ROASTED GARLIC CLOVE CHICKEN

8 chicken thighs
Kosher salt and freshly ground black pepper
1 head garlic, separated into whole cloves, papery skin removed (about 20 cloves)
3 tablespoons olive oil
1 tablespoon butter
2 teaspoons herbes de Provence
1 teaspoon flour
1/4 cup chicken stock
1/2 lemon, juiced
Bread, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Rinse and pat dry the chicken. Salt and pepper liberally and allow to temper on a cutting board while you prepare the garlic. In a large ovenproof saute pan over medium heat, cook the whole garlic cloves in olive oil and butter, stirring occasionally, until lightly golden, about 10 minutes. Remove the garlic from the pan and set aside. Increase the heat to medium high and brown the chicken skin-side down until the skin is golden and crispy, about 5 minutes. Turn the chicken over, sprinkle on herbes de Provence. Add the garlic back to the pan and place hot pan in oven. Bake the chicken until cooked through, about 25 minutes. Once the chicken is done, remove chicken thighs and garlic to a platter. Place the pan over medium-high heat and sprinkle the drippings with flour and stir to incorporate. Deglaze the pan with the stock and lemon juice. Pour the sauce over the chicken on the platter and serve with bread for sauce-mopping and garlic-spreading.

mixed herb, to season
3 shallots, chopped
40 cloves garlic, unpeeled
½ cup dry vermouth, or white wine
3 sprigs fresh parsley
1 teaspoon dried tarragon
¾ cup chicken stock

Steps:

  • Pre-heat the oven to 180°C (350°F)
  • Season the chicken with the salt, pepper and mixed herbs. Set aside.
  • Heat some oil in a large pan and sear the chicken for about 10-15 minutes evenly on each side, until golden brown.
  • Take the chicken out and set aside.
  • Add the shallots and cook down in the remaining juices for about 5 minutes over a low-medium heat.
  • Add the garlic cloves and gently cook them for about 2 minutes.
  • Pour in the vermouth or white wine and gently cook so that it reduces slightly.
  • Add the chicken, parsley sprigs and tarragon, followed by the chicken stock.
  • Bake in the oven for 20-25 minutes or until the chicken is cooked through.
  • Serve with crusty bread and vegetables of your choice.

6 bone-in, skin-on chicken thighs
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter
1 tablespoon canola oil
3/4 cup dry white wine
1/4 cup pitted kalamata olives, halved
2 sprigs fresh thyme
1 head garlic (preferably heirloom; see Cook's Note), separated into cloves and peeled (about 10 cloves)
1 medium shallot, sliced into rings

Steps:

  • Preheat the oven to 375 degrees F.
  • Season the chicken with 1 1/2 teaspoons salt and a few grinds of pepper. Heat the butter and oil in a large, deep cast-iron skillet over medium-high heat until hot. Add the chicken skin-side down and cook, undisturbed, until deep golden brown, about 5 minutes. Turn the chicken over and turn off the heat. Add the wine, then nestle the olives, thyme, garlic and shallot around the chicken. Return the liquid to a simmer over medium-high heat, then transfer to the oven and roast until the chicken is golden and cooked through, about 1 hour and 15 minutes.
  • Transfer the chicken, garlic and olives to a serving dish with a slotted spoon. Use a ladle to remove as much fat as possible from the surface of the liquid in the skillet, then pour the liquid over the chicken.

1 small onion, quartered
40 garlic cloves, peeled
1/4 cup canola oil
1-1/2 teaspoons salt

1 whole roasting chicken, cut into pieces
3 whole heads of garlic
1 tablespoon butter
2 tablespoons olive oil
1 1/2 cups dry white wine
3 tablespoons cognac
2 tablespoons heavy cream
2 tablespoons flour
1 tablespoon fresh thyme leave
1 tablespoon salt
1 tablespoon pepper

Steps:

  • Boil garlic cloves for 60 seconds. Drain & peel.
  • Season chicken liberally with salt and pepper.
  • Heat butter and olive oil in large pan over med-high heat.
  • Saute chicken skin side down first until brown, about 4 minute Turn over with tongs (do not pierce skin) and brown on other side, another 4-5 minute.
  • When chicken is brown, transfer to plate.
  • Add garlic cloves to pan and saute 5-10 minute until evenly browned.
  • Add wine and 2 tbs. cognac, bring to a simmer and scrape bottom of pan.
  • Return chicken to pan and spirinkle with thyme.
  • Cover and simmer about 30 minute or until chicken is cooked through.
  • Remove chicken to platter and keep warm.
  • In a small bowl, whisk together flour and 1/2 cup sauce from pan then whisk it back into pan.
  • Add cream and last tbs. of cognac. Cook 3 minute and add Salt and pepper to taste.
  • Pour sauce and garlic over chicken and serve hot.

1/4 cup (1/2 stick) unsalted butter, softened
2 tablespoons coarse salt

1 garlic bulb, halved horizontally
60 garlic cloves (do not peel)

Steps:

  • Preheat oven to 425 degrees. Let chicken stand at room temperature 30 minutes. Remove giblets and excess fat from cavity. Rinse chicken; pat dry. Brush outside with butter, and season with salt and pepper. Place garlic bulb in cavity. Transfer chicken to a roasting pan. Tuck wing tips under; tie legs with kitchen twine.
  • Roast chicken, basting occasionally with pan juices, 20 minutes. Remove from oven, and arrange garlic cloves around chicken. Continue roasting until skin is deep golden brown and an instant-read thermometer inserted into thickest part of the thigh (avoiding bone) registers 165 degrees, about 1 hour.
  • Transfer chicken and garlic cloves to a platter. Let tand 15 minutes, then remove garlic bulb from cavity, and discard. Carve chicken, and serve.

40 CLOVE CHICKEN WITH GARLIC BREAD

It sounds as if this would be too, too garlicky, but it's not! The garlic gets infused into the chicken and makes it juicy, tender and flavorful. You can use the roasted garlic for other recipes during the following week!

1 Lg - roasting chicken
40 - garlic cloves
- olive oil cooking spray
1 - loaf of french bread - cut in half lengthwise

Steps:

  • Remove any giblets from chicken (if they came with chicken). Wash chicken inside and out and pat dry. Place chicken on a rack in roasting pan.
  • Separate cloves of garlic from bulb - leaving paper covers on cloves. Stuff cavity of chicken with all 40 cloves - all the way to the neck - and truss chicken legs together so garlic will not come out.
  • Spray chicken all over with a good coating of cooking spray. Sprinkle chicken with Kosher salt and freshly ground pepper.
  • Place chicken in 375 degree oven and roast for 1 hour and 45 minutes. While chicken is cooking, cut French bread in half lengthwise and toast.
  • Once chicken is done, remove all garlic cloves before carving. Open several cloves from their wrapping and rub along the two halves of toasted French bread. Top bread with salt and pepper.

FOR THE CHICKEN:
4 lb chicken breast, bone in
5 bulbs of garlic, each clove peeled and kept whole
4 clove garlic, minced
1 large onion cut into rings
sea salt to taste
2 tsp rosemary, dried
1 Tbsp butter
olive oil
1/2 c sherry
FOR THE PASTA:
1 box linguine, cooked
2 tsp red pepper flakes
1/4 c fresh basil, chopped
6-8 cloves of garlic from the chicken
juice from the chicken pan
1-2 Tbsp sea salt
1/4 c olive oil
1 Tbsp butter

Steps:

  • 1. Preheat oven to 400. Sprinkle sea salt on the chicken. Place the whole garlic and onion rings into the bottom of a baking dish and sprinkle with half of the rosemary and salt. In a pan heat up the oil and the butter on med high. Place chicken skin side down in the pan until golden brown and crispy turning once. Place the chicken on top of the garlic and onion.
  • 2. While the pan is still hot toss in the other half of the butter, the minced garlic and the rest of the rosemary and saute until toasted. Deglaze the pan with your sherry scraping up all of the browned bits. Pour the liquid on top of the chicken.
  • 3. Bake for 25-30 minutes depending on the size of the chicken. Allow the meat to sit for at least 15 minutes ( this is time to start the pasta).
  • 4. Coat a skillet with olive oil and butter heat on med. Add the cooked garlic and saute for a minute. Add the basil. Pour in the juice from the chicken pan. Add the pasta, salt, and red pepper flakes. Toss well until heated and juice absorbs into the pasta. Serve with basil leaves as garnish.

40 garlic cloves, peeled
1 1/4 cups fat-free, less-sodium chicken broth
1 cup dry white wine
24 (1/4-inch-thick) slices diagonally cut French bread baguette
Chopped fresh flat-leaf parsley (optional)

Steps:

  • Remove and discard giblets and neck from chickens. Rinse chickens with cold water; pat dry. Trim excess fat; remove skin. Cut each chicken into 8 pieces. Combine butter and oil in a 12-inch nonstick skillet over medium-high heat. Sprinkle salt and pepper evenly over chicken. Add half of chicken pieces to pan; cook 2 minutes on each side or until golden. Remove chicken from pan; keep warm. Repeat procedure with remaining chicken. Reduce heat to medium. Add garlic; cook 1 minute or until garlic begins to brown, stirring frequently. Arrange chicken on top of garlic. Add broth and wine; cover and cook 25 minutes or until chicken is done. Remove chicken from pan; keep warm. Increase heat to medium-high; cook 10 minutes or until liquid is reduced to about 1 cup. Serve sauce and garlic with chicken and bread. Garnish with chopped parsley, if desired. 1 box (9 ounces) Nabisco Famous Chocolate Wafers
1 stick (1/2 cup) unsalted butter, melted
1 cup sweetened flaked coconut, toasted, divided
1/2 cup sugar
1/4 cup cornstarch
13 1/2 ounces canned coconut milk
1 cup milk
1/2 teaspoon salt
3 egg yolks
1/2 teaspoon coconut extract
1 1.75-ounce Mounds candy bar, chopped

Steps:

  • Preheat the oven to 325°.
  • Season the chicken with the salt and pepper.
  • In a heavy pot that has a lid, heat the oil over medium high heat. Add the chicken and cook until brownedon both sides. Remove the chicken from pan and reserve. Add the onions, garlic and rosemary, and cook for 5 minutes.
  • Place the chicken on top of the mixture and add the wine. Cover with the lid and place the covered pot in the oven to cook for 1½ hours.

2 whole chicken
50 whole garlic cloves, unpeeled
1 pound carrot
2 stalks celery
2 tablespoons cooking sherry
1/2 teaspoon nutmeg

Steps:

  • Cut up, skin, and trim fat from chicken. Separate garlic cloves. Cut carrots lengthwise and then into 3-inch pieces. In a 3-quart casserole, lay celery stalks followed by alternating layers of chicken, garlic, and carrots. Drizzle on sherry. Sprinkle with nutmeg. Cover tightly with heavy foil. Bake at 375° for 90 minutes. Spoon garlic cloves into a side dish, and spread on warm sourdough French bread. Serve with a tossed salad to 8 people.

- salt & pepper, to taste
2 tablespoon(s) olive oil, extra virgin
1/4 cup(s) dry white wine
2 teaspoon(s) parsley flakes, dried
2 tablespoon(s) dry vermouth
2 teaspoon(s) basil, dried
1 teaspoon(s) oregano, dried
1 pinch(es) red pepper flakes
40 clove(s) garlic, peeled (yes! you read correctly)
4 stalks - celery, sliced
- juice & peel of 1 lemon

Steps:

  • Sprinkle chicken with salt & pepper.
  • Heat oil in large skillet over medium heat. Add chicken; brown on all sides. Remove to platter.
  • Combine wine, parsley, vermouth, basil, oregano & red pepper flakes in a large bowl. Add garlic & celery; coat well.
  • Transfer garlic & celery to crock pot. Add chicken to remaining herb mixture; coat well. Place chicken on top of celery mixture. Stir.
  • Sprinkle lemon juice & peel over chicken. Cover; cook on LOW 6 hours.
