A cooling treat for hot summer days: Just freeze sweet and tangy lemonade into ice cubes, then blitz into a slushie.

Number Of Ingredients 3

14 to 16 lemons
1 1/2 cups sugar
Kosher salt

Steps:

  • Reserve 1 lemon for garnish. Remove wide strips of zest from 2 lemons with a vegetable peeler (do not remove the pith). Juice enough of the lemons to make 2 cups lemon juice.
  • Add the lemon zest strips, sugar and 1 1/2 cups water to a medium saucepan and bring to a boil, stirring until the sugar is dissolved. Turn off the heat and stir in 1/2 teaspoon salt. Discard the zest strips and let cool for 15 minutes.
  • Pour the simple syrup into a pitcher and stir in the lemon juice and 2 cups cold water. Divide the mixture among three 12-compartment ice cube trays and freeze until solid, 8 hours and up to overnight. (The ice cubes will not be as solid as ice.)
  • Add the lemonade cubes and 1/2 cup cold water to a blender and blend, stopping the blender and stirring as needed, until the mixture is smooth and pourable. Pour the lemonade slushie into four 8-ounce glasses. Slice 4 thin slices from the reserved lemon and garnish each glass with a lemon slice.

6 tablespoons lemonade concentrate
1 teaspoon sugar-free peach gelatin powder (Recommended: Jell-O)
1/4 cup tropical punch mix
6 cups water
Ice cubes
1 lemon, sliced

Steps:

  • In large pitcher add all ingredients except lemon slices and ice cubes; stir.
  • Serve in ice filled glasses with a straw. Garnish each glass with slice of lemon.

Slushy frozen lemonade is a delicious hot-weather refresher for all ages.

3 1/2 cups water
1 1/2 cups sugar
2 cups fresh lemon juice (from about 10 lemons), plus wedges for serving

Steps:

  • Bring water and sugar to a boil in a small saucepan, stirring occasionally, until sugar dissolves. Let cool.
  • Mix sugar syrup and lemon juice in a nonreactive 9-by-13-inch baking dish. Cover, and freeze overnight. (Lemonade can be frozen for up to 3 days.)
  • Using a fork, break frozen lemonade mixture into chunks, and transfer to a large bowl. Whisk, breaking up chunks, until slushy. Divide slush among glasses. Squeeze 1 lemon wedge over each glass, drop it into glass, and serve immediately.

Made this up on a hot summers day. Originally I wanted to use frozen dark sweet cherries but didn't have enough so used frozen mixed berries. I'm sure almost any frozen fruit would be good: strawberries, mangoes, peaches, etc. You can also use your preferred type of lemonade but I like ones that use fresh lemon juice.

1 cup lemonade
3/4 cup frozen fruit, your choice
4 -6 ice cubes
Splenda granular (optional) or sugar, to taste if too tart (optional)

  • Blend all ingredients in a blender.
  • Pour into a tall glass, pop in a straw and enjoy!

An icy treat for hot weather! Kids will love this and parents will to. Things don't taste as sweet when cold so people who like sweeter lemonade will want extra sweetener while those who prefer a tarter drink will not. Adults may enjoy the optional rum or whiskey. Any excess may be frozen in popsicle molds. Variation: Try frozen juice concentrates instead of the lemonade concentrate. I like grapefruit, my kids like grape. Try orange slushies for a summer brunch.

6 ounces frozen lemonade concentrate (regular or pink)
ice cube
cold water
1/4-1/2 cup sugar, to taste (or equivalent, preferred sweetener) (optional)
rum (optional) or whiskey (optional)
lemon slice (to garnish)

Steps:

  • Load blender with ice cubes to the 4 1/2 cup mark.
  • Add lemonade concentrate and optional sweetener if used.
  • Fill blender with cold water to the 5 cup mark.
  • Blend on whatever speed your blender recommends for crushing ice until smooth and slushy.
  • Divide into serving glasses (it will have a texture resembling soft-serve ice cream), and garnish with lemon slices. A spoon may be necessary.
  • A shot of rum or whiskey may be poured overtop an individual serving or, if only adults are partaking, rum or whiskey can be added to the blender before the water.
