All that's needed to enhance a simple almond-flavored cake is an outstanding berry garnish. Beautiful!

1/2 box Betty Crocker™ Super Moist™ yellow cake mix (about 1 2/3 cups)
1/2 cup water
1/2 cup slivered almonds, finely ground
3 tablespoons vegetable oil
1/2 teaspoon almond extract
2 eggs
3 cups assorted fresh berries (such as raspberries, blueberries and blackberries)
3/4 cup apricot preserves
3 tablespoons apple juice
3 tablespoons sliced almonds, toasted, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Generously spray bottom and side of 8- or 9-inch round cake pan with baking spray with flour.
  • In large bowl, beat cake ingredients with electric mixer on low speed until moistened, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
  • Bake and cool as directed on box for 8- or 9-inch rounds.
  • Place berries in medium bowl. In 1-quart saucepan, heat preserves and apple juice to boiling, stirring frequently. Pour over berries; toss berries until coated with preserves mixture. Let stand 5 minutes.
  • Gently cut off any dome from top of cake, using serrated knife, to make top level. On serving plate, place cake, sliced side down. Arrange berries on cake; drizzle with syrup remaining in bowl. Sprinkle with sliced almonds. Store leftover cake covered in refrigerator.

A quick gourmet cake that is very moist. I made this for a friend's birthday as a nice alternative to standard birthday cake since she preferred whipped frosting to buttercream.

1 (16.25 ounce) package white cake mix
1 (3 ounce) package raspberry-flavored gelatin mix
1 (10 ounce) package frozen raspberries, thawed with juice retained
4 eggs
½ cup vegetable oil
¼ cup hot water
1 (10 ounce) package frozen raspberries, thawed
1 (12 ounce) container frozen whipped topping, thawed
½ cup fresh strawberry halves
1 cup raspberries
1 fresh blackberry

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease 2 9-inch round pans.
  • Combine dry cake mix and gelatin powder in a large bowl; add 1 package raspberries with juice, eggs, vegetable oil, and hot water. Beat mixture thoroughly; divide batter between prepared round pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 28 to 35 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
  • Fold 1 package thawed frozen raspberries through whipped topping in a bowl; spread about half the frosting evenly over 1 cake, place other cake atop the frosted cake, and frost with remaining frosting. Refrigerate at least 2 hours.
  • Top frosted cake with halved strawberries along outer edge and with raspberries in a circular pattern in the middle. Place blackberry in center of cake.

1 1/2 cups Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
1/3 cup lemon curd (from 10-oz jar)
1 cup granulated sugar
3/4 cup butter, softened
2 teaspoons grated lemon peel
1/2 teaspoon vanilla or almond extract
3 eggs
1/2 cup milk
4 cups sliced fresh strawberries (about 1 1/2 lb)
3 nectarines, thinly sliced
1/4 cup granulated sugar
Reserved lemon curd
2 cups whipping cream
1/4 cup powdered sugar

Steps:

  • Heat oven to 350°F. Generously grease bottom and sides of 9x5-inch loaf pan with shortening; lightly flour. In medium bowl, mix flour, baking powder and salt; set aside.
  • Spoon 1/3 cup lemon curd into small microwavable bowl. Microwave on High 10 to 15 seconds or just until softened. Measure 1 teaspoon into large bowl; reserve remaining lemon curd. In same large bowl, beat 1 cup granulated sugar, butter, lemon peel, vanilla and eggs with electric mixer on low speed 30 seconds. Beat on high speed 5 minutes, scraping bowl occasionally. Beat flour mixture into sugar mixture alternately with milk on low speed, beating just until smooth after each addition. Pour into pan.
  • Bake 50 to 60 minutes, or until toothpick inserted in center crack comes out clean. Cool 20 minutes; remove from pan to cooling rack. Cool completely, about 2 hours.
  • Meanwhile, in large bowl, mix strawberries, nectarines and 1/4 cup granulated sugar; set aside. Refrigerate, if desired.
  • In small microwavable bowl, microwave lemon curd on High 10 to 15 seconds to soften; let cool 5 minutes. Place in large bowl. In chilled medium bowl, beat whipping cream and powdered sugar with electric mixer on high speed until stiff peaks form. Fold whipped cream mixture into lemon curd until thoroughly blended. Cover and refrigerate until serving.
  • Cut cake into 24 slices. For each serving, place 1 slice of cake on dessert plate; spoon about 1/4 cup fruit and 2 heaping tablespoons topping over slice. Top with second slice of cake, 1/4 cup fruit and 2 heaping tablespoons topping.

This recipe came from a story in Oprah's magazine. I have made it dozens of times, and love its simplicity. The recipe suggests using tart plums, ripe peaches, or Granny Smith apples. I have also had success using frozen mixed berries and fresh pears, as well as the suggested fruits. It is very adaptable! I bake this in a deep-dish glass pie plate.

1 1/4 cups cake flour (not self-rising)
1 teaspoon baking powder
1 pinch salt
8 tablespoons butter, divided (or margarine)
10 tablespoons sugar, divided
1 large egg
1 lb fruit, sliced (fresh or frozen)
1 teaspoon fresh lemon juice
1/8 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375°F Grease a 9-inch round pan.
  • Sift flour, baking powder and salt into a small bowl.
  • In a medium saucepan, melt 6 tablespoons butter over low heat. Stir in 6 tablespoons sugar and let cool 10 minutes.
  • Add egg to butter/sugar mix, stir well.
  • Stir in flour mix, spread dough in pan with the back of a spoon.
  • Arrange fruit slices in a circle filling in to the center, press lightly into the dough.
  • Drizzle fruit with lemon juice and sprinkle with remaining 4 tablespoons sugar.
  • Sprinkle with cinnamon and dot with remaining 2 tablespoons butter.
  • Bake 25 to 30 minutes, or until fork inserted in center comes out clean.
  • Cool on a wire rack and serve warm or at room temperature.
