STEAK GYROS WITH TZATZIKI CUCUMBER SAUCE



Steak Gyros with Tzatziki Cucumber Sauce image

Easy and tasty flank steak gyros with tzatziki cucumber sauce are bursting with hearty flavor. A simple marinade and quick-sear yields super juicy and flavorful beef for the best homemade gyros!

1 pound flank steak
⅓ cup olive oil
3 teaspoons minced garlic
2 teaspoons dried oregano (or 1 tablespoon finely chopped fresh oregano)
1 teaspoon salt
¼ teaspoon black pepper
juice of ½ lemon (plus additional wedges for squeezing)
4 white or wheat pitas
½ red onion (thinly sliced)
1 tomato (thinly sliced)
romaine lettuce
1 medium cucumber + ½ teaspoon salt (peeled and sliced )
2 cups cold plain Greek yogurt
4 teaspoons minced garlic
⅓ cup chopped dill (fresh or frozen, (may sub 2 tablespoons dried dill))
1 ½ tablespoons freshly squeezed lemon juice
½ teaspoon salt (or to taste)
⅛ teaspoon black pepper (or to taste)

Steps:

  • Place steak, olive oil, garlic, oregano, salt, pepper, and juice from 1/2 lemon in a large resealable bag. Press excess air out and seal bag. Refrigerate for 1-8 hours.
  • Spread cucumber slices out on a paper towel. Sprinkle generously with salt on both sides and allow to rest for 5 minutes. Wrap cucumber slices in paper towels, squeeze excess liquid out, and transfer to a food processor or blender.
  • Add remaining sauce ingredients to blender and pulse until smooth and creamy. Cover and chill until ready to use.
  • Preheat grill, grill pan, or cast iron skillet, to medium-high heat. Use tongs to transfer steak to grill and discard excess marinade. Cook steak for 6-8 minutes on each side until desired doneness (I recommend leaving just a hint of pink in the center for super juicy, tender meat with lots of flavor!)
  • Transfer steak to a cutting board and allow meat to rest for a few minutes before slicing very thinly across the grain.
  • Assemble gyros with lettuce, sliced onions and cucumbers, and steak. Drizzle with tzatziki sauce, top with black pepper and fresh squeezed lemon and serve immediately.

A gyro is a Greek sandwich made of thin slices of roasted meat, served on pita bread with a cucumber-yogurt sauce. In this recipe, lean ground beef is seasoned with oregano and marjoram, pressed into a loaf pan, baked and thinly sliced to fill the pita.

1/2 of a 6-ounce carton plain fat-free Greek yogurt
½ cup shredded, seeded cucumber
1 ½ teaspoons red wine vinegar
1 ½ teaspoons snipped fresh dill
1 clove garlic, minced
¼ teaspoon kosher salt
Nonstick cooking spray
1 cup chopped onion
2 tablespoons water
1 pound lean ground beef (95% lean)
1 egg
¼ cup dry whole-wheat bread crumbs
4 teaspoons dried oregano, crushed
2 teaspoons dried marjoram, crushed
3 cloves garlic, minced
½ teaspoon kosher salt
½ teaspoon black pepper
8 low-carb pita bread rounds
3 medium roma tomatoes, sliced
½ cup thinly sliced cucumber
¼ cup thinly sliced red onion
½ cup crumbled reduced-fat feta cheese (2 ounces)

Steps:

  • Prepare Tzatziki Sauce: In a small bowl stir together Greek yogurt, cucumber, red wine vinegar, dill, minced garlic and salt. Cover and chill up to 4 hours until ready to serve.
  • Prepare Beef Gyros: Preheat oven to 325 degrees F. Line a 9x5-inch loaf pan with parchment paper; coat paper with cooking spray.
  • In a food processor combine the 1 cup onion and the water; cover and process until smooth. Press pureed onion through a fine-mesh sieve to remove excess liquid; discard liquid. Return onion to food processor. Add the ground beef, egg, bread crumbs, oregano, marjoram, garlic, salt and pepper). Cover and process until mixture forms a paste.
  • Lightly press meat mixture into prepared loaf pan. Place loaf pan in a 13x9-inch baking pan. Pour enough boiling water into baking pan to reach halfway up sides of loaf pan. Bake 35 to 40 minutes or until done (160 degrees F) (see Tip). Drain off fat. Cool 10 minutes. Remove; cut into slices about 1/4-inch thick.
  • Fill pita bread with meat, tomato, cucumber and red onion slices; top with cheese. Serve with Tzatziki Sauce.

This Beef Gyro recipe with Authentic Greek Tzatziki Sauce is a delicious combination of flavors from red onion, garlic, marjoram, rosemary, oregano, salt and pepper that you can easily make at home.

1 lb. ground beef (lower the fat content the better)
½ large red onion (chopped)
2 Tbsp Minced Garlic
2 tsp Marjoram
2 tsp Rosemary
2 tsp Oregano
2 tsp Salt
2 tsp Black Pepper
7 Pita Breads
7 Lettuce leaves
7 Tomato slices
4 Onion slices

Steps:

  • Place red onion in a food processor and process until finely chopped.
  • Remove the onion from the food processor and place in a tea towel, squeezing to remove all the juices.
  • Return the onion back to the food processor with the remaining ingredients and pulse for approximately 1 minute until you get a paste like consistency. TIP: The gyro beef mixture will form together in the food processor, similar to a ball of dough.
  • Place mixture in a glass baking dish. Flatten and smooth the meat into a nice meatloaf.
  • Place in a water bath and cook at 325°F for 60-75 minutes or you have an internal temp of 165°F-170°F.
  • Once removed from the oven, drain the fat.
  • Allow to cool for 5-10 minutes and place on a wire rack (I also put a pan under the rack to catch any drippings) and place a heavy object on top to compress the gyros meat. I used a cast iron skillet with 3 cans inside the skillet for additional weight.
  • Remove the weight and let rest for 30 minutes.
  • Slice the meat into desired sized slices.
  • Place meat slices on a baking sheet and broil for 3-5 minutes until crispy!
  • Serve in pita bread with lettuce, sliced onion, sliced tomato and this Authentic Greek Tzatziki Sauce.
