1 cup graham cracker crumbs
1/2 cup ground pecans
1/3 cup butter, melted
1/4 cup sugar
1 can (8 ounces) crushed pineapple
3 medium firm bananas, peeled and cut into 1/4-inch slices
1 package (8 ounces) cream cheese, softened
3-1/2 cups cold milk
2 packages (3.4 ounces each) instant lemon pudding mix
TOPPING:
1 carton (8 ounces) frozen whipped topping, thawed
1/2 cup finely chopped pecans

Steps:

  • In a small bowl, combine the graham cracker crumbs, pecans, butter and sugar. Press into an ungreased 13-in. x 9-in. dish. , Drain pineapple, reserving juice; set pineapple aside. Place bananas in a small bowl; add reserved juice. Let stand for 5-10 minutes; drain. Arrange bananas in a single layer over crust. , In a large bowl, beat cream cheese until smooth. Gradually beat in milk. Add pudding mixes; beat on low speed just until combined. Spread over bananas; top with pineapple. Spread with whipped topping; sprinkle with chopped pecans. Cover and refrigerate for at least 2 hours before serving.

1 packet instant sugar-free vanilla pudding mix
1 1/2 cups low fat milk
3 bananas
32 vanilla wafer cookies, plus 4 cookies, crumbled for garnish

Steps:

  • To make pudding, in a bowl, whisk together pudding mix and milk for 2 minutes. Cover with plastic wrap and refrigerate until set.
  • Cut each banana into 12 pieces (approximately 1/2-inch thick).
  • Place 4 vanilla wafer cookies on each of 8 plates and top with bananas. Pipe a heaping teaspoon of pudding on top and sprinkle with crumbled cookies, to garnish.

1 can (20 ounces) pineapple chunks
1 can (11 ounces) mandarin oranges
1 package (3 ounces) cook-and-serve vanilla pudding mix
1 cup sliced fresh strawberries
1/2 cup maraschino cherries
1 to 2 medium ripe bananas, sliced

Steps:

  • Drain pineapple and oranges, reserving juices in a 2-cup measuring cup; set fruit aside. Add enough water to juices to measure 1-1/2 cups. In a saucepan, whisk the juices and pudding mix. Cook and stir over medium heat until mixture comes to a full boil. Cool to room temperature, stirring occasionally., Fold in the strawberries, cherries and reserved pineapple and oranges. Cover and refrigerate. Just before serving, fold in bananas.

We call this recipe Peach cobbler in my family, but the real title is Fruit Pudding, since you can use other kinds of fruit in it.. We love it, very easy and a good way to use up your canned fruit.

1 cup sugar
3/4 cup flour
2 teaspoons baking powder
1/8 teaspoon salt (actually it's a dash of salt)
3/4 cup milk
1/2 cup butter or 1/2 cup margarine
1 quart canned fruit

Steps:

  • Preheat oven to 350, and while it preheats, place 1 stick of butter or margerine in a 9 X 13 or smaller deeper baking dish, in the oven until butter melts.(9x13 makes a nice size, but it comes out kind of thin.).
  • Mix sugar, flour, baking powder, salt, and milk together, by hand until smooth.
  • In pan with melted butter, add batter, making sure it covers most of the bottom of the pan.
  • Drain fruit, and spoon on top of batter evenly, so batter is evenly covered with fruit.
  • Bake at 350 for 40 minutes.

1 (4-serving size) box Banana Cream or Vanilla instant pudding mix
1 cup cold milk
35-40 vanilla wafers
2 bananas, sliced
1 - 2 cups Cool Whip, thawed, divided

Steps:

  • In a mixing bowl, whisk together the pudding mix and milk for about 2 minutes, until pudding is smooth and thick. Gently fold in about 3/4 c. of Cool Whip with a rubber spatula. Spoon or pipe a teaspoon or so of pudding onto the rounded side of the vanilla wafers and place flat side down on a serving dish. (I used a teaspoon to spoon it on. To pipe, fill a ziptop plastic bag with the pudding then snip off a corner of the bag.) Top each wafer with a slice of banana. Then with a small dollop of Cool Whip and serve.
