2 large ripe avocados, mashed well, about 1 1/8 cups
8 ounces dark chocolate, melted
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
3 tablespoons olive oil
4 ounces dark chocolate, chopped
1 large ripe avocado, mashed
1/2 teaspoon vanilla extract
2 1/2 cups powdered sugar
2 tablespoons cocoa powder
1 -2 tablespoon grated chocolate (optional garnish)

Steps:

  • For Brownies: Preheat oven to 350 degrees F (325 F for glass or dark pan).
  • Liberally spray a 9-inch square pan with non-stick spray.
  • In a large bowl, whisk mashed avocado and melted chocolate.
  • Whisk in sugar until combined, then add eggs and vanilla extract, mixing well.
  • Add in flour, cocoa, baking powder, and salt, mixing with a large spoon or rubber spatula until JUST combined - do not over mix.
  • Stir in oil until its well distributed and batter is somewhat smooth. Fold in chopped chocolate, then spread batter in pan.
  • Bake for 28-32 minutes (35-40 minutes if baking at the lower temperature) or until middle is set.
  • Remove and let cool completely, then frost and top with grated chocolate if desired.
  • For Frosting: Add avocado to the bowl of an electric stand mixer (or a hand held electric mixer) and beat until creamy. With the mixer on low speed, add in vanilla and then slowly add in powdered sugar and cocoa powder, scraping down the sides if needed, until a smooth frosting forms.
  • Frost brownies once cooled.

This is a recipe idea adapted from Martha Stewart I just made it quick and easy with this short cut recipe which is very moist and rich- I guess it's from the avocado and its oil. So do not over bake these lovely hide-in-the- corner so no one sees you eating them all. They are quick and easy. These never last at the church...

BROWNIES:
18 oz package chocolate fudge cake mix
3 oz package chocolate fudge cook and serve pudding mix
2 c milk
1 large ripe avocado, mashed well-no lumps
1/2 c chopped walnuts
FROSTING:
1 large ripe avocado,mashed
2 1/2 c powdered sugar
1 tsp lemon juice or more as needed
grated chocolate

Steps:

  • 1. preheat oven to 350^. Spray a 9x13-inch cake dish and set aside. --- In a large saucepan combine the milk and the cook and serve pudding mix. Cook according to package directions.
  • 2. When pudding is cooked remove from heat and add the dry cake mix and stir just until blended. Stir in the creamy avocado mash. Pour into prepared pan and smooth top; sprinkle top with the chopped nuts.
  • 3. Bake for 30-35 minutes. Until cake starts to pull away from the sides of the pan. Do not over bake. Test with wooden tooth pick test. Remove from oven and cool completely on wire rack.
  • 4. Frosting: Beat avocado with electric mixer in a medium bowl until mashed and creamy. Add lemon juice and beat until combined. Slowly add the powdered sugar until smooth - adding more lemon juice if needed to make spreadable to frost brownies once cooled completely. Grate some chocolate on top if desired. Store covered in refrigerator - if any are left!
