1 can (8 ounces) unsweetened pineapple chunks
2 cups cooked rice
1/2 cup quartered fresh strawberries
1/2 cup sliced peeled fresh pear
1/2 cup sliced peeled peach
1/2 cup sliced firm banana
2 tablespoons fat-free plain yogurt
1 tablespoon honey
4 cups fresh baby spinach

Steps:

  • Drain pineapple, reserving 1/4 cup juice. In a large bowl, combine the pineapple, rice, strawberries, pear, peach and banana. In a small bowl, whisk the yogurt, honey and reserved pineapple juice. Pour over fruit mixture; toss to coat. Line salad plates with spinach; top with fruit mixture.

1 (8.8 ounce) pouch UNCLE BEN'S® Ready Rice® Original Long Grain
¼ cup sliced celery
¼ cup sweetened dried cranberries (such as Ocean Spray® Craisins®)
1⁄16 cup toasted pecans, broken into pieces
¼ cup chopped green onions
1 tablespoon diced red onion
1 tablespoon mayonnaise, or more to taste
2 tablespoons blood orange white balsamic vinegar
4 tablespoons lemon-infused olive oil
½ teaspoon Dijon mustard
½ teaspoon honey
1 small clove garlic, minced
1 pinch salt and pepper to taste

Steps:

  • Microwave rice according to package instructions; refrigerate until chilled, about 30 minutes.
  • Place rice in serving bowl. Add celery, dried cranberries, pecans, green onions, and red onions. Stir in mayonnaise.
  • Whisk together white balsamic vinegar, olive oil, Dijon mustard, honey, and garlic.
  • Toss rice salad with vinaigrette. Season with salt and pepper. Refrigerate for at least an hour to allow flavors to blend.

3 ounces cream cheese, softened
1/2 cup plain yogurt
1/4 cup honey
2 tablespoons lemon juice
1 teaspoon grated lemon zest
2 cups cooked long grain rice, cooled
3 fresh peaches or nectarines, pitted and chopped or 1-1/2 cups frozen sliced peaches, thawed and chopped
1 cup halved green grapes
1/2 cup sliced celery
1/2 cup raisins
1/2 cup chopped pecans

Steps:

  • In a large bowl, beat the first five ingredients until blended. Stir in the rice, peaches, grapes, celery and raisins. Cover and refrigerate for at least 6 hours. Just before serving, stir in the pecans.
