CUCUMBER PARTY SANDWICHES

- Beat cream cheese, mayonnaise and dressing mix until blended; let stand 30 minutes. , Spread cream cheese mixture on bread. Top each with 2 cucumber slices and, if desired, dill and red onion slivers. Refrigerate, covered, until serving.

EASY CUCUMBER PARTY SANDWICHES
These easy, beautiful, yummy sandwiches are perfect for brunches, tea parties or spring and summer lunches. Can be prepared ahead of time and assembled just before serving. This is an easy appetizer to prepare the day before, except for the assembly. The cream cheese mixture is actually better after about 8 hours. Feel free to experiment with the dressing; we prefer the buttermilk dressing but ranch or Italian works great, too. Also, cocktail bread can be substituted for the hand-cut bread, which will save 10 to 15 minutes.

- Mix cream cheese, sour cream, mayonnaise, ranch dressing mix, and dried dill in a bowl until creamy and smooth.
- Cut crusts from bread slices; cut sliced bread into decorative shapes (such as rounds or flowers) with cookie cutters. Spread each piece of bread with cream cheese mixture and top with a cucumber slice. Top each canape with a few fresh dill leaves.

This is an appetizer that a co-worker gave to me a long time ago. We worked the midnight shift together at the 911 center and we would eat this when the hunger pangs hit. Divine!

- Slice the cucmber into thin slices and set aside.
- Allow cream cheese to come to soften and then mix the dry italian dressing mix into the softened cream cheese.
- Refreigerate for 1 hour to allow the flavors to blend.
- Spread 1 tsp of cream cheese mix onto a slice of party rye and top with a cucumber.
- Bet you can't eat just one!

- Brown sausage and ground beef.
- Chop in skillet till in fine pieces.
- Drain.
- Add tabasco and Velveeta cheese and mix until melted.
- Spread on the small party rye bread.
- Bake at 300 degrees until hot, usually 10-15 minutes.
- These are easy to prepare in advance.
- freeze then, when needed pop them into the oven for impromptu parties.
" GO BEARS!" PARTY RYES
I used to call these Hanky Pankies (why is beyond me!). After I made them at my Super Bowl party the first time the Bears won many years ago, it's been a tradition every Super Bowl since. (7/5/07...Note: These are supposed to be served hot and kept warm, if possible. During the holidays I make a double batch and freeze them in large Ziplock bags with layers of wax paper or foil between each layer. Then you have a no-fuss appetizer when people pop by that you don't have to pry apart when you only want to bake a portion of them!)
