This recipe was made by my mother only around Christmas time. Now, I carry on the tradition of this sweet confection.

1 cup margarine, softened
2 pounds confectioners' sugar, sifted
1 (14 ounce) can sweetened condensed milk
3 cups coconut
1 cup finely chopped walnuts
1 teaspoon vanilla extract
1 (12 ounce) package semisweet chocolate chips
2 tablespoons shortening

Steps:

  • In large bowl, combine margarine, confectioners' sugar, condensed milk, coconut, chopped walnuts and vanilla. Stir well. Cover and chill in the refrigerator for 2 hours, or until mixture has thickened enough to roll into balls. Roll the mixture into 1-inch balls and place close together, but not touching, on cookie sheets. Freeze until hard.
  • While bonbons are freezing, line a cookie sheet or flat surface with waxed paper. Combine chocolate chips and shortening in the top of a double boiler, over, not in, simmering water. Stir until melted. Using a toothpick or a fork, dip each bonbon in the melted chocolate. Place on waxed paper to dry. When chocolate has hardened, store bonbons in plastic bag in the freezer.

Moist and tasty fruitcake is made with all types of candied fruit and nuts with a hint of orange and more than a hint of bourbon. It takes about three days to complete the process, but it is well worth the time and effort!

1 cup chopped candied orange peel
1 cup chopped candied citron
1 cup chopped candied pineapple
1 cup halved red candied cherries
1 cup halved green candied cherries
1 cup dried currants
1 cup raisins
1 cup chopped pitted dates
1 cup chopped walnuts
¾ cup chopped almonds
½ cup orange juice
⅔ cup bourbon whiskey
4 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
1 teaspoon ground cloves
1 teaspoon ground allspice
1 teaspoon ground ginger
2 teaspoons unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon salt
1 ½ cups butter, room temperature
1 cup packed brown sugar
½ cup white sugar
6 egg yolks
¾ cup applesauce
½ cup bourbon whiskey
1 teaspoon vanilla extract
½ cup molasses
6 egg whites

Steps:

  • On the first day, combine the candied orange peel, candied citron, candied pineapple, red and green candied cherries, currants, raisins, walnuts, and almonds. Combine the orange juice and the 2/3 cup bourbon; pour over the fruit and nuts. Stir and then cover tightly. Let the fruit marinate in a cool place for 1 full day, or at least 20 hours.
  • On the second day, line two 9x5 inch loaf pans with parchment paper or aluminum foil and grease the inside with cooking spray. Combine the flour, cinnamon, nutmeg, cloves, allspice, ginger, cocoa, baking powder, and salt in a large bowl and stir with a whisk to blend.
  • In a separate large bowl, beat the butter, brown sugar, and white sugar until light and fluffy using an electric mixer. Stir in the egg yolks until blended and then mix in the applesauce, the 1/2 cup bourbon, and vanilla until fluffy. Continue stirring, and add the the flour mixture gradually until well combined. Add the molasses and stir to combine. When the batter is thoroughly mixed, gently mix in the fruit and nut mixture with all of its juices.
  • In a separate bowl, whip the egg whites with an electric mixer until they can hold a stiff peak. Fold egg whites into the batter. Divide evenly between the prepared pans. Cover loosely with a towel and let the batter stand overnight in a cool, dry place.
  • On the third day, preheat the oven to 250 degrees F (120 degrees C). Place a large baking pan on the bottom shelf and pour boiling water into it until almost full. Place a baking sheet on the center shelf and place the fruit cakes on the baking sheet.
  • Bake for 2 1/2 hours in the preheated oven. Check the water level and refill if needed. Cover the cakes with a sheet of parchment paper, taking care not to let it touch the shelf. Continue to bake until a knife or toothpick inserted into the center comes out clean, about 1 hour more. Cool fruitcakes in the pans, set over a wire rack. Once cool, remove the cakes from the pans, and leave the parchment paper on. Sprinkle with more bourbon if desired and wrap in aluminum foil. Place in a tin or other sealed container overnight before serving.

My husbands mom made these for years and sent them to us. I loved them so much but could never get the recipe from her. I found this recipe on cooks.com. After I found it her recipe arrived in the mail. Actually I like this recipe better. It is easier and less preparation. These do not last very long in our house.

1/2 c unsulphured molasses
1/4 c water
15 oz pkg of raisins
1 lb container of mixed candied fruit
1/2 c butter
2/3 c sugar
3 eggs
1 c plus 2 tbsp sifted all-purpose flour
1/8 tsp baking soda
3/4 tsp cinnamon
3/4 tsp nutmeg
1/4 tsp allspice
1/4 tsp ground cloves
1/4q c orange juice or rum
1/2 c chopped nuts

Steps:

  • 1. Blend together molasses and water in a large deep saucepan. Place over low heat; stir constantly until mixture comes to a boil. Add raisins; bring to a boil again. Reduce heat and simmer 5 minutes. Remove from heat and stir in candied fruit. Set aside.
  • 2. Cream together butter and sugar. Blend in eggs, one at a time. Sift together flour, soda and spices; add to butter mixture alternately with orange juice. Add molasses-fruit mixture and chopped nuts; blend.
  • 3. Line mini cupcake pan with liners. Spoon in fruit cake mixture. If desired, garnish with pecan half or an additional cherry half. Bake at 325F for 15-20 min. (check) Cool before storing. Makes 6 doz fruit cake bon bons.

This easy fruit cake recipe is dense but moist and not overbearingly boozy, so it's perfect for Christmas. It makes two loaves, too!

2 c. golden raisins
2 c. chopped dried apricots
1 c. chopped dried figs
1 c. chopped candied ginger
1 c. brandy, whiskey, or apple cider, plus more for brushing
Nonstick baking spray with flour
3 c. all-purpose flour
1 tbsp. apple or pumpkin pie spice
1 tsp. baking powder
3/4 tsp. salt
2 sticks unsalted butter, softened
1 1/2 c. light brown sugar
3 large eggs
1 tbsp. vanilla extract
1 1/2 c. candied cherries
1 1/2 c. chopped nuts, like pecans, walnuts or almonds

Steps:

  • In a medium bowl, stir together the raisins, apricots, figs, ginger, and brandy (sub whiskey or apple cider if you like). Cover and let soak for at least 4 hours or up to 24 hours, stirring a few times during the soak.
  • Preheat the oven to 300F. Butter or spray 2 (9x5-inch) loaf pans with baking spray.
  • In a medium bowl, whisk together the flour, pie spice, baking powder, and salt. Set aside.
  • In a large mixing bowl, beat butter with a hand mixer until smooth. Add the sugar and beat on medium speed until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating until well incorporated. Beat in the vanilla. With mixer on low speed, slowly add the flour mixture, beating just until combined. With a spatula, fold in the candied cherries, nuts, and soaked fruit. Divide the batter evenly among the two baking pans.
  • Bake for 2 hours or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pan for 10 minutes. Run a knife around the cake to release it from the edges. Remove and place them on a cooling rack. Generously brush tops and sides of the cakes with brandy or whiskey (you can also use simple syrup). Cool completely. Store the cakes tightly wrapped in plastic wrap for up to 6 weeks.

EASY RED VELVET CAKE BON BONS

1 box Red Velvet cake mix
1 can cream cheese icing
1 pkg Baker's White Chocolate

Steps:

  • Make Red Velvet cake as per package directions. Let cool. Crumble up cooked cake and put in large bowl. Add cream cheese icing to the cake. Stir together until mixed.
  • Roll into 1 inch balls and place on cookie sheet lined with wax paper. Refrigerate for about 10 min.
  • Melt your white chocolate, and then roll the balls into melted chocolate. Set aside on wax paper until chocolate hardens. You may garnish with leftover cake, drizzle with brown chocolate, or add your favorite holiday sprinkles.
