with the vegetables and a liberal amount of salt. Sprinkle garlic pieces over vegetables.
  • 3. Roast vegetables in 400 degree oven for thirty minutes. For dressing, try one of the following: 1.) Mix Dijon mustard, rosemary, and desired amount of pepper into remaining oil. Or 2.) mix garlic oil and a tablespoon of red wine vinegar in a dressing bottle. When vegetables are well roasted, drizzle one of the dressings over the vegetables and serve.

1.5 lb small potatoes
2 lb fresh green beans
16 oz sliced mushrooms
1 Medium yellow onion
8 cloves garlic
6 sprigs fresh thyme
3 tablespoons olive oil
sea salt and fresh ground black pepper

Steps:

  • Preheat oven to 350° F. If you want them to cook a bit quicker you can do 400°, but I was cooking a roast at 350 so that's what I went with. Wash all of your vegetables. Cut the potatoes into quarters, slice mushrooms, half and slice the onion thinly, peel and roughly chop the garlic cloves. Add all of these vegetables to the baking sheet. Drizzle the olive oil over the top. Add the fresh thyme leaves, salt, and pepper. Toss well and spread into single layer. Roast for 30 minutes. While roasting, cut your green beans into thirds. After 30 minutes remove the pan from the oven and add the cut green beans. Toss well. Spread back out in a single layer and place back in the oven to roast for another 30 minutes.

  • Preheat oven to 450°F. Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet. In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the green beans and toss to coat. Using a slotted spoon or tongs, remove the green beans and arrange them on top of the lemon slices. Add the potatoes to the same olive-oil mixture and toss to coat. Using a slotted spoon or tongs, arrange the potatoes along the inside edge of the dish or skillet on top of the green beans. Changes: Coat your chicken in lemon pepper seasoning and mix your veggies with little bit of the oil,lemon pepper seasoning and garlic, bake the veggies for 15 min before add chicken on top. Cook it only at 375 also. I used boneless chicken & asparagus instead, turned out awesome meal! No need for all that oil, only spread little on bottom pan and little on veggies.

  • Set an oven rack in the middle position and preheat the oven to 450°F. Line a rimmed baking sheet with heavy-duty aluminum foil. In a small dry skillet over medium heat, toast the almonds until golden. Watch carefully and stir frequently as they can burn quickly! Immediately transfer to small bowl (don't leave them in hot pan as they will continue to cook). Set aside. Put the green beans in a large bowl. Add the sliced garlic, olive oil, 1 tablespoon of the lemon zest, kosher salt, pepper and sugar and toss well. Transfer the mixture to prepared baking sheet (don't leave any flavor behind: use a rubber spatula to scrape all of the oil and seasoning out of the bowl and onto the beans). Roast the beans and garlic for 15 minutes. Stir with a spatula to promote even cooking, then continue roasting until the beans are tender throughout, about 10 minutes more. The beans should be fully cooked, with some lightly browned but not shriveled. Add lemon juice, Parmigiano-Reggiano, remaining lemon zest and pine nuts to beans and toss well. Taste and adjust seasoning with salt, pepper and lemon juice if necessary. Transfer to a serving platter and serve hot or room temperature.

Try something new with tonight's green breans. This is a very easy side dish and a nice change from the traditional. Top with a sprinkle of breadcrumbs if desired! Also, I double the spices when cooking for my husband.

1 lb fresh trimmed green beans
2 teaspoons olive oil
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper

Steps:

  • Combine all ingredients in a shallow casserole or gratin dish, or a jelly roll pan.
  • Bake, stirring occasionally, at 450F until beans are tender and lightly browned.
