Country Tomato and Bacon Pie is comfort food at its finest. Fresh tomatoes with layers of cheese and bacon all baked in a yummy pie crust!

2-3 tomatoes (sliced)
1 9-inch deep dish frozen pie crust (baked to package directions)
1/2 cup green onions (chopped)
1/4 cup basil (chopped)
1/2 cup cooked and crumbled bacon
freshly ground black pepper (to taste)
1/2 cup mayonnaise
1 cup shredded cheese (mozzarella or cheddar)

Steps:

  • If using a frozen pie crust, you'll need to let it defrost on the counter for about 10 minutes, then prick the crust with a fork (this keeps the crust from getting too puffy while baking).
  • Then bake it using the instructions on the back of your package (usually 400F degrees for about 10-12 minutes).
  • If using my Wham Bam Pie Crust, you'll prepare as directed, prick the crust with a fork, and then prebake at 400F degrees for about 10-12 minutes.
  • Allow crust to cool slightly.
  • Turn oven down to 350F degrees.
  • Start layering tomato slices on the bottom of the pie.
  • Season with some freshly ground black pepper.
  • Then top with green onions, basil and crumbled bacon.
  • In a bowl, combine mayonnaise with shredded cheese.
  • Spread the cheese mixture on top of your pie.
  • Bake at 350F degrees for about 30-35 minutes (until golden brown).
  • If the the edges of your pie crust are becoming too brown while baking, you may want to put some aluminum foil around the edges of the pie, just covering the crust for the duration of baking.

1 unbaked deep-dish pastry shell (9 inches)
3 medium tomatoes, cut into 1/4-inch slices
10 bacon strips, cooked and crumbled
1 cup shredded cheddar cheese
1 cup mayonnaise

Steps:

  • Bake pastry shell according to package directions; cool. Place tomatoes in the crust; sprinkle with bacon. In a small bowl, combine the cheese and mayonnaise. Spoon over bacon in the center of pie, leaving 1 in. around edge. , Bake at 350° for 30-40 minutes or until golden brown (cover edges with foil if necessary to prevent over browning).

1 9-inch pie shell
1 1/2 c flavored croutons, I like to use the garlic and herb flavor
5 or 6 plum tomatoes, peeled and diced. you want a nice tomato base, so use more or less depending on size of tomato
4 green onions, sliced to preferred thickness; Use the white and the green parts (If you don't have green onion regular will work, just dice very small)
1 c bacon, fried crispy and chopped
fresh basil, to taste or dried basil, to taste
2-3 clove garlic, minced (I use more, but I really love garlic)
1/2 tsp dried oregano
salt and pepper, to taste
1 c light mayonnaise, not salad dressing
1/2 c cheddar jack cheese
1/2 c mozzarella cheese

Steps:

  • 1. Blind bake the pie shell on 425 F until light brown (about 10 minutes).
  • 2. Place croutons in a baggie and break into smaller pieces with a mallet. Then spread in bottom of pie crust. They will absorb excess juices from the tomatoes plus add additional flavor.
  • 3. Spread the diced tomatoes over the croutons.
  • 4. Sprinkle salt and pepper, crushed garlic, basil, oregano, onions, and bacon over the tomatoes.
  • 5. Mix mayo with the cheeses. Spread over the top to the edges.
  • 6. You can toss some additional bacon and onion on top for presentation.
  • 7. Bake at 350 F for approximately 25 minutes. When the top is nice and golden, it's done.
  • 8. Let cool for 10 to 15 minutes then dig in. It's wonderful when warm, but just as good at room temperature.

4 large tomatoes, peeled and sliced
½ cup chopped fresh basil
3 green onions, thinly sliced
½ pound bacon - cooked, drained, and chopped
½ teaspoon garlic powder
1 teaspoon dried oregano
½ teaspoon crushed red pepper
2 cups shredded Cheddar cheese
¼ cup mayonnaise

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In alternating layers, fill pastry shell with tomatoes, basil, scallions, bacon, garlic powder, oregano, and red pepper. In a small bowl, mix cheese with mayonnaise. Spread mixture over top of pie. Cover loosely with aluminum foil.
  • Bake in preheated oven for 30 minutes. Remove foil from top of pie and bake an additional 30 minutes. Serve warm or cold.

7 ripe tomatoes, sliced
1 yellow onion
¾ cup mayonnaise
⅓ cup shredded mozzarella cheese
⅓ cup grated Parmesan cheese
ground black pepper to taste
2 teaspoons fresh basil
2 teaspoons fresh oregano

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake the pastry shell for 8 to 10 minutes or until browned.
  • Slice onion and place in the bottom of pastry shell. Slice tomatoes and arrange over onions. Add black pepper to taste.
