Steps:
- Saute onions, garlic and scallions in olive oil until tender. Remove from pan and set aside. Remove skins and bones from chicken and pound flat. Mix flour, salt and pepper and place in a flat bowl. Dip chicken pieces into flour and lightly brown them in butter, 2-3 minutes per side. Add sauteed onions and garlic. Over high heat, add sherry, lemon juice and capers. This should thicken to make a nice gravy for the chicken. If gravy becomes too thick, add some chicken stock.
FRUGAL GOURMET CHICKEN
I think this came from the Frugal gourmet's tv show - was it back in the 80's? Anyway, this technique of "sealing in the juices" is wonderful and it ends the controversy (at least with me) whether the chicken on the grill is "really done". Try this.

Steps:
- Choose a stockpot or large sauce pan, depending on amount of chicken you are making.
- Fill pot with water and bring to boil.
- Place chicken with skin in pot until it stops boiling.
- (Seals in juices) Remove chicken from pot.
- Bring pot to a boil again.
- Put chicken back in and bring to a full boil.
- When water and chicken are boiling again, put lid on pan, turn burner off.
- Let stand for one hour.
- Finish chicken by placing on grill for 15- 20 minutes Brush with barbecue sauce.
- Preparation time is an estimate.

- Dredge with flour seasoned with salt and pepper.
- Sauté onions, garlic in oil until clear. Remove and deglaze with Chablis. Pour over the onions and garlic.
- Brown the Chicken then remove to warm plate. Add onions and garlic and deglaze with Marsala and reduce it a bit.
- Pour over Chicken.

- In a large frying pan, one with a cover, sauté the chicken in the olive oil. Remember, heat the pan first and then add the oil. When the chicken is brown, remove it to a heated platter and add the shallots or onions to the pan, Sauté for 3 minutes and then add the tomatoes and vermouth. Cook this until tomatoes are soft and tender and then return the chicken to the pan. Add the oregano, salt, and pepper, and cover. Simmer until the chicken is tender, about 20 minutes.

Steps:
- Place a 6 qt heavy stove - top covered casserole on the burner and add the vinegar, water, garlic, salt, bay leaves and pepper. Bring to a boil.
- Add the cut up meat to the casserole and cover, bringing to the boil again. Turn the heat to a simmer and cook, covered for 30 minutes. Add the soy sauce and cook for 10 more minutes. Remove meat from pot and reduce the juices by at least half. Remove sauce to a bowl and reheat the pot. Add the oil and brown the meat in small batches. Brown it well. Drain the oil from the pot and return the sauce to the pot. Heat the adobo to serving temperature.
- Serve with rice.

- Put the first six ingredients into a stockpot and bring to the boil.
- Add chicken wing pieces and simmer for about 20 minutes.
- Cool in the liquid.
- Drain and serve cold drizzled with sesame oil, if desired.
- Save the sauce to use again (keep refrigerated).

CHICKEN MULLIGATAWNY SOUP FROM "THE FRUGAL GOURMET"
The best chicken soup I've ever eaten. This came from "The Frugal Gourmet On Our Immigrant Ancestors" by way of a friend of mine. It's easy to make, although you need to make sure you have all of the spices, and at least for me, they aren't the most common of spices. Having said that, you won't have any problem finding them in the local Safeway.

Steps:
- In a 4-quart pot, simmer the chicken, covered, in 4 cups of water until tender, about 30 minutes.
- Remove, cool, debone, and chop the meat and skin coarsely.
- Save the stock in the pot.
- Set the meat aside.
- Heat a large frying pan and add the ghee, garlic, onion, celery, and carrot.
- Saute just until the onion is tender.
- Add this to the pot of reserved stock.
- Add 4 more cups of water to the pot along with all remaining ingredients except the garnishes and chicken.
- Cover and simmer for 30 minutes.
- Add the deboned chicken.
- Simmer for 5 minutes.
- Garnish with the fresh coriander and black pepper.
- I like lots of black pepper in this dish!
CHICKEN PICCATA (FRUGAL GOURMET)
Steps:
- 1. Saute the yellow onion, garlic and green onions in the olive oil just until tender.
- 2. Remove from the pan and set aside.
- 3. Remove skins and bones from chicken breasts and pound them flat.
- 4. Mix flour, salt and pepper together and place in flat bowl.
- 5. Dip chicken into flour mixture, lightly brown chicken in butter 2 or 3 minutes per side.
- 6. Add the sauted onions and garlic.
- 7. Over high heat add sherry, lemon juice and capers.
- 8. This should thicken to make a nice gravy for chicken.

- Soak lentils in 8 cups water in bowl for 5-6 hours. Place lentils w/ the water in a pot w/ the salt, garlic, bay leaf, oregano, and dill weed. Simmer for about 1 hour, covered, until tender but not mushy.
- Add the lemon juice to the lentil mixture. Place the chicken pieces in a casserole and pour the lentil mixture over them, and Top with the cheese, and Bake, covered, at 350 degrees for about 1 hr 15 minute (Might need to add extra water during baking.) Top w/yogurt before serving.
- Smith suggests serving w/a crunchy bread, Spinach Salad, and a heavy red wine.

- Place the cubed eggplant in a colander, salt it and let it drain for 20 minutes. Rinse well and set aside. Remove all the skin and fat from the chicken pieces. Heat a large frying pan and add 1 tablespoon of the oil.
- Saute the chicken in 2 batches until opaque on both sides (a few minutes). Set aside. Heat a 6- to 8-quart casserole and add the remaining 2 tablespoons of oil. Add the onion, garlic and eggplant. Saute over low heat until the onion is just tender, about 5 to 10 minutes.
- Add the chicken stock, cinnamon sticks, curry powder, cumin, turmeric and black pepper. Stir, bring to a boil, reduce heat and simmer for 10 minutes. Add the dark chicken meat along with the carrot, zucchini, turnip and red pepper. Simmer, uncovered, for 10 minutes.
- Add the chicken breasts, tomato, raisins and 1 tablespoon of the coriander, pushing down lightly to be sure the ingredients are covered by the liquid. Simmer, covered, for 10 minutes more.
- Salt and pepper to taste. Serve hot in deep soup bowls on top of rice, noodles or couscous, garnishing the top with the remaining coriander.

- Cover with foil.
- Put in frig overnight.
- Next day, put in oven and cook in 325° oven for 90 minutes.
- Check to make sure it is not burning. Chicken is done when easy to pull apart.
