GARLIC MASH POTATO BAKE

1kg potato , quartered
butter , for frying
1 garlic clove , finely chopped
140ml pot single cream or milk
25g dried white bread crumbs
25g gruyère , grated
2 thyme sprigs, leaves stripped

Steps:

  • Cook the potatoes in a large pan of water for 15 mins or until soft. Drain well. Place the pan back on the heat. Melt a little butter and cook the garlic for 1 min to soften, then stir in the cream or milk and heat through. Return the potatoes to the pan and mash until smooth.
  • Heat oven to 180C/fan 160C/gas 4. Spoon the mixture into a 20 x 30cm baking dish. Sprinkle the breadcrumbs, cheese and thyme over the top. Can be made up to this point the day before and stored in the fridge or frozen for up to 1 month. Cook for 15 mins until the crumbs are crisp and the cheese has melted. To cook from frozen, simply cook for 1 hr 10 mins.

After searching Zaar I couldn't find a recipe like this. This recipe is a huge hit at our house. It has a smooth creamy texture with the flavours enhanced by the garlic. We serve it with all types of meat including fish.

5 -6 medium potatoes
250 ml fresh cream
2 cups grated cheese (we use cheddar)
2 garlic cloves, crushed (optional) or 2 teaspoons minced garlic (optional)
125 g diced bacon or 125 g ham
1 small onion, thinly sliced, approx 40 mm

Steps:

  • Preheat oven to 180°C.
  • Peel and slice potatoes approx 5mm wide and place them in a greased casserole dish alternating layers of onion and diced ham/bacon.
  • Sprinkle grated cheese over the top.
  • Mix the garlic and the cream together and pour over the top.
  • Cook in oven with lid on for 1 hour or until potatoes have softened.
  • Remove lid and return to oven for 15-20 minutes or until cheese has turned golden brown.
  • IMPORTANT: Leave to sit for approx 15 minutes before serving.

1 small onion, chopped (1/4 cup)
1 1/2 cups frozen mixed vegetables
1 can (10 3/4 oz) condensed 98% fat-free cream of chicken soup with 30% less sodium
1/4 teaspoon pepper
1/2 cup milk
1 cup Original Bisquick™ mix
1 pouch (4.7 oz) Betty Crocker™ roasted garlic and Cheddar mashed potatoes
2 cups milk

Steps:

  • Heat oven to 400°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
  • In 12-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in mixed vegetables, soup, pepper and 1/2 cup milk. Heat to boiling. Pour into baking dish.
  • In medium bowl, stir Bisquick mix and dry mashed potatoes. In small microwavable bowl, microwave 2 cups milk on High 2 minutes. Stir hot milk into Bisquick mixture with fork until soft dough forms; let stand 2 minutes. Drop dough by 15 spoonfuls onto hot beef mixture.
  • Bake 25 to 30 minutes or until dumplings are cooked and lightly browned.

Garlic-Lemon Salmon-Potato Bake image

A warm and delicious one-dish hot dinner for two. Be sure to use highly flavor olive oil in the marinade; you can use a cheaper, lighter flavored oil to spray the pan with. For the spray, you can use Pam or similar commerical olive oil nonstick spray, or simply put some olive oil in an oil atomizer if you have one. You can peel the potatoes before slicing if you want; I don't do this because I like them skin on, which also adds a bit more color to the dish. You can substitute about 6 little red-skinned new potatoes for the two large potatoes, if you prefer.

2 salmon steaks, 1 inch thick
2 large red potatoes
olive oil flavored cooking spray
1 teaspoon capers, drained
2 cups mixed baby greens
1 teaspoon fresh parsley, chopped
1/4 cup extra virgin olive oil
2 tablespoons lemon juice
3 garlic cloves
pepper

Steps:

  • In a mini-processor, puree marinade contents.
  • Pour marinade over steaks & marinate in refrigerator 1/2 hour.
  • Meanwhile, boil potatoes just until al dente & slice thin.
  • Spray a baking dish with olive oil spray.
  • Place sliced potatoes in baking dish and sprinkle a small amount of the marinade over them.
  • Top with salmon steaks.
  • Pour the rest of the marinade over the steaks and scatter the capers over the whole dish.
  • Bake at 400F 10 minutes and test for doneness--when cut into, flesh should be opaque but not yet flaking. If necessary, bake longer, testing every couple minutes; it should not take longer than 15 minutes.
  • Place a bed of greens on each of two dinner plates, place half the potatoes and a salmon steak on each bed of greens, dribble any marinade left in pan over the top and sprinkle with parsley.

18 medium potatoes, peeled and diced
3 whole garlic bulbs, separated into cloves and peeled
3 cups shredded cheddar cheese
1 package (8 ounces) cream cheese, cubed
6 large eggs, lightly beaten
1 tablespoon minced chives
1-1/2 to 2 teaspoons salt
1/4 teaspoon white pepper
Diced sweet red, yellow and orange peppers, fresh rosemary sprigs and minced chives, optional

Steps:

  • Place potatoes and garlic in a large kettle and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes and garlic are tender. Drain. , In a large bowl, beat the potatoes and garlic, cheddar cheese, cream cheese, eggs, chives, salt and pepper until blended. , Spoon into two greased shallow 3-qt. baking dishes. Bake, uncovered, at 350° for 30-35 minutes or until a thermometer reads 160°. Garnish with peppers, rosemary and chives if desired.

Stolen from the Food Lovers Diet Book..this recipe is so simple and so wonderfully delicious. I love it as a meal in itself with a salad but of course it is a fabulous side dish too.

60 g butter or 60 g margarine
1/4 cup plain flour
2 1/3 cups skim milk
1 garlic clove, crushed
1 teaspoon rosemary, finely chopped
2 cups low-fat cheese, grated
3 large potatoes, about 300g each, peeled and thinly sliced
salt and pepper

Steps:

  • Preheat the oven to 180 degrees Celsius Grease a 6cm deep 24cm square baking dish.
  • Melt the butter in a saucepan over medium heat. Add the flour and cook, stirring constantly for 2 minutes or until bubbly. Remove from the heat.
  • Slowly add the milk, stirring constantly until well combined. Return to the heat. Add the rosemary and the garlic, and cook, stirring, until the sauce comes to the boil.
  • Add 1 1/2 cups of the cheese and stir in to combine.
  • Arrange 1/3 of the potatoes over the base of the baking dish, so that they overlap slightly. Season with salt and pepper. Spoon 1/3 of the sauce over the potatoes. Repeat twice more, then sprinkle with the remaining cheese.
  • Bake in the oven for approx 1 hour, or until the potatoes are tender and the top is golden. if the top begins to brown too much, cover with foil.

  • Cook the potaotes in a big pan of water until soft. Drain well. Place the pan back on the heat. Melt the butter and cook the garlic for 1 min to soften, then stir inthe milk and heat through. Return to the potatoes to the mash until smooth.
  • Heat the oven 180c/fan/160/gas4. Spoon the mixture into a 20x30cm baking dish.
  • Sprinkle the breadcrumbs , cheese and thyme over the top.
  • If making for the freeze, freeze at this stage.
  • Cook for 15 mins until the crumbs are crisp and the cheese has melted.
  • To cook from frozen simply cook for 1hr 10mins.
