When my husband and I were first married, we had no money and I invented most of what we ate. This came out of me trying to scrape something together for the In-Laws when they came for a surprise visit. Feel free to experiment to suit your tastes

1 loaf garlic bread
8 ounces cream cheese with tomato and basil
1 lb ground beef
4 ounces shredded cheese
1 (15 ounce) can Italian stewed tomatoes
butter
salt
pepper

Steps:

  • Slice garlic bread into eight round slices.
  • Brown meat, add tomatos. Heat until bubbly.
  • Spread generous amounts of cream cheese on four slices of bread.
  • Line bottom of 8 inch square baking pan with bread covered in cream cheese.
  • Pour half of meat mix over the top and cover with half of the cheese.
  • Pour over rest of meat mix.
  • Butter the remaining bread and lay on top of meat.
  • Cover with cheese.
  • Bake 30-45 minutes until bubbly and cheese is melted.
  • Salt and pepper to taste.

We went very classic with this garlic bread recipe-lots of butter and lots of garlic loaded onto warm, soft and pillowy French bread. You could make a light meal by rounding it out with a crisp green salad. Or serve it our favorite way-alongside your favorite red-sauce pasta.

1 1/2 sticks (12 tablespoons) unsalted butter
4 cloves garlic, finely chopped
1 large soft Italian or French loaf
1/4 cup grated Parmesan
Kosher salt
2 tablespoons flat-leaf parsley leaves, finely chopped

Steps:

  • Arrange a rack in the center of oven and preheat to 450 degrees F.
  • Melt the butter in a small skillet over medium heat. Add the garlic and cook, stirring occasionally, until the butter is golden and the garlic is very fragrant, about 3 minutes.
  • Slice the bread in half lengthwise. Liberally brush the crust with the garlic butter. Turn the bread cut-side up. Slice each loaf crosswise at 2-inch intervals without cutting all the way through, making "pull-apart" garlic bread. Liberally brush the cut sides of the bread with more garlic butter, spreading any remaining garlic evenly over top. You should use all the garlic butter. Carefully transfer the bread to a rimmed baking sheet.
  • Sprinkle the loaves with the Parmesan and a pinch of salt and bake until the edges of the bread are a deep golden brown, 10 to 15 minutes. Top with the parsley. Serve warm.

2 cups all-purpose flour
12 tablespoons unsalted butter, chilled and cubed, plus extra for the pan
salt
5 garlic cloves, peeled
1 1/2 cups freshly grated pecorino romano cheese (a sharp goat cheese, you can sub. with parmigiano, but it's not the same)
1/2 lb pancetta, cut into 1/4 inch cubes
3 eggs
1/4 cup raisins, soaked in cool water for 30 minutes and drained
10 saffron threads
1 teaspoon salt
1 teaspoon freshly grated nutmeg
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon fresh ground black pepper
1 egg, beaten to blend

Steps:

  • Make the dough: In a bowl, mix the flour and the butter with your fingers until they resemble a coarse meal.
  • Add the salt and enough ice water to make an elastic dough.
  • Shape into a ball, wrap, and refrigerate for 30 minutes to 24 hours.
  • Preheat the oven to 400°F.
  • Bring 1 quart of water to a boil.
  • Drop in the garlic and cook for 15 minutes.
  • Drain and rinse in cool water.
  • Crush the cooked garlic cloves; place in a bowl and fold in the pecorino, the pancetta, raisins, saffron, salt, nutmeg, cinnamon, ginger, and pepper.
  • Cut the dough in 2 equal pieces and roll each out into 1/2-inch thick disks.
  • Line a buttered 10-inch pie pan with 1 disk.
  • Spoon in the filling, mounding it high.
  • Top with the second disk of dough and seal the edges with your fingers; trim off excess dough.
  • Glaze the top with the beaten egg.
  • Bake for 45 minutes to 1 hour, or until golden.
  • Remove from the oven, place on a serving platter, and serve hot.
