24 uncooked large shrimp, unpeeled, deveined (thawed if frozen)
12 chicken tenders
1/3 cup fresh lemon juice
2 tablespoons finely grated lemon peel
2 garlic cloves, minced
2/3 cup olive oil
Baby lettuces

Steps:

  • Thread 4 shrimp on each of 6 metal skewers; place on rimmed baking sheet. Loosely thread 2 chicken tenders on each of 6 metal skewers; place on another rimmed baking sheet. Whisk lemon juice, lemon peel, and garlic in medium bowl; slowly whisk in oil. Season marinade with salt and pepper. Pour marinade over skewers, dividing equally.
  • Prepare barbecue (medium-high heat). Arrange lettuces on large platter. Grill chicken until cooked through, about 5 minutes per side. Grill shrimp until pink on outside and opaque in center, about 4 minutes per side. Remove kebabs from grill; place atop lettuce. Serve with Tomato-Avocado Salsa and Chipotle Aioli .

My husband and I will grill these up on the back patio with a glass of wine and have a date night at home...sometimes those are the best nights of all! Enjoy! **The prep time includes marinating time!

1/3 cup fresh lemon juice
1/3 cup dry white wine (or reduced sodium chicken broth)
4 garlic cloves, minced
2 bay leaves
1 teaspoon lemon peel, grated
1 teaspoon black pepper
1 1/2 lbs sea scallops
4 cups mushroom caps
3 medium red bell peppers, cut into 1 inch squares
3 medium green bell peppers, cut into 1 inch squares
2 large red onions, cut into 1 inch squares

Steps:

  • In a shallow glass dish, combine lemon juice, wine, garlic, bay leaf, lemon peel, and pepper. Mix well. Reserve 3 tablespoons. Add scallops to dish, toss to coat. Cover dish with plastic wrap and refrigerate 1 hour.
  • Remove scallops from marinade. Discard marinade. Use six 12-inch metal skewers. Alternately thread scallops, mushrooms, bell peppers, and onion.
  • Place kebabs on grill (over medium heat).
  • Grill 6 inch from heat, turning occasionally and basting with the 3 tablespoons reserved lemon mixture, until scallops are cooked through and vegetables are lightly browned, about 7 to 8 minutes. Serve!

1 lemon, juiced and zested
1 tablespoon brown sugar
1 clove clove garlic, minced or pressed
4 boneless chicken breasts, cubed
4 skewers, or as needed

Steps:

  • Combine butter, lemon juice, lemon zest, brown sugar, and garlic in a bowl. Add chicken and marinate for at least 1 hour.
  • Preheat grill for high heat.
  • Remove chicken from the marinade and shake off excess. Thread onto skewers.

These vegan ground meat kebabs are inspired by Turkish street food. The kebabs themselves can be served on their own with the garlic-dill mayonnaise, or made into wraps, or tucked into Turkish bread or pita for sandwiches, with garlic-dill mayonnaise, sumac onions and tomatoes.

1 medium red onion, halved lengthwise, then thinly sliced
1 cup loosely packed fresh parsley leaves
1 tablespoon ground sumac
20 garlic cloves, peeled and ends trimmed
1 cup vegan mayonnaise
1 tablespoon fresh lemon juice
3 tablespoons extra-virgin olive oil
Large handful of minced fresh dill leaves
Kosher salt and freshly ground black pepper
1 pound vegan ground meat, such as Impossible or Beyond
1 tablespoon minced fresh oregano leaves
3 medium garlic cloves, minced
1 1/2 teaspoons Urfa pepper, or 1 teaspoon ground ancho chile
1 1/2 teaspoons ground sumac
1 teaspoon kosher salt
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon freshly ground black pepper
1 teaspoon neutral oil, such as grapeseed or canola
1 cup cherry tomatoes, halved
1 cup arugula
Hot sauce, to taste
Vegan Turkish bread or pita

Steps:

  • Make the sumac onions: Combine all ingredients and toss until the onion pieces are separated and well coated. (You should have about 1 1/2 cups. Sumac onions should be used the day they are made.)
  • Make the garlic-dill mayonnaise: Put 18 garlic cloves in a medium pot, and cover with a couple inches of water. Bring to a boil over high heat. Continue cooking for 30 seconds. Drain garlic and allow to cool to room temperature.
  • Meanwhile, mince the remaining 2 garlic cloves. In a food processor, combine blanched and raw garlic, mayonnaise and lemon juice; process until completely smooth. With the machine running, slowly drizzle in the olive oil. Transfer mixture to a bowl, stir in minced dill, and season to taste with salt and pepper. (You should have about 1 1/2 cups.)
  • Make the kebabs: Combine all ingredients in a large bowl, and fold with very clean hands until fully incorporated. Divide mixture in half, then divide each half into 6 equal balls. Working on a clean cutting board, roll them into cylinders about 3/4 inch in diameter. Cut each cylinder in half to form 24 small logs.
  • Cook and serve: In a large skillet over medium-high, heat oil until shimmering. Add the logs, working in batches if necessary to prevent crowding. Cook on one side until well browned, about 2 minutes. Flip and cook on second side until well browned and cooked through, another 1 1/2 minutes. (Alternatively, cook on a hot grill until lightly charred and cooked through.) Transfer to a serving plate.
  • Serve with sumac onions, garlic-dill mayonnaise, cherry tomatoes, arugula, hot sauce and Turkish bread or pita.

When I was a kid our butcher sometimes had a thing called "City Chicken", which was pork cubes threaded on bamboo skewers to be breaded and fried like fried chicken. I haven't seen that in years. But butcher-pack, boneless, pork loin is always cheap at Sam's Club so here's how I adapted a modern, lighter, healthier favorite for chicken to use on "the other white meat."

2 lbs boneless pork loin, cut in 1 . 5-inch cubes
olive oil
1/3 cup lemon juice
1 tablespoon minced garlic
1/2 teaspoon dried rosemary, crumbled

Steps:

  • Mix marinade ingredients in a plastic, zipper bag.
  • Add pork cubes and marinate at least 1 hour but not more than 6.
  • Thread meat on skewers. Brush with olive oil.
  • Grill or broil on medium-low heat 7-10 minutes on each side or until nicely browned and just barely done. Don't over-cook or they will be dry and tough.

For the garlic yogurt:
1 garlic clove, grated
1/2 teaspoon finely grated lemon zest
1 tablespoon fresh lemon juice
1 cup plain Greek yogurt
Kosher salt, freshly ground pepper
For the lamb and assembly:
2 tablespoons cumin seeds
1 tablespoon Sichuan peppercorns or 1 teaspoon black peppercorns
2 teaspoons caraway seeds
2 teaspoons crushed red pepper flakes
1 teaspoon sugar
Vegetable oil (for grill)
1 1/4 pounds boneless lamb shoulder, cut into 1-inch pieces
Kosher salt, freshly cracked pepper
Finely grated lemon zest (for serving)
Special Equipment
A spice mill or a mortar and pestle; 8 (8-12-inch-long) metal skewers

Steps:

  • Make the garlic yogurt:
  • Stir garlic, lemon zest, and lemon juice into yogurt in a small bowl to combine; season with salt and pepper.
  • Make the lamb kebabs:
  • Coarsely grind cumin seeds, peppercorns, caraway seeds, red pepper flakes, and sugar in spice mill or with mortar and pestle until only a few whole spices remain.
  • Prepare a grill for medium-high, indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off). Oil grates. Thread lamb onto 6-8 skewers, leaving a small gap between each piece of meat. Season with salt, then sprinkle generously with spice blend, pressing it onto the meat with your hands to help it adhere if needed.
  • Grill lamb over direct heat, turning every minute or so, until browned and beginning to char in spots, about 4 minutes. Move to cooler side of grill and continue to grill until lamb is cooked to desired doneness, about 4 minutes longer for medium-rare.
  • Top garlic yogurt with cracked black pepper and a little lemon zest. Serve alongside lamb.
  • Do Ahead
  • Yogurt can be made 3 days ahead. Cover and chill. Spice blend can be made 1 month ahead. Store airtight at room temperature.

  • Thread skewers w/first 6 ingredients. Marinade 3-4 hours or overnight. Grill 3-4 minutes per side depending on heat of grill. Serve w/dipping sauce on the side.

LEMON-GARLIC LAMB KEBABS

1 1/2 pounds leg of lamb, well-trimmed and cut into 20 equal cubes (about 1 inch each)
8 thin lemon wedges
1/4 cup olive oil, plus more for grill

Feta Dipping Sauce
