EASY FRUIT LOAF



Easy Fruit Loaf image

An easy to make fruit loaf using sultanas or a mixture of dried fruits. Serve buttered with tea or coffee for a change from cookies.

Number Of Ingredients 8

2 cups water
2 cups sugar
2 cups sultanas or 2 cups mixed dried fruit
2 ounces butter
3 cups flour
1 teaspoon mixed spice
1 teaspoon cinnamon
1 teaspoon baking soda

Steps:

  • Heat gently together in a pot on stove top the water, sugar, dried fruit and butter until butter melts and sugar dissolves.
  • Allow to cool for a few minutes then stir in flour and spices and baking soda.
  • Pour into a large loaf pan which has been greased and floured or bottom lined with baking paper and bake at 350'F for 45 minutes or until a cake tester comes out clean.
  • Remove from oven and leave to cool in tin for 10 minutes then tip out onto a wire rack to finish cooling.
  • Serve cut in slices and buttered.

BREAD MACHINE FRUIT LOAF

This came from my bread machine recipe book. I have made it a number of times and it comes out lovely. Fantastic as a breakfast toasted and buttered! Yum! I have altered the recipe slightly so that it is compatible with all of you. An Australian tablespoon = 4 tsp (20ml), so I have converted all measurements to teaspoons to avoid confusion. If you have a sweet bread cycle I'd recommend using that, but otherwise I'm pretty sure ordinary would work fine. I have frozen slices in plastic bags, so I always have some on hand if I get a craving. Nutella makes a good spread for this.

270 ml water
6 teaspoons butter or 6 teaspoons oil
1 1/2 teaspoons salt
6 teaspoons brown sugar
450 g white bread flour (3 cups)
6 teaspoons powdered milk
3 teaspoons ground mixed spice
2 teaspoons yeast
1/2 cup mixed dried fruit (I use sultanas and raisins, but you could use commercial mixed fruit or currants)
3 tablespoons water (optional)
6 teaspoons sugar (optional)
3 teaspoons gelatin (optional)

Steps:

  • Put all of the ingredients except the fruit in the order recommended by your manufacturer.
  • If you have a nuts dispenser place the fruit in there.
  • Otherwise add the fruit when the 2nd knead has 8 minutes to go.
  • If using the glaze, combine glaze ingredients in a small saucepan over a heat until the sugar and gelatine has dissolved.
  • Use the pause function if you have one, at fifteen minutes into the baking cycle, brush glaze over loaf.

SPICED FRUIT LOAF

Number Of Ingredients 15

450g strong white flour , plus extra for dusting
2 x 7g sachets easy-blend yeast
50g caster sugar
150ml warm milk
1 egg , beaten
50g unsalted butter , melted, plus extra for greasing
oil , for greasing
1½ tsp ground cinnamon
1 tsp ground ginger
50g dried apricot , chopped
50g dried fig , chopped
50g pitted date , chopped
50g sultana
50g glacé cherry , chopped
juice 1 orange

Steps:

  • Soak the dried fruits in the orange juice for about 30 mins, then sieve, reserving the juice.
  • Put the flour, yeast, caster sugar and 1 tsp salt into a large mixing bowl with the spices and soaked fruit and mix well. Make a well in the centre and pour in the warm milk, reserved orange juice, the beaten egg and the melted butter. Mix everything together to form a dough - start with a wooden spoon and finish with your hands. If the dough is too dry, add a little more warm water; if it's too wet, add more flour.
  • Knead in the bowl or on a floured surface until the dough becomes smooth and springy. Transfer to a clean, lightly greased bowl and cover loosely with a clean, damp tea towel. Leave in a warm place to rise until roughly doubled in size - this will take about 1 hr depending on how warm the room is.
  • Knock the dough back by kneading for a few secs. Dust 2 x 2lb loaf tins with flour. Halve the dough. Use a little flour to help you shape each half into a smooth oval, then pop them into the tins. Cover both loosely with a clean, damp tea towel and leave to prove in a warm place for about 20 mins. Meanwhile, heat oven to 180C/160C fan/gas 4.
  • Bake for 20 mins, then cool in the tins before turning out and slicing.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, combine Ingredients A and soak for 15 minutes.
  • In another bowl, combine Ingredients B and mix well.
  • In a separate bowl, sieve flour and baking soda. Ensure baking soda is not lumpy. Add in soft brown sugar. Mix well and put aside.

1/2 cup breadcrumbs made from whole wheat bread
1/4 cup chopped mixed dried fruits or chopped dried apricots
1 large egg
3 tablespoons chopped shallots
2 tablespoons Dijon mustard
1 teaspoon crumbled dried sage leaves
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons apricot preserves

Steps:

  • Preheat oven to 425°F. Combine beef, breadcrumbs, chopped fruits, egg, shallots, 1 tablespoon mustard, sage, salt and pepper in large bowl; mix thoroughly. Shape mixture into 2 oval loaves, each about 1 inch thick, and place on small rimmed baking sheet.

1/4 cup Splenda sugar substitute or 1/4 cup sugar substitute

400g dried mixed fruit
85g glacé cherry
1 Bramley apple , about 175g, grated, plus zest 1 orange and 1 lemon
150ml good apple juice
2 tbsp brandy
2 tbsp Cointreau (or use more brandy)
140g butter , plus extra for greasing
100g dark muscovado sugar
2 large eggs , beaten
85g self-raising flour
100g white breadcrumbs
2 tbsp golden syrup
2 tsp mixed spice
1 tsp ground cinnamon
½ tsp salt
25g toasted hazelnut , pecan nuts and blanched almonds, roughly chopped
50g butter
50g dark muscovado sugar
1 tbsp golden syrup
1 tbsp brandy
25g each toasted hazelnuts, pecan nuts, blanched almonds and glacé cherry , left whole
icing sugar , for dusting (optional)

Steps:

  • Put the dried fruit, cherries, apple, zests, apple juice, brandy and Cointreau in a large bowl. Microwave on High for 1 min, then leave to soak overnight.
  • Butter and line a 2lb loaf tin with a strip of non-stick baking paper. Heat oven to 180C/160C fan/gas 4. Put the kettle on to boil and have a roasting tin, plus a sheet of buttered foil, ready.
  • Beat the butter and sugar together until it turns a little paler, then stir in the eggs, flour, breadcrumbs, syrup, spices, salt, soaked fruit and the nuts. Spoon into the loaf tin and smooth the top. Scrunch the foil loosely over the tin, twisting corners to tighten it around the tin's edges. Sit it in the roasting tin, then pour in a few cms of boiling water. Carefully transfer to the oven and bake for 40 mins.
  • After 40 mins, turn down the oven to 160C/140C fan/gas 3 and cook for another 1½ hrs, topping up the water level every now and again.
  • To reheat the pudding, either return it to a medium oven for 30 mins in its tin, or turn out onto a serving plate, cover loosely with cling film and microwave for 5 mins on Medium. For the topping, gently heat the butter, sugar and syrup together until the sugar dissolves, stir in the brandy, then tip in the nuts and fruit. Spoon over the hot pudding and dust with a little icing sugar, if you like.

175 g flour
2 teaspoons baking powder
50 g sugar
100 g sultanas or 100 g raisins
1 egg
2 bananas

Steps:

  • Pre heat the oven to 180°C and line a small baking tin with baking paper.
  • Mix the flour, the baking powder, the sugar and the raisins/sultanas in a bowl.
  • Add the egg and the well mashed bananas. Blend toghether (The dough should be soft and creamy.).
  • Fill the dough into your baking tin and bake for approximately 45 minutes (or until inserted toothpick comes out clean).

1 cup whole wheat flour
1 cup raisins
2/3 cup nonfat dry milk powder
1/2 cup packed brown sugar
1/2 cup finely chopped dried apricots
1/3 cup toasted wheat germ
1/4 cup chopped toasted almonds
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup egg substitute

2 1/2 cups cake flour
2 teaspoons baking powder
1 pinch salt (only if you're using unsalted butter)
1 cup mango pulp
3 passion fruit
1/2 cup icing sugar, sifted

Steps:

  • Preheat oven to 325F and grease and line a 2lb loaf tin.
  • Place the butter and sugar into a large bowl or the bowl of your stand mixer and beat until light and fluffy, about 2 minute on med-high speed.
  • Add in the eggs and vanilla extract, scraping down the sides as necessary, mix on med-high until well incorporated and smooth, around 1 minute.
  • Add the cake flour, baking powder and salt if using, mix on low-med until smooth.
  • Add in the mango purée/pulp and mix on low-medium until well incorporated, light and smooth.
  • Pour the cake batter into the lined loaf tin and level it off with a spatula/wooden spoon.
  • Place in the oven for 65-70 minutes until risen, golden and an inserted skewer into the centre comes out clean.
  • Leave to cool in the tin for at least 1 hour before transferring to a wire rack.
  • Once cool, make the glaze: Using a medium sized bowl, scrape the insides of the passion fruits into a sieve and use the back of a spoon to separate the juice from the seeds. Place seeds in a separate bowl, you can either discard them or use them as a garnish.
  • Add 1/2 cup sifted icing sugar into the passion fruit juice and mix until smooth and glossy.
  • Slowly spoon glaze all over the cooled cake and garnish with passion fruit seeds if desired.
  • Cake will keep in an airtight container, at room temp, for 3 days.

This is a super fast recipe that is simple but yummy in every way..an added bonus kids love it too!!!

Steps:

  • In a bowl add together your bran, milk, cinnamon, vanilla extract, strawberrys and sultanas. Give a light mix. Then leave overnight or until the bran has lost original form
  • Once the bran has absorbed the milk, and has gone like a mushy texture, you can the add your self raising flour and sugar. Mix altogether until all combined with other ingredients
  • Put the mixture into buttered, medium sized loaf tin or something similar to this
  • Place into a pre heated oven ( 160 degrees c) for 25-30 minutes. Keep testing the minture though!!! You will know it is cooked if you insert a knike blade and when pulled out it is clean.
  • Allow to cool then slice and enjoy with butter, or its even yummy on its own

Easy Fruit Loaf - Low Fat

Steps:

  • In a mixing bowl mix wheat, saltanas and sugar. Stir in milk, cover and leave to soak for at least 1hr - 2hrs.
  • Add flour, baking soda, cinnamon and mixed spice, stir well. The mixture will be quick thick and sticky.
  • Transfer mixture to well greased loaf tin.
  • Place in a moderate oven 150-160C for 1hr - 1hr 15mins. check with skewer to ensure cooked.
  • (Tip: half way through cooking time, cover with foil to prevent over browning)
  • Allow to cool for 5mins before turning out of tin and onto a baking tray.
  • Notes;
  • This cake is a lovely lower fat alternative to fruit cake. Its wonderful sliced warm with low fat spread/butter.
