3 cups (600g) granulated sugar
¾ cups (170g) butter
⅔ cups (168g) evaporated milk
1 package (12 ounces) semisweet chocolate chips
1 bag (10 ounces) mini-marshmallows ((could use 7-ounce jar of marshmallow fluff instead))
1 cup walnuts, (chopped)
1 teaspoon vanilla extract

Steps:

  • Line a 9x13-inch pan* with parchment paper.
  • In a large saucepan, over medium heat, mix sugar, butter, and evaporated milk.
  • Bring mixture to a boil, leave on heat until the mixture registers 234°F on a candy thermometer (about 5 minutes), stirring constantly.
  • Remove from heat and stir in chocolate chips until melted and thoroughly combined.
  • Beat in mini-marshmallows, walnuts, and vanilla extract.
  • Transfer fudge to the prepared pan and let it cool about 2 hours before cutting.

You can't go wrong with this tempting special-occasion masterpiece. At its heart--raspberries and cream sandwiched between luscious layers of Betty Crocker™ Super Moist™ chocolate fudge cake.

2/3 cup miniature semisweet chocolate chips
1 box Betty Crocker™ Super Moist™ chocolate fudge cake mix
1 cup water
1/2 cup butter or margarine, softened
3 eggs
3 cups whipping cream
1/3 cup powdered sugar
1 1/2 cups fresh raspberries
1/3 cup seedless raspberry preserves
1 1/2 cups miniature semisweet chocolate chips

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease and lightly flour bottoms and sides of two 8- or 9-inch round pans.
  • In small bowl, toss 2/3 cup chocolate chips with 1 tablespoon cake mix. In large bowl, beat remaining cake mix, water, butter and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Stir in coated chocolate chips; pour into pans.
  • Bake as directed on box for 8- or 9-inch rounds. Cool 10 minutes. Run knife around side of pans to loosen cakes; remove from pans to cooling rack. Cool completely, about 1 hour. Refrigerate layers 45 minutes for easier handling.
  • In chilled large bowl, beat whipping cream and powdered sugar with electric mixer on high speed until soft peaks form. In medium bowl, gently stir together 1 cup of the raspberries and the preserves; fold in 1 1/2 cups of the whipped cream.
  • Trim off rounded top of one layer. Slice each cake layer in half horizontally to make a total of 4 layers. Reserve untrimmed top layer. Place 1 layer, cut side up, on serving plate; spread with about 3/4 cup raspberry-cream mixture. Repeat with second and third layers. Top with reserved cake layer, cut side down. Frost side and top of cake with remaining whipped cream. Arrange remaining 1/2 cup raspberries over top of cake. Press 1 1/2 cups chocolate chips into side of cake. Store loosely covered in refrigerator.

I developed this recipe especially for my husband, who likes anything that has chocolate and peanut butter together!

2 teaspoons plus 3/4 cup butter, cubed, divided
3 cups sugar
1 can (5 ounces) evaporated milk
1 jar (7 ounces) marshmallow creme
1 cup semisweet chocolate chips
1 teaspoon vanilla extract, divided
1/2 cup peanut butter

Steps:

  • Line a 9-in. square pan with foil and grease the foil with 2 teaspoons butter; set aside. In a large heavy saucepan, combine the sugar, milk and remaining butter. Bring to a full rolling boil, stirring constantly. Boil for 4 minutes over medium heat, stirring to prevent scorching. Remove from the heat and set aside., Divide marshmallow creme between 2 heat-resistant bowls; add chocolate chips and 1/2 teaspoon vanilla to 1 bowl, and peanut butter and remaining vanilla to the other. Pour half of sugar mixture into each bowl., Stir chocolate mixture until smooth and pour into prepared pan; stir peanut butter mixture and carefully pour over chocolate layer. Refrigerate until firm. , Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-1/4-in. squares.

1 cup walnuts
Nonstick cooking spray, for the foil
1 pound bittersweet chocolate, chopped
One 14-ounce can sweetened condensed milk
One 7.5-ounce jar marshmallow creme
2 tablespoons unsalted butter, at room temperature

Steps:

  • Toast the walnuts in a medium saute pan over medium heat, tossing frequently, until darkened and fragrant, about 5 minutes. Transfer to a cutting board to cool, then roughly chop.
  • Line an 8-inch square cake pan with foil, leaving a 2-inch overhang on 2 sides. Coat lightly with cooking spray.
  • Combine the chocolate and condensed milk in a large saucepan over medium-low heat. Cook, stirring frequently, until the chocolate is melted and the mixture is thick and smooth, 2 to 3 minutes. Remove from the heat. Add the marshmallow creme and butter and stir until completely combined and no streaks remain. Stir in the walnuts until evenly dispersed.
  • Transfer the mixture to the prepared cake pan. Smooth with a rubber spatula into an even layer. Refrigerate until firm, 2 to 3 hours.
  • Use the foil overhang to remove the fudge from the pan. Cut into small squares. The fudge can be refrigerated in an airtight container up to 5 days.
