  • In a bowl, lightly mix the apple, grapes, pecans, apple pie spice, and mayonnaise together until thoroughly combined; stir in the chicken breast meat. Chill until cold.

1/4 cup chopped onion
2 teaspoon curry powder

3/4 cup hot water
1 tablespoon sugar
1 teaspoon lemon juice

3 tablespoons vegetable oil (3 times around the pan)
4 6-ounce boneless, skinless chicken breast halves, cut into 1/2-inch slices across the width of the breast
Coarse salt and coarse black pepper
4 garlic cloves, chopped
2-inch piece of fresh ginger, peeled and grated
2 tablespoons ground coriander (2 palmfuls)
1 large yellow onion, chopped
1 large green apple, peeled and diced
2 tablespoons all-purpose flour
2 cups chicken stock or broth
2 tablespoons curry paste, mild or hot
1/4 cup golden raisins (a generous handful)
8 pitted dates or 6 pitted prunes, chopped
4 scallions, thinly sliced
1 cup toasted shredded coconut
1/2 cup sliced almonds or Spanish peanuts
1 cup prepared mango chutney
1/4 cup finely chopped fresh cilantro leaves (a handful)

Steps:

  • Prepare the rice according to the package directions.
  • Preheat a large, deep nonstick skillet over medium-high heat with 2 tablespoons of the oil. Add the chicken, season with salt and pepper, and lightly brown. Remove the chicken and reserve on a plate. To the same pan, add the garlic, ginger, coriander, onions, apples, and remaining tablespoon of oil and sauté together for 3 to 5 minutes. Add the flour and cook for 1 minute more. Add the chicken stock to the pan and bring to a bubble. Add the curry paste, golden raisins, and dates. Reduce the heat to medium low. Add the chicken pieces back to the pan. Simmer the curry for 8 to 10 minutes.
  • Assemble the toppings in small dishes. Serve the curry in shallow bowls with scoops of basmati rice. Garnish with any or all of the toppings.
  • For a Vegetarian Fruited Curry in a Hurry, swap a 14-ounce container of firm tofu, cut into 1 1/2-inch-thick slices and patted dry, for the chicken, and vegetable broth for the chicken stock. Brown the tofu as you would the chicken and follow the same method above.

4 small boneless skinless chicken planks, cut in bite size pieces
1/2 c raspberry walnut vinaigrette
2 tsp poppy seeds
1/2 c diced red apple, cored but unpeeled
1/2 c red bell pepper, diced
1/4 c chopped almonds or walnuts, optional
1/2 c navel orange segments. diced
1/2 c red grapes, halved
1/2 c pineapple, chunks drained
1 small personal size seedless watermelon, sliced in 1/2
DRESSING:
1/4 c mayonnaise, to taste
1/4 c light honey(dark is to strong)
1/4 c thawed limeade concentrate, undiluted

Steps:

  • 1. Remove rind from melon and slice in 1-inch slices - stack 3 slices high and slice into 8- tri-angles. Stack the tri-angles in a circle like above photo forming a circle with pointed ends out- leaving a center open on a large cake plate; chill until ready to use.
  • 2. Put chicken pieces in raspberry vinaigrette in a ziploc freezer bag. Refrigerate to marinate for 1 hour. Remove chicken from marinade with tongs and discard marinade. Sauté chicken in 1 Tablespoon olive oil until cooked through, Chill.
  • 3. Mix the chicken, and fruit,nuts together in a large bowl. Combine dressing ingredients and blend well - pour over chicken mixture in bowl, stir to coat evenly.
  • 4. To serve. Fill center of melon star, mounding it up. Top with a few slivered almonds, if desired.

1 lb. cavetelli pasta/ cooked al dente
1 lg. can chunk pineapple, drained
1 lg. can mandarin oranges, drained
1 1/2 cups green seedless grapes, cut in half
1 tblsp. minced fresh basil
salt and pepper and hungarian peprika
1/2 cup mayo
1/2 cup dijon mustard

Steps:

  • poach chicken in white wine till no longer pink. Chicken should be coked---but not tough Cool and shred. Set aside cook pasta in salted water till al dente, drain. Set aside Pat fruit dry with paper towels. Mix all indredients together except mayo and mustard, making sure to season. Add mayo and mustard. Top with fresh basil leafs in the shape of a clover---green grapes in the middle. Sprinkle with spicy paprika. Chill at least 4 hours.

1/2 cup slivered almonds
3/4 cup mayonnaise
1/2 teaspoon salt
1/8 teaspoon ground marjoram

Steps:

  • Combine chicken, celery, oranges, pineapple and almonds. Chill thoroughly.
  • Blend together mayonnaise, salt and marjoram. Add to chicken mixture.
  • Toss together lightly to coat all ingredients.
  • Serve on crisp lettuce leaves or sandwich between slices of raisin bread.
