Number Of Ingredients 9

20 ripe tomatoes
8 pears
8 peaches
6 large onions
2 red sweet peppers
4 cups white sugar
1 quart vinegar
2 tablespoons salt
2 tablespoons whole pickling spices (tie up in a square of muslin)

Steps:

  • Peel all the fruits.
  • Cut the tomatoes into pieces, slice fruit 1/4 inch thick, mince onion.
  • Put all the ingredients into a large kettle.
  • Bring to a boil and cook, stirring occasionally for about 2 hours, until no watery liquid is left and mixture is thick.
  • Ladle into sterile jars and seal according to manufacturers directions,.

1 cup sugar
1/2 cup orange marmalade
1 teaspoon lemon juice
1 package (12 ounces) fresh or frozen cranberries, finely chopped
2 cups fresh raspberries
2 medium tart apples, diced

Steps:

  • In a large bowl, combine the sugar, marmalade and lemon juice; mix well. Stir in the cranberries, raspberries and apples. Cover and refrigerate until serving. Stir before serving.

I love this relish. It is great with fish, chicken, pork, cheese and crackers. Sometimes I throw some into a stew for extra flavor or anything else you want to put it in. Good apples for this recipe are Idared, Northern Spy, Spartan, Cortland and Empire or heirloom varieties, such as Red Astrachan and (Chenango) Strawberry. A sweeter apple would lend more of a dessert quality to the relish. I use any old apple I have on hand.

1/4 cup vegetable oil
4 ounces butter
4 cups diced onions
4 apples, peeled, cored and cut into 1/2 inch cubes
3 tablespoons lemon juice
1 teaspoon cayenne pepper
1/4 cup honey
1 1/2 cups riesling wine or 1 1/2 cups any other dry white wine
salt and pepper

Steps:

  • In a large saucepan, heat oil and butter over medium high heat. Add onions and cook about 40 minutes or until caramelized.
  • In a bowl toss together apples and lemon juice until well coated. Add to saucepan; increase heat to high and cook for 10 minutes or until apples are brown.
  • Add cayenne pepper and honey; mix thoroughly. Add wine and REDUCE for 20 minutes. Season with salt and pepper to taste. Makes 2 ½ cups.

APPLE AND BERMUDA ONION RELISH

Number Of Ingredients 11

2 pounds Granny Smith apples
2 tablespoons fresh lemon juice
1 large red Bermuda onion, diced
1 sweet red pepper, diced
1 yellow pepper, diced
2 tablespoons canola oil
2 tablespoons curry powder
1 teaspoon cayenne pepper
1/2 cup firmly packed brown sugar
1/2 cup cider vinegar
1/2 cup fresh cilantro leaves, loosely packed

Steps:

  • Core and slice the apples into thin wedges. Place in a bowl, toss with the lemon juice and reserve. Put the diced onion, peppers and oil in a nonstick 3-quart saucepan and saute over medium heat until the vegetables are soft and wilted. Turn the heat to low, add the dry spices and stir to coat the vegetables evenly and release the full flavors of the spice mixture. Add the sugar and continue cooking until it melts and begins to bubble. Add the vinegar slowly and carefully to avoid splashing. Continue cooking 5 minutes. Stir in the reserved apples and their juice and cook no more than 2 to 3 minutes, watching to be sure the apples don't overcook and become mushy. Remove from the heat and set the pan in an ice-water bath to cool the relish as quickly as possible. Chop the cilantro leaves coarsely and add to the relish at the last moment before serving. Without the cilantro leaves, the relish will keep 1 to 2 weeks in the refrigerator, longer if properly stored in air-tight jars.;

SWEET ONION RELISH

4 to 6 yellow onions (small dice)
4 tablespoons brown sugar
3 tablespoons balsamic vinegar
3 tablespoons red wine
1 teaspoon red wine vinegar
Salt and pepper

Steps:

  • Saute the onions in a skillet over medium-low heat until translucent and caramelized, about 10 minutes. Add the brown sugar and stir until dissolved. Deglaze the pan with both vinegars and the wine. Simmer on medium-low heat until all the liquid has been evaporated, about 15 minutes.

3 Tbsp pour olive oil (i use crisco olive oil)
4 c thinly sliced sweet viadahlia onion
1/3 c simply fruit apricot spreadable fruit-in the jam aisle
1//4 c golden raisins
2 tsp apple cider vinegar
2 tsp dijon mustard
2 Tbsp rosemary, chopped fine
s & p to taste

Steps:

  • 1. Heat oil in a large skillet over medium heat. Add onions and sauté for 5 minutes or until just beginning to soften. Reduce heat to low and cook 25 minutes ,stirring often, until onions turn golden. Remove from heat.
  • 2. Stir in spreadable fruit, raisins, vinegar, mustard and rosemary. Season with salt and pepper.
