FROZEN STRAWBERRY SALAD
The original recipe for this was called "Champagne Salad". I changed it because I leave out the bananas and pecans as my kids don't care for them. If you wish to include them, add 2 diced bananas and 1 cup chopped pecans. I place this in cupcake liners (the foil kind) and freeze on a cookie sheet until solid and then place in a freezer bag. This makes portioning easy. The title says salad but this is realy more of a dessert.

Steps:
- Drain pineapple.
- In a large bowl, cream together the sugar and cream cheese.
- Add the strawberries and pineapple.
- fold in the cool whip.
- Freeze in a 9 x 13 pan or in cupcake liners.
- To serve: Thaw the 9 x 13 pan for about 20 minutes.
- Cut into squares and serve.
- My kids eat the cupcake size ones still frozen- they are like a popsicle.

Steps:
- Combine cream cheese and sugar in a bowl; add strawberries and pineapple. Fold in the whipped topping.
- Line a loaf pan with parchment paper. Pour the strawberry mixture into the loaf pan.
- Place in the freezer until firm, about 6 hours. Set loaf pan in a warm water bath to loosen. Flip mixture onto a cutting board to remove; cut into slices.

- Stir together pie filling& ice cream.
- Sprinkle bananas with lemon juice.
- Add bananas& nuts to ice cream mixture.
- Turn into 8 individual molds- freeze until firm.
- Move to the refrigerator 15 minutes before serving.
- Unmold onto lettuce lined plates.
WARM STRAWBERRY SALAD WITH VANILLA FROZEN YOGURT
I first had a dessert like this in France at a restaurant/hotel called La Tour Rose in the city of Lyon. It?s a perfect summer dessert when strawberries are flavorful and inexpensive (compared to wintertime when they are imported from faraway places.) Once you take a mouthful of the warm strawberries, raspberry puree, and freezing yogurt, it?s like the ultimate berry and cream experience!

- Make the Frozen Yogurt: In a bowl, whisk together the yogurt, simple syrup, and vanilla. Chill 30 minutes; then freeze in an ice cream maker according to manufacturer's instructions
- Cram the frozen yogurt into the milk container, packing it well to get rid of all the air pockets. Freeze for at least 6 hours.
- Make the Strawberry Salad: puree the raspberries and sugar in a blender. Strain out the seeds and taste the puree for sweetness, adding more sugar if necessary. Divide the puree on among the plates, spreading evenly to coat the bottom of each plate. Using 4 berries per plate, carefully fan them on top of each plate, starting at the edge and spiraling in to the center. (It can be made up to this point up to 8 hours in advance. Just tightly cover each plate with plastic wrap and refrigerate until ready to serve.)
- Preheat the oven to 450 degrees F. Bake the strawberries until just warm, about 2 minutes. Alternatively, microwave them for 1 minute.
- Take the frozen yogurt out of the freezer and lay it on its side. With a serrated knife, leaving the frozen yogurt in its container, cut a 1 1/2-inch think slice off the end. Remove the container band around the slice. Cut the slice on the diagonal into 4 triangles. Place a triangle of frozen yogurt in the center of each plate (it will start to melt immediately). Cut the honeycomb, if using, into 4 pieces and place on top of the frozen yogurt. Serve immediately.
FROZEN STRAWBERRY SALAD
My daugher came home with this recipe when she was in High School. It has become one or our favorite cool to taste recipes for summer. She still loves it and will request it as does her friends. So easy to make and so easy to eat and enjoy on a hot summer day!

- 1. Mix above ingredients together, put in oblong glass dish 9 X 13. and freeze. Cut into squares. Eat as is or you can put on top of lettuce.
- 2. If I have fresh strawbrries I will slice them and add a little sugar to make syrup and put in the refrigerator ahead of time to soften up and make their own syrup. This can be used or subbed for the above frozen ones.
