Steps:

  • Spread sandwich thin with cream cheese spread.
  • Arrange fresh vegetables on cream cheese to create funny face.

1/2 cup chive-and-onion cream cheese spread (from 8-oz container)
1/4 cup creamy peanut butter
1/2 teaspoon ground ginger
1/8 teaspoon ground red pepper (cayenne)
1 large red bell pepper
3 whole wheat round sandwich thins
1 large yellow bell pepper (cut into 1x1/4-inch strips)
Broccoli and cauliflower florets
1/2 cup julienne carrots

Steps:

  • In small bowl, beat cream cheese spread, peanut butter, ginger and ground red pepper with electric mixer on high speed until smooth.
  • Cut red bell pepper: For scarecrow hats, cut 3 (3x2-inch) rectangles; for brims, cut 6 (1/2x1/2-inch) rectangles; for mouths, cut 3 (1x1/4-inch) rectangles.
  • To assemble each scarecrow face: Spread 3 tablespoons cream cheese mixture onto sandwich thin. Place large red pepper rectangle on top of sandwich for hat; place 2 small red pepper rectangles on each side of hat for brim. Place yellow pepper strips under hat for hair, broccoli for eyes, cauliflower for nose, red bell pepper strip for mouth and julienne carrots for straw around scarecrow neck.

2 tablespoons olive oil
3 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 medium eggplant, thinly sliced
2 medium zucchini, halved and sliced
1 large onion, sliced
1 medium sweet red pepper, sliced
1 medium green pepper, sliced
1/4 cup mayonnaise
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
4 slices Italian bread (1/2 inch thick), toasted
1 medium tomato, thinly sliced
4 slices Muenster cheese

Steps:

  • Preheat oven to 425°. In a large bowl, combine oil, garlic, salt, oregano and basil. Add vegetables and toss to coat. Transfer to two 15x10x1-in. baking pans. , Bake, uncovered, 15-20 minutes or until lightly browned, stirring occasionally., Combine mayonnaise, vinegar and mustard; spread over toast. Place on a baking sheet. Top with vegetable mixture, tomato and cheese. Broil 6-8 in. from the heat for 2-3 minutes or until cheese is melted.
