1 package (3 ounces) lemon gelatin
1 package (3 ounces) orange gelatin
3 cups cubed pound cake (1-inch cubes)
2-1/4 cups whipped topping
2 tablespoons sugar
1/8 teaspoon ground cinnamon
6 maraschino cherries with stems

Steps:

  • Prepare gelatins separately according to package directions. Pour into separate ungreased 9x5-in. pans. Refrigerate until set. Cut into 1-in. cubes. , In each of six 1-1/2-cup parfait glasses or dessert dishes, layer 1/4 cup cake cubes, 1/3 cup cubed orange gelatin, 3 tablespoons whipped topping, 1/3 cup cubed lemon gelatin, 1/4 cup cake cubes and 3 tablespoons whipped topping. Combine sugar and cinnamon; sprinkle over whipped topping. Top with a cherry.

2 cups boiling water, divided
1 pkg. (4-serving size) JELL-O Cherry Flavor Gelatin
1 pkg. (4-serving size) JELL-O Lemon Flavor Gelatin
2 cups cold water, divided
2 cups thawed COOL WHIP Whipped Topping

Steps:

  • Stir 1 cup of the boiling water into each flavor gelatin in separate bowls at least 2 min. until completely dissolved. Stir 1 cup of the cold water into each bowl. Pour into separate 9-inch square pans.
  • Refrigerate 4 hours or until firm. Cut gelatin in each pan into 1/2-inch cubes.
  • Layer alternating gelatin flavors and whipped topping in 8 dessert glasses.

POMEGRANATE GELATIN YOGURT PARFAITS

4 cups pomegranate juice
One 1-ounce box (four .25-ounce envelopes) unflavored gelatin
1/2 cup pomegranate seeds
1/2 cup halved grapes
1 quart Greek yogurt
1 1/2 cups sliced strawberries
1 1/2 cups blueberries

Steps:

  • Heat 3 cups of the pomegranate juice in a small saucepan until hot. Add the remaining cup of pomegranate juice to a large bowl and sprinkle the gelatin packets over the juice. Let sit for 1 minute. Add in the hot juice and stir until the gelatin is completely dissolved. Pour the mixture into a 9-by-13-inch pan. Sprinkle with the pomegranate seeds and grapes and refrigerate until fully set, at least 3 hours or overnight.
  • Put the Greek yogurt in a large bowl and whip with an electric mixer until fluffy. Cut the pomegranate gelatin into 1 1/2-inch cubes. Layer the gelatin, whipped yogurt, sliced strawberries and blueberries in 8 parfait or juice glasses.

1 cup fresh fruit
3/4 cup boiling water
1 (3 ounce) package any flavor Jello gelatin
1/2 cup cold water
ice cube
3/4 cup thawed Cool Whip

Steps:

  • Divide fruit among 6 parfait glasses.
  • Stir boiling water into gelatin in medium bowl at least 2 minutes until completely dissolved. Mix cold water and ice cubes to make 1 1/4 cups. Add to gelatin, stirring until slightly thickened. Remove any remaining ice. Measure 3/4 cup of the gelatin; pour into parfait glasses. Refrigerate 1 hour or until set but not firm (gelatin should stick to finger when touched and should mound).
  • Stir whipped topping into remaining gelatin with wire whisk until smooth. Spoon over gelatin in glasses.
  • Refrigerate 1 hour or until firm.

My mom made this one year for our fourth of July celebration. It is festive, easy to make, and very tasty. Refrigeration time is included in cook time.

3 ounces raspberry gelatin powder
3 cups boiling water, divided
1 cup cherry pie filling
3 ounces lemon gelatin
8 ounces cream cheese
3 ounces grape gelatin
1 cup blueberry pie filling
4 ounces frozen whipped topping, thawed

Steps:

  • Spray 9 inch square baking dish.
  • In a small bowl dissolve raspberry gelatin in 1 cup boiling water. Stir in cherry filling. Pour into prepared dish and refrigerate 30 minutes.
  • In a small bowl dissolve lemon gelatin in 1 cup boiling water. Place cream cheese in medium bowl. Gradually add lemon gelatin and beat with wire whisk until well blended. Spoon over raspberry layer and refrigerate 30 minutes.
  • In a small bowl dissolve grape gelatin in 1 cup boiling water. Stir in blueberry filling. Spoon over lemon layer and refrigerate 30 minutes.
  • Spread thawed whipped topping over the top just before serving.

1 bottle Prosecco (750 ml)
3/4 cup sugar, divided
1/2 cup water
2 (1/4-ounce) packets unflavored gelatin
1 cup heavy cream
1/2 pint mascarpone, room temperature

Steps:

  • Put the Prosecco, 1/2 cup of the sugar and 1/2 cup water in a large saucepan and bring to a boil over high heat. Reduce the heat to a simmer and cook for 5 minutes to burn off some of the alcohol. Remove from the heat and slowly whisk in the gelatin until completely dissolved. Pour into a 9 by 11-inch baking dish, cool to room temperature, then refrigerate to set up for at least 4 hours.
  • In a large bowl, whip the cream to medium stiff peaks. In another bowl, whisk the remaining 1/4 cup sugar into the mascarpone until smooth. Add 1/3 of the whipped cream to the mascarpone to lighten, and then fold in the remaining whipped cream. Cut the Prosecco gelatin into 1 by 1-inch cubes and put a layer into the bottoms of 4 parfait glasses. Divide 1/2 of the cream mixture among the glasses on top of the gelatin, and then repeat with 2 more layers, ending with a final dollop of the cream. Serve with a long spoon and dig in!

1/2 cup sliced fresh strawberries
3/4 cup boiling water
1 pkg. (0.3 oz.) JELL-O Strawberry Flavor Sugar Free Gelatin
1/2 cup cold water
3/4 cup ice cubes
1 cup plus 6 Tbsp. thawed COOL WHIP LITE Whipped Topping, divided

Steps:

  • Place berries into 6 parfait glasses. Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Add cold water and ice cubes; stir until ice is melted. Pour 3/4 cup evenly over berries. Refrigerate 20 min. or until gelatin is set but not firm. Meanwhile, let remaining gelatin stand at room temperature until cooled and ready to be used.
  • Add 1 cup COOL WHIP to remaining gelatin; stir with whisk until blended. Spoon over gelatin in glasses.
  • Refrigerate 1 hour or until firm. Serve topped with remaining COOL WHIP.
