- Set a steamer basket insert into a large saucepan and fill with water to a level just below the steamer. Bring to a boil. Add green beans, and steam to your desired degree of tenderness, or about 5 minutes.
- Once the beans have cooked, transfer them to a serving bowl. Toss with olive oil, garlic, salt, pepper, white wine vinegar, and Parmesan cheese. Let stand for 10 minutes. Remove garlic slices and garnish with parsley before serving.

This is how I make my green beans in the winter, when I don't have access to fresh produce. Growing up, my mother never would use canned green beans because she said they were disgusting and lacked flavor. When I got older, someone told me to cook them with oil, and that got me started on the quest for the perfect way to doctor canned green beans to make them taste closer to fresh. And here it is! (TIP: I love the big can of Hanover green beans, in the white can. They seem to have better flavor.)

- After you have washed the green beans, remove the ends.
- Blanche the green beans in salted boiling water for one minute. Drain and run cold water over them to stop the cooking process.
- In a large nonstick frying pan heat the oil over medium heat.
- Add the garlic and cook for one minute.
- Add the green beans and cook for another minute.
- Add the tomato pieces and cook until the green beans are tender but still green. (Sometimes I'll add 1/4 cup water and cover the pan for a bit if the green beans are having trouble getting tender.).
- Add salt and pepper to taste.
- Serve at once.
