2 lb brussels sprouts, halved
8 strips bacon, chopped
2 teaspoons salt
½ teaspoon pepper
⅓ cup apple cider vinegar
1 tablespoon brown sugar
5 cloves garlic, minced
fresh chive, chopped, to serve

Steps:

  • Preheat oven to 400°F (200°C)
  • Cook bacon in a cast iron pan over medium heat. Once bacon fat coats the pan, add the Brussels sprouts, salt, pepper, apple cider vinegar, brown sugar, garlic. Stir until fully coated.
  • Cook until the bottom of the Brussel sprouts begin to brown on the bottom.
  • Transfer the cast iron pan to the oven and roast for 20 minutes, or until tender, flipping the brussel sprouts over every 5 minutes or so.
  • Sprinkle Parmesan cheese evenly over the Brussels sprouts, then place the pan back in the oven and bake for other 3 to 5 minutes.
  • Sprinkle with additional bacon and chives then serve.

4 slices thick-cut bacon, cut in half

Steps:

  • Heat oven to 450°F. Line bottom of 15x10x1-inch baking pan with aluminum foil; spray with no-stick cooking spray.
  • Combine brown sugar and cinnamon in bowl. Coat bacon slices with brown sugar mixture. Place coated bacon onto prepared pan; sprinkle with any remaining sugar mixture. 1/4 c. maple syrup
2 tbsp. brown sugar

Steps:

  • Preheat oven to 400° and line a large baking sheet with foil. Trim the ends of Brussels sprouts and remove any tough outer leaves.
  • In a small bowl, whisk together maple syrup, brown sugar and cayenne. Cut bacon in half crosswise, then brush bacon with syrup mixture.

4 cups whole Brussels sprouts
8 slices molasses-cured shoulder bacon or regular bacon

  • Fill a large saucepan with water, add a pinch of salt, and bring to a boil. Add the Brussels sprouts and cook them for about 8 minutes. Remove the sprouts from the heat, drain, and then chill them in the refrigerator. Slice the sprouts in half when they have cooled.
