2 teaspoons cornstarch
1 1/2 cups whole milk, divided
1 1/3 cups heavy cream
1/2 cup sugar
1/2 cup unsweetened cocoa powder
1/4 teaspoon fine salt
2 teaspoons pure vanilla extract

Steps:

  • In a medium saucepan, whisk together cornstarch and 2 tablespoons milk until smooth; whisk in remaining milk, cream, sugar, cocoa, and salt. Bring to a boil over medium-high, stirring constantly, and cook 1 minute.
  • Transfer to a large liquid-measuring cup and stir in vanilla. Pour into 10 3-ounce ice-pop molds and insert ice-pop sticks. Freeze until pops are solid, about 6 hours (or up to 1 week). Just before serving, briefly run molds under hot water to release pops.

Vegetable oil for greasing pan
7 oz fine-quality bittersweet chocolate (not unsweetened), chopped
1 stick (1/2 cup) cold unsalted butter, cut into pieces
1/4 cup granulated sugar
1/4 teaspoon salt
3 large eggs, lightly beaten
1 teaspoon vanilla
1 cup salted dry-roasted peanuts (4 oz)
For peanut butter layer
4 oz cream cheese, softened
1/2 cup creamy peanut butter (not "natural")
3/4 cup confectioners sugar
1/4 teaspoon salt
1/2 cup chilled heavy cream
1 teaspoon vanilla
For hot fudge sauce
1/3 cup heavy cream
3 tablespoons light corn syrup
3 tablespoons packed brown sugar
2 tablespoons Dutch-process unsweetened cocoa powder
1/4 teaspoon salt
3 1/2 oz fine-quality bittersweet chocolate (not unsweetened), chopped
1/2 teaspoon vanilla

Steps:

  • Make chocolate layer:
  • Put oven rack in middle position and preheat oven to 350°F. Line a 9-inch square baking pan with foil, allowing 2 inches of foil to hang over 2 opposite ends of pan, and lightly brush foil (except overhang) with oil.
  • Melt chocolate with butter, sugar, and salt in a double boiler or a large metal bowl set over a pan of barely simmering water, whisking occasionally, until smooth. Remove top of double boiler or bowl from heat and whisk in eggs and vanilla, then stir in peanuts.
  • Pour batter into baking pan and bake until set and edges are slightly puffed, about 15 minutes. Transfer cake in pan to a rack to cool completely.
  • Make peanut butter layer:
  • Beat cream cheese, peanut butter, confectioners sugar, and salt in a bowl with an electric mixer at medium speed until combined well, about 4 minutes.
  • Beat cream with vanilla in a bowl with cleaned beaters at medium-high speed until it just holds stiff peaks, then gently fold into peanut butter mixture until just combined.
  • Spread mixture evenly on top of chocolate layer and freeze, pan covered with foil, until firm, about 2 hours.
  • Make hot fudge sauce:
  • Bring cream, syrup, sugar, cocoa, salt, and chocolate to a boil in a 1-quart heavy saucepan over moderate heat, stirring until chocolate is melted. Reduce heat and simmer, stirring frequently, until thickened, about 3 minutes, then remove from heat. Stir in vanilla until incorporated. Cool sauce to warm.
  • To serve:
  • Carefully lift cake from pan by grasping overhang. Trim 1/4 inch from edges of cake and discard, then cut into 8 bars. Peel off foil and serve bars with sauce.

2 cups white sugar
¼ cup unsweetened cocoa powder
1 cup butter, melted
4 eggs
2 teaspoons vanilla extract
1 ½ cups all-purpose flour
¾ teaspoon baking powder

½ cup chopped walnuts
1 (16 ounce) package miniature marshmallows
½ cup brown sugar
¼ cup water
1 (1 ounce) square unsweetened baking chocolate
1 tablespoon butter
1 teaspoon vanilla extract
1 ½ cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a large bowl, stir together the white sugar and cocoa. Mix in the melted butter until well blended. Beat in the eggs one at a time, then stir in 2 teaspoons vanilla. Combine the flour, baking powder and salt; stir into the chocolate mixture. Fold in walnuts. Spread evenly into the prepared pan.
  • Bake for 30 minutes in the preheated oven, until the cake starts to pull away from the sides of the pan. Remove from the oven and cover with an even layer of miniature marshmallows. Return to the oven for about 2 to 3 minutes longer. Remove from the oven and allow to cool in the pan.
  • In a small saucepan over medium heat, combine brown sugar, water and unsweetened chocolate. Bring to a boil and boil for 3 minutes. Stir in 1 tablespoon butter and 1 teaspoon vanilla until well blended. Mix in the confectioners' sugar until smooth. Spread over the marshmallow layer. Allow frosting to set before cutting into bars.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 x 13 inch pan. In a large bowl, combine mix together the brown sugar, 3/4 cup margarine, eggs and 2 teaspoons of vanilla. Stir in baking mix and oats. Set aside.
  • To Make Filling: Heat chocolate chips, condensed milk, 2 tablespoons margarine or butter and salt in saucepan over low heat, stirring constantly until smooth. Remove from heat. Stir in pecans and 2 tablespoons vanilla.
  • Press about two-thirds of the oatmeal mixture into the bottom of the pan. Spread evenly. Pour chocolate mixture evenly over oatmeal layer. Drop remaining one-third of oatmeal mixture by tablespoons on top of the chocolate mixture. Bake for 30 minutes. Cool completely before cutting into bars.

  • In a medium saucepan, melt chocolate and butter over low heat, stirring occasionally. Remove from the heat and add 1 cup sugar, 1 cup flour, baking powder, vanilla, 2 eggs and walnuts. Stir until well blended. Spread evenly into the bottom of the prepared pan.

Mix until fluffy and smooth. Spread evenly over the first layer.
  • Sprinkle the 1/4 cup of chopped nuts and chocolate chips over the second layer. Bake for 25 to 35 minutes in the preheated oven. Then sprinkle the miniature marshmallows over the top and bake for 2 minutes longer.
  • Begin to prepare the icing while the bars are in the oven. In a medium saucepan, melt together the 1/4 cup of butter, 1 square of chocolate, remaining 2 ounces of cream cheese and 1/4 cup of milk. Remove from heat and stir in 3 cups of confectioners' sugar and 1 teaspoon of vanilla. Beat until smooth. Pour over the marshmallows and swirl together. Refrigerate until firm, cut into squares.

3/4 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons cocoa
1/2 cup Crisco
3/4 cup sugar

16 marshmallows, cut in half
1/2 cup dark brown sugar
1/4 cup water
2 (1 ounce) chocolate squares (I like semi-sweet)
3 tablespoons butter
1 teaspoon vanilla
1 1/2 cups sifted confectioners' sugar

Steps:

  • Sift together first four dry ingredients.
  • In a large bowl, cream Crisco and sugar well. Blend in 2 eggs, beat well. Add dry ingredients, mix well. Blend in vanilla and nuts.
  • Spread in 13"x9" pan. Bake in 350-degree F oven for about 25 minutes, checking by 15 minutes.
  • Cover tops of baked bars with 16 marshmallows cut in half.
  • Return to oven for about 3 minutes or until the marshmallows have spread out evenly.
  • Cool.
  • Cover with chocolate frosting.
  • For Frosting:.
  • Combine brown sugar, water, and chocolate in pan.
  • Bring to boil and cook 3 minutes, stirring constantly. Turn off heat.
  • Add butter and vanilla. Stir until butter is melted and combined, then let mixture cool.
  • Blend in sifted confectioners' sugar.
  • Spread over cooled marshmallow cake.
  • Cut into 16 bars when the frosting has set. Enjoy!

½ cup margarine, melted
1 ¾ cups confectioners' sugar
1 (12 fluid ounce) can evaporated milk
1 cup semisweet chocolate chips

½ gallon vanilla ice cream
1 ½ cups dry-roasted peanuts

Steps:

  • Combined crushed cookies and melted margarine and press into a 9x13 inch dish. Chill 1 hour in refrigerator.
  • In a saucepan over medium heat, combine confectioners' sugar, evaporated milk, chocolate chips and 1/2 cup margarine. Bring to a boil, stirring constantly, and boil 8 minutes. Remove from heat and stir in vanilla. Set aside to cool.

Part rich fudge, part crumbly cookie, these chocolaty bars take decadence to a new level.

Vegetable oil cooking spray
27 store-bought chocolate wafer cookies (6 ounces)
1 tablespoon plus 1 1/2 teaspoons sugar
Table salt
1 stick plus 2 tablespoons unsalted butter
1 pound bittersweet or semisweet chocolate, chopped
1 can (14 ounces) sweetened condensed milk
1/4 cup whole milk
1/2 teaspoon pure vanilla extract
1/2 cup toasted and finely chopped walnuts
Coarse salt, preferably fleur de sel

Steps:

  • Preheat oven to 400 degrees. Coat a 9-by-13-inch baking dish with cooking spray, and line with parchment, leaving a 2-inch overhang on long sides. Spray parchment.
  • Pulse wafers in a food processor until finely ground, and transfer to a bowl. Add sugar and a pinch of table salt. Melt 6 tablespoons butter, and stir into crumbs. Press into bottom of dish. Bake for 10 minutes.
  • Heat chocolate, condensed milk, whole milk, remaining 4 tablespoons butter, and a pinch of table salt in a double boiler or a heatproof bowl set over a pan of simmering water, stirring, until melted. Stir in vanilla.
  • Pour chocolate mixture over baked cookie layer, smoothing top with an offset spatula. Sprinkle walnuts and coarse salt over top, pressing slightly to adhere. Refrigerate until firm, about 2 hours.
  • Remove fudge from dish using parchment to lift, and transfer to a cutting board; remove parchment. Trim edges of fudge with a sharp knife, and cut crosswise into six 2-inch-wide strips. Cut each strip crosswise into 3 equal bars, then cut each bar in half on the diagonal to form 36 triangles.

This is an adopted recipe that uses regular pantry ingredients for a simple and rich treat. Very easy and quick to put together, but you need to give them some time out of the oven to firm up.

3/4 cup butter
1 cup light brown sugar, firmly packed
1/2 teaspoon salt
1 1/2 cups all-purpose flour
1 cup quick-cooking oatmeal (your preference for texture) or 1 cup old fashioned oats (your preference for texture)
1 (14 ounce) can sweetened condensed milk
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°.
  • Cream butter, sugar and salt in a mixer.
  • Add flour and oatmeal, blend until it holds together.
  • Heat milk in a pan and add chocolate chips.
  • Use low heat and stir until the chips are melted and you have a smooth chocolate cream.
  • Using a 9x13 pan, press 3/4 of the dough mixture in the pan, spreading and patting it to cover the whole surface.
  • Pour chocolate cream over crust.
  • Crumble last bit of dough over the chocolate, creating a third spotty layer.
  • Bake for 30 minutes, until lightly browned.
  • Cool, cut, transfer to a wax paper lined tray and allow to firm up a bit before serving- I leave them for a few hours and they become fudge-like, but they are still yummy if you eat them sooner than that.
  • You can also use a smaller pan- I have used a 10" square and just baked a little longer for a thicker bar, which required a longer cooling time as well.
  • Note: removing to the wax paper is necessary-- if you cool them too long in the pan they are hard to remove, as the bottom crust tends to stick to the pan.

Steps:

  • In a microwave-safe bowl, melt butter and chocolate; stir until smooth. Stir in brown sugar until dissolved. Cool to lukewarm. Stir in egg and vanilla. Combine the flour, baking powder and salt; stir into chocolate mixture until blended. Stir in chips., Spread into a greased 9-in. square baking pan. Bake at 350° for 22-27 minutes or until a toothpick comes out with moist crumbs. Cool on a wire rack.

1-1/2 cups all-purpose flour
3/4 cup packed brown sugar
3/4 cup butter, softened
1 large egg yolk
3/4 teaspoon vanilla extract
FILLING:
1 package fudge brownie mix (13-inch x 9-inch pan size)
1 large egg
1/3 cup water
1/3 cup canola oil
TOPPING:
1 package (11-1/2 ounces) milk chocolate chips, melted
3/4 cup chopped walnuts, toasted

Steps:

  • In a large bowl, combine the first five ingredients. Press onto the bottom of a greased 15x10x1-in. baking pan. Bake at 350° for 15-18 minutes or until golden brown. , Meanwhile, in a large bowl, combine the filling ingredients. Spread over hot crust. Bake for 15 minutes or until set. Cool on a wire rack for 30 minutes. , Spread melted chocolate over filling; sprinkle with walnuts. Cool completely. Cut into bars.

12 ounces semisweet chocolate chunks or 12 ounces semi-sweet chocolate chips
1 (8 ounce) package cream cheese, softened
2/3 cup evaporated milk
1 cup chopped walnuts
1 1/2 cups sugar
1/2 cup butter or 1/2 cup margarine, softened
2 large eggs
1 teaspoon vanilla
3 cups flour
1 teaspoon baking powder
1/2 salt

Steps:

  • Set oven to 375°.
  • Butter a 13 x 9-inch pan.
  • In a saucepan, combine chocolate pieces, cream cheese and evaporated milk; stir over low heat until smooth, then set aside.
  • Stir in chopped nuts In a large bowl, cream sugar and butter or margarine (if using), until light and fluffy, then blend in eggs and vanilla.
  • Mix together flour baking powder and salt, then add to the creamed mixture; mix well to combine.
  • Press half of the mixture into the bottom the prepared baking pan, then spread the chocolate mixture over crust.
  • Sprinkle with remaining crust mixture, then press down gently.
  • Bake for 30 minutes, or until crust is lightly browned.
  • Cool then cut into bars.

1 cup sweetened condensed milk
2 cups chocolate chips
1/2 cup butter
1 teaspoon vanilla

Steps:

  • Cream butter, sugar and eggs.
  • Mix flour, soda and oats and add slowly to creamed mixture.
  • Spread 3/4 of this into 9x13 pan.
  • Melt remaining ingredients in a saucepan and pour over dough in pan.
  • Blob the remaining oat mixture on top.
  • Bake at 350° for 25 minutes.

1 cup butter
2 cups brown sugar
2 eggs
2 tsp. vanilla extract
2-1/2 cups unsifted flour
1 tsp. baking soda
1 tsp. salt
3 cups uncooked oatmeal (whole, not "quick")
12-oz. package of semisweet chocolate chips (preferably not generic)
1 can sweetened condensed milk
2 Tbs. butter
2 tsp. vanilla extract
1/2 tsp. salt
1 cup chopped walnuts

Steps:

  • Cream butter and sugar. Mix in eggs and vanilla extract. In a separate bowl, sift flour, baking soda and salt together. Stir in oats. Add creamed mix to dry ingredients. Stir well and set aside.
  • Melt chocolate chips in saucepan. Over low heat, stir in condensed milk, butter and salt. Add walnuts and vanilla. Spread 2/3 of oat mix in 9"x13" pan. Cover with chocolate mix. Dot with remaining oat mix and swirl. (Chocolate will not all be covered.) Bake at 350 degrees for 25 min. until top is browned. Let cool and cut into bars.

  • For cookie dough cream together margarine and sugar.
  • Mix in eggs and vanilla.
  • In separate bowl sift flour, soda and salt.
  • Add dry ingredients to creamed mixture. Set aside while you make the filling.
  • For fudge filling: in a saucepan over boiling water, mix chocolate chips, sweetened condensed milk, margarine and salt.
  • Stir until chips are melted and mixture is smooth.
  • Remove from heat and stir in nuts (if using) and vanilla.

2 large eggs
2 teaspoons real vanilla

3 cups quick-cooking rolled oats
1 (14 ounce) can sweetened condensed milk
2 cups semi-sweet chocolate chips

Steps:

  • Set aside 2 tablespoons of the butter. Beat the remaining butter with a mixer on medium speed for 30 seconds. Add brown sugar; beat until well mixed. Beat in eggs and vanilla. In another large bowl stir together flour and baking soda; stir in oats. Gradually stir dry mixture into beaten mixture. Set aside.
  • In a medium saucepan combine the 2 tablespoons butter, the sweetened condensed milk, and chocolate . Cook over low heat until chocolate melts, stirring occasionally. Remove from heat. Stir in vanilla.
