Peculiar looking flourless cookies. For rum-packed flavor try using 2 teaspoons rum extract in place of the vanilla.

Steps:
- Melt butter or margarine in heavy skillet. Add slightly beaten eggs. Stir in dates, sugar, salt and vanilla. Cook over low heat stirring constantly until thick and well blended.
- Have ready crisp rice cereal and chopped nuts in large bowl. Stir cooked mixture into them until coated.
- Chill. Put by teaspoonful on cookie sheet. Chill again. When cold roll in crisp rice crumb and coconut mixture or powdered sugar.

Steps:
- Melt butter in a large skillet over medium heat. Add dates, sugar, and eggs; cook and stir until mixture thickens and leaves the sides of the skillet, 5 to 10 minutes. Remove from heat; add crispy rice cereal and pecans. Stir cookie dough until well-mixed.
- Place coconut in a shallow bowl. Drop teaspoonfuls of cookie dough into coconut and roll to coat and form into balls. Let cookies cool, about 20 minutes.

Steps:
- Heat frying pan to 350°F.
- Beat together 2 eggs and 6 Tbsps Milk.
- Add dry ingredients & shortening in a mixing bowl, blend well.
- Add Egg and Milk mixture to dry ingredients, stir until well mixed.
- Place plastic on bowl to cover dough & chill dough in refrigerator about 2 hours.
- On floured board, roll dough in 4 parts to 1/4" thickness.
- Cut shapes with floured glass or cookie cutter.
- Fry in electric fry pan until golden.

FRYING PAN COOKIES
Steps:
- 1. Mix above ingredients in frying pan at low heat until blended and dates melt. Take off heat and beat in quickly 1 whole beaten egg. Cook 10 min. Take off heat and mix over 2 1/2 C. rice krispies. Butter your hands. Take spoonful and roll into balls then roll over chopped nuts or shredded coconut if desired.

Steps:
- Combine dates, sugar, and eggs in a skillet; place over medium heat. Cook and stir until mixture is cooked through and thickened, about 5 minutes. Remove skillet from heat and stir rice cereal, vanilla extract, and salt into egg mixture. Roll mixture into a log.
- Sprinkle coconut over a sheet of waxed paper. Roll date log in the coconut until coated. Cover date log with aluminum foil and refrigerate until set, about 1 hour. Cut log into 1/4-inch slices.
