This easy Caesar dressing recipe yields classic Caesar flavor. This simple mayonnaise-based recipe is anchovy-free as long as you choose your Worcestershire sauce carefully (see recipe note). Recipe yields about 3/4 cup, enough for 6 side salads.

1/2 cup mayonnaise
1 medium garlic clove, minced
2 teaspoons lemon juice, to taste
1 teaspoon Dijon mustard
1/2 teaspoon Worcestershire sauce*, to taste
1/8 teaspoon fine salt
1/3 cup (1 ounce) finely grated Parmesan cheese
1 tablespoon water
Freshly ground black pepper, to taste

Steps:

  • In a liquid measuring cup or bowl, combine the mayonnaise, garlic, lemon juice, Dijon, and Worcestershire sauce, and salt. Stir to combine.
  • Stir in the Parmesan, followed by the water. Season generously with black pepper, to taste. I usually think the dressing tastes just right, but if you'd prefer a more bold dressing, add another 1/4 teaspoon Worcestershire sauce, or for more zippy dressing, add up to 1 teaspoon additional lemon juice. Serve as desired.

My family loves this rich and creamy Caesar salad dressing. It's not overly garlicky or fishy -- it's just right.

2 small garlic cloves, minced
1 teaspoon anchovy paste (see note)
2 tablespoons freshly squeezed lemon juice, from one lemon
1 teaspoon Dijon mustard (I like the brand Maille)
1 teaspoon Worcestershire sauce
1 cup mayonnaise, best quality such as Hellmann's Real
½ cup freshly grated Parmigiano-Reggiano
¼ teaspoon salt
¼ teaspoon freshly ground black pepper

Steps:

  • In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce. Add the mayonnaise, Parmigiano-Reggiano, salt and pepper and whisk until well combined. Taste and adjust to your liking. The dressing will keep well in the fridge for about a week.
  • Note: Anchovy paste can be found near the canned tuna in the supermarket.

1/2 cup plain low-fat Greek yogurt
3 tablespoons olive oil
2 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
2 anchovy fillets
1 clove garlic, chopped
1/2 cup grated Parmesan, plus more for topping
Kosher salt and freshly ground black pepper
3 tablespoons olive oil
2 cloves garlic, smashed
2 romaine lettuce hearts, halved lengthwise
1 1/2 cups cubed, stale crusty bread, such as baguette (about 4 inches of baguette)
Kosher salt and freshly ground black pepper

Steps:

  • For the dressing: Combine the yogurt, oil, lemon juice, mustard, anchovy and garlic in a blender with 3 tablespoons of water and blend until smooth. Add the Parmesan and pulse to combine, then season with salt and pepper.
  • For the salad: Heat the olive oil in a large skillet over medium heat. Add the garlic and cook, stirring, until aromatic and golden, about 3 minutes. Remove the garlic. Brush the cut side of the lettuce with some of the garlicky oil.
  • Add the bread cubes to the skillet with the remaining oil and cook, stirring often, until golden brown on all sides, about 5 minutes. Transfer to a bowl and season lightly with salt and pepper.
  • Heat a large, double-burner grill pan over medium-high heat. Season the lettuce with salt and pepper. Grill the cut side of the lettuce until marked and just starting to wilt, about 3 minutes.
  • Serve the lettuce and croutons drizzled with dressing and topped with Parmesan. Unused dressing keeps refrigerated in an airtight container up to 1 week.

1 egg white
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon sugar
3/4 cup vegetable oil, divided
1/4 cup red wine vinegar
1 lemon, juice of
2 tablespoons Worcestershire sauce
2 garlic cloves, peeled
1/4-1/2 cup parmesan cheese, grated
2 tablespoons Dijon mustard

Steps:

  • In a blender beat egg white, salt, pepper and sugar till frothy (about 20-30 seconds).
  • While the blender is still on open the hole in the blender lid, slowly drizzle in 1/2 of the vegetable oil (mixture will become much thicker). With blender still on slowly add the rest of the ingredients (except reserved oil). Blend until smooth. Now once again, slowly drizzle in reserved vegetable oil while blender is on. Once again, the dressing will become thicker. Pour dressing into a glass jar with at tight fitting lid.
  • Refrigerate for up to 1 week.

4 tablespoons shredded Parmesan, plus 1/4 cup
3/4 cup Caesar dressing
4 cloves roasted garlic
1/4 cup mayonnaise
1 (10-ounce) bag chopped romaine hearts
1 cup seasoned croutons

Steps:

  • Preheat broiler. To make Parmesan crisp: place 3-inch ring mold on baking sheet. Sprinkle 1 tablespoon of shredded parmesan into mold. Repeat 3 more times so there are 4 separate parmesan disks. Lay out crisps on a foil covered pan. Place under broiler for 3 to 4 minutes watching carefully until Parmesan turns golden brown. Remove from broiler and let cool.
  • In a blender combine Caesar dressing, roasted garlic cloves and mayonnaise. Blend on medium speed until creamy.
  • In a large bowl, add romaine, 1/4 cup Parmesan and croutons. Toss with salad dressing.
  • Carefully peel Parmesan crisps from foil.
  • Serve on chilled plates with Parmesan crisps upright in salad.

6 cloves garlic, peeled, divided
¾ cup mayonnaise
5 anchovies anchovy fillets, minced
6 tablespoons grated Parmesan cheese, divided
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
1 tablespoon lemon juice, or more to taste
salt to taste
ground black pepper to taste
¼ cup olive oil
4 cups day-old bread, cubed
1 head romaine lettuce, torn into bite-size pieces

Steps:

  • Mince 3 cloves of garlic, and combine in a small bowl with mayonnaise, anchovies, 2 tablespoons of the Parmesan cheese, Worcestershire sauce, mustard, and lemon juice. Season to taste with salt and black pepper. Refrigerate until ready to use.
  • Heat oil in a large skillet over medium heat. Cut the remaining 3 cloves of garlic into quarters, and add to hot oil. Cook and stir until brown, and then remove garlic from pan. Add bread cubes to the hot oil. Cook, turning frequently, until lightly browned. Remove bread cubes from oil, and season with salt and pepper.
  • Place lettuce in a large bowl. Toss with dressing, remaining Parmesan cheese, and seasoned bread cubes.

2 large heads garlic
1/4 cup dry vermouth
3 1/2 tablespoons plus 1/3 cup olive oil
2 1/4 teaspoons minced fresh rosemary
3 cups 1-inch French bread cubes
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 teaspoon anchovy paste
1 teaspoon Worcestershire sauce
Dash of hot pepper sauce (such as Tabasco)
1 head curly endive, trimmed
1 large head romaine lettuce, torn into pieces
1 1/4 cups grated Asiago or Parmesan cheese (about 5 ounces)

Steps:

  • Preheat oven to 300°F. Peel off papery outer skin from whole garlic, keeping heads in tact. Place in small casserole dish. Pour vermouth over. Drizzle 1 tablespoon oil over garlic. Season with pepper. Cover; bake until garlic is very soft and pastelike, about 1 1/2 hours. Cool garlic.
  • Increase oven temperature to 350°F. Mix 2 1/2 tablespoon oil and rosemary on baking sheet. Season with pepper. Add bread cubes and turn cubes in oil mixture to coat. Bake until lightly toasted, about 15 minutes. Cool.
  • Squeeze garlic to remove cloves from skins. Place in small bowl and mash with fork to form paste. Transfer paste to blender. Add fresh lemon juice, Dijon mustard, anchovy paste, Worcestershire sauce and hot pepper sauce and puree. With machine running, gradually add 1/3 cup olive oil. (Croutons and dressing can be made 2 hours ahead. Let stand at room temperature.)
  • Reserve outer endive leaves for another use. Tear enough inner yellow leaves into bite-size pieces to measure 3 cups. Place in large bowl. Add romaine. Pour dressing over. Toss well. Sprinkle cheese and croutons over salad. Toss gently. Season with pepper and serve.
