2 cups light brown sugar
¾ cup butter, softened
2 eggs
2 teaspoons vanilla extract
2 ½ cups baking mix
3 cups quick cooking oats
2 cups semisweet chocolate chips
1 (14 ounce) can sweetened condensed milk
2 tablespoons butter
½ teaspoon salt
1 cup chopped pecans
2 tablespoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 x 13 inch pan. In a large bowl, combine mix together the brown sugar, 3/4 cup margarine, eggs and 2 teaspoons of vanilla. Stir in baking mix and oats. Set aside.
  • To Make Filling: Heat chocolate chips, condensed milk, 2 tablespoons margarine or butter and salt in saucepan over low heat, stirring constantly until smooth. Remove from heat. Stir in pecans and 2 tablespoons vanilla.
  • Press about two-thirds of the oatmeal mixture into the bottom of the pan. Spread evenly. Pour chocolate mixture evenly over oatmeal layer. Drop remaining one-third of oatmeal mixture by tablespoons on top of the chocolate mixture. Bake for 30 minutes. Cool completely before cutting into bars.

2 teaspoons cornstarch
1 1/2 cups whole milk, divided
1 1/3 cups heavy cream
1/2 cup sugar
1/2 cup unsweetened cocoa powder
1/4 teaspoon fine salt
2 teaspoons pure vanilla extract

Steps:

  • In a medium saucepan, whisk together cornstarch and 2 tablespoons milk until smooth; whisk in remaining milk, cream, sugar, cocoa, and salt. Bring to a boil over medium-high, stirring constantly, and cook 1 minute.
  • Transfer to a large liquid-measuring cup and stir in vanilla. Pour into 10 3-ounce ice-pop molds and insert ice-pop sticks. Freeze until pops are solid, about 6 hours (or up to 1 week). Just before serving, briefly run molds under hot water to release pops.

This is a recipe that I found years ago and it was made with Milky Way® bars and I changed it. I have used Snickers®, 3 Musketeers®, Milky Way®, etc. My kids love this.

6 (2.07 ounce) candy bars
2 teaspoons butter for greasing, or as needed
3 cups white sugar
¾ cup butter
⅔ cup evaporated milk
2 cups semisweet chocolate chips
1 (7 ounce) jar marshmallow creme
1 teaspoon vanilla extract

Steps:

  • Place candy bars into freezer for about 10 minutes to firm; slice 1/2-inch to 3/4-inch thick.
  • Line a 9-inch square baking dish with aluminum foil amd grease with butter.
  • Heat sugar, 3/4 cup butter, and evaporated milk in a saucepan over medium heat, stirring to melt butter and dissolve sugar. Bring mixture to a boil and cook, stirring constantly, until a candy thermometer inserted into the middle of the syrup reads 234 degrees F (110 degrees C), 3 to 5 minutes. Remove from heat and stir chocolate chips into syrup until melted and smooth. Stir marshmallow cream and vanilla extract into mixture to make a smooth fudge.
  • Spread half the fudge into the prepared dish and layer the candy bar pieces over the fudge; pour remaining fudge on top of candy bars. Let cool to room temperature before cutting into squares.

For crust
five 5- by 2 1/2-inch graham crackers or 2/3 cup crushed graham crackers
1/2 cup pecans, toasted lightly
2 tablespoons sugar
3/4 stick (6 tablespoons) unsalted butter, melted
1/4 teaspoon salt
For fudge layer
4 ounces unsweetened chocolate, chopped
1 stick (1/2 cup) unsalted butter, cut into pieces
2 large eggs, beaten lightly
1/4 teaspoon vanilla
1/4 teaspoon salt
2 cups firmly packed light brown sugar
1 cup all-purpose flour

Steps:

  • Make crust:
  • Preheat oven to 350°F.
  • Into a food processor crumble graham crackers and grind into crumbs. Add pecans, sugar, butter, and salt and pulse motor until nuts are chopped fine. Press crumb mixture evenly onto bottom of an 11- by 7-inch baking pan and bake in middle of oven 5 minutes. Cool crust in pan on a rack.
  • Make fudge layer:
  • In a medium metal bowl set over a saucepan of barley simmering water melt chocolate with butter, stirring. Remove bowl from pan and cool to room temperature. With an electric mixer beat in remaining ingredients, beating until smooth.
  • Spread fudge layer on top of crust and bake in middle of oven 30 to 35 minutes, or until top is set, edges have begun to pull away from sides of pan, and a tester inserted in center comes out with moist chocolate adhering. While fudge is still hot, score with a sharp knife into 24 small bars and cut into bars, wiping knife blade clean after each cut. Cool bars in pans on a rack. Bars will continue to set as they cool but will remain somewhat soft. Bars keep in an airtight container 3 days or, covered and chilled, 1 week.
