ROASTED SALMON WITH LEMON-GARLIC HERB BUTTER
As I watched Food Network's Ina Garten make Salmon Nicoise, I was inspired to use the technique of smoothing a thick marinade over salmon filets before roasting. Her marinade is olive oil-based, whereas mine is butter-based and resembles herb butter. My husband was returning from a business trip, so I wanted to surprise him with an elegant dinner. I served this dish alongside lemon-roasted asparagus and roasted garlic smashed potatoes. Needless to say, he was very pleased. Hope you enjoy as well!

Steps:
- Preheat oven to 375°F.
- In a small mixing bowl, combine butter, thyme, rosemary, garlic, pepper, lemon zest and lemon juice.
- Arrange salmon filets skin-side-down in a baking pan.
- Gently spread butter mixture evenly over filets. If desired, garnish by arranging lemon slices (two per filet) atop filets and top each filet with sprig of rosemary. Marinate at room temperature for 15 minutes.
- Roast for 12-15 minutes or until fish flakes easily when fork-tested.
BROILED GARLIC-HERB SALMON
Ok, I hate to give up this recipe because everyone loves it so much, and I do own and use it for my business and my clients love it. It is a broiled salmon, easy enough for a beginner and delicious if done right. This salmon goes great with red potatoes and some steamed veggies.

- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking pan with aluminum foil.
- Pour oil into a medium bowl. Rinse salmon fillets and pat dry. Dip fillets into oil, being sure to coat both sides, and place skin-side down into the prepared baking pan. Squeeze as much juice as you can from 1 lemon half over the fillets. Coat both sides of salmon with parsley, oregano, basil, and garlic, and sprinkle with 1/2 of the kosher salt.
- Place under the preheated broiler and cook until center is light pink and edges are golden brown, 10 to 15 minutes.
- Remove fillets from the oven and immediately plate. Squeeze remaining lemon half over top and sprinkle with remaining kosher salt. Serve with lemon slices.

GRILLED SALMON FILETS WITH GARLIC AND HERB AIOLI

- For the Salmon Heat grill to medium. Combine the butter, 1/4 cup parsley and salt and pepper well. Shape into a log, wrap in platic and refrigerate while preparing the other ingredients. Make the aioli by combining all the ingredients except salt and pepper in a blender or food processor until mixture is smooth. Check and season with salt and pepper to taste. Prepare the salmon. with a carving knife, make a two-inch pocket slit in the center of the flesh of each salmon filet, carefully cutting at a slight downward angle and not completely slicing through. Stuff each pocket with 1 tbs of the herbed butter and press pocket to close. Drizzle each salmon filet with olive oil and season with salt and pepper. (Save remaining butter to use on pasta and and other roasted vegetables - will keep for about a week.) Place the salmon on a hot, oiled grill and grill skin-side down for about 10 minutes. Gently turn over and continue grilling for an additional 10 minutes or until salmon is still slightly medium doneness. Place each grilled salmon in the center of a plate and drizzle aioli on top and around sides. Garnish with a sprig of parsley and a basil leaf and serve.
SALMON IN GARLIC HERB BUTTER
This recipe is so easy!! I have made the garlic herb butter for years. I experimented with the butter and skinless salmon filets. My friend loved the leftovers and asked for the recipe so I thought I would share it.

- For butter, mix all ingredients in a food processor or by hand with a rubber spatula and store covered in the refrigerator until ready to use.
- Salt and pepper both sides of salmon.
- Melt butter in non-stick pan. Saute onion and garlic until soft, approximately 3-4 minutes.
- Add salmon steaks to the pan, pushing onions and garlic to the side and around the salmon. Cook salmon approximately 4-5 minutes and then flip.
- Add the lemon juice, squeezing over the salmon as it cooks.
- Cook salmon an additional 4-5 minutes or until it flakes easily. Remove salmon from the pan and keep warm.
- Add another 2-3 Tablespoons of butter to the pan. Allow to melt before adding cream or milk.
- Bring butter/onion/milk mixture to a simmer. Simmer 1 - 2 minutes until slightly thickened. Pour over salmon steaks and serve. Garnish with parsley if desired.

- Heat oven to 400. Lightly coat your baking dish with non-stick spray (I always use olive oil in a Misto- love those things).
- In a food processor, mince the garlic clove then add the parsley and pulse until combined, about 15 seconds. Add the bread, cheese, oil, salt and a few grinds of black pepper. Pulse until well combined.
- Arrange the fish or meat in the baking dish. Spread with mustard then pat the crumbs on top of each one.
- Bake until browned and cooked through-
- 20 min or so for salmon.
- 15 min or so for flounder.
- 25 min or so for chicken.
- 30 min or so for pork.
- Cooking times will depend on the thickness of your fillets.

A wonderful, easy, delicious way to prepare salmon! I made this for Fathers day dinner and it was a hit!! I had some leftover herb butter so I mixed it with parmasean cheese and spread it over crusty bread, baked it, and it made a great garlic bread!!

GARLIC HERB SALMON PATTIES
These are very flavorful, and are equally good with a comparable amount of cooked shrimp or canned king crab instead of the salmon. Back in the dark ages when I was in high school, my Home Economics teacher said that the salmon bones were a good source of calcium so I use them too. These patties are healthy also; no added salt and made with a healthy oil. Add mashed potatoes and English peas for a great comfort meal.

- Drain the liquid from the salmon.
- Remove the skin, but keep the bones.
- Cut the onions into small chunks and place into a food processor with the minced garlic.
- Process on pulse until the onions are minced.
- (If doing by hand, grate the onions and mix with the garlic in a large mixing bowl.) Add the salmon, eggs, evaporated milk and lemon juice to the onion-garlic mixture in the food processor.
- Process until smooth.
- (If doing by hand, mash the salmon with a potato masher to as fine a texture as possible, and add along with the same ingred- ients as above to the onion-garlic mixture in the bowl, and mix well) Scrape the food processor contents into a large mixing bowl.
- Add the seasoned bread crumbs 1/3 cup at a time, mixing well after each addition.
- You may need more or less than 1 cup of the bread crumbs de- pending on how juicy your salmon, onions or lemons are.
- You want to add enough bread crumbs so that the mixture holds together well enough to form the patties.
- Form the mixture into patties 1/2 inch thick.
- Heat the canola oil in a large skillet over medium heat.
- Fry the patties on medium heat about 5-6 minutes per side until golden brown.
- You will have two batches of patties so you may have to add a little more oil to fry the second batch.

- Empanadas:.
- Preheat oven to 425°F.
- Line large cooking or baking sheet with parchment paper or cooking spray.
- Remove pie cruts from pouches; place flat on work surface.
- Cut each into 4 wedge-shaped pieces.

- Place all ingredients except for salmon in a small bowl and melt in the microwave for 30-45 seconds.
- Stir until combined.
- Place the salmon fillets on a parchment lined baking sheet.
