1 1/4 cups graham cracker crumbs from 9 (2 1/4- by 4 3/4-inch) crackers
2 tablespoons sugar
5 tablespoons unsalted butter, melted
For filling
1 lb strawberries, halved (3 1/2 cups)
1 tablespoon finely grated fresh lime zest (from 3 limes)
1/4 cup fresh lime juice (from 2 limes)
1 (14-oz) can sweetened condensed milk
2 tablespoons tequila
2 tablespoons triple sec, Cointreau, or other orange-flavored liqueur
1 1/2 cups chilled heavy cream
Garnish: small strawberries

Steps:

  • Make crust:
  • Put oven rack in middle position and preheat oven to 350°F.
  • Stir together graham cracker crumbs, sugar, and butter in a bowl with a fork until combined well, then press mixture evenly onto bottom and up side of a buttered 9-inch metal or glass pie plate (4-cup capacity).
  • Bake 10 minutes, then cool in pie plate on a rack, about 30 minutes.
  • Make filling:
  • Purée strawberries, zest, lime juice, condensed milk, tequila, and liqueur in a blender until just smooth, then transfer to a large bowl.
  • Beat cream in another bowl with an electric mixer at medium speed until it just holds stiff peaks. Fold one third of cream into strawberry mixture gently but thoroughly to lighten, then fold in remainder in 2 batches.
  • Pour filling into crust, mounding it slightly, and freeze, uncovered, until firm, about 4 hours. Remove from freezer and let soften in refrigerator, about 40 minutes, before serving (pie should be semisoft).

¼ cup white sugar
⅓ cup margarine, melted
1 (14 ounce) can sweetened condensed milk
⅓ cup frozen limeade concentrate, thawed
2 tablespoons tequila

3 drops green food coloring, or as needed
1 cup heavy whipping cream
1 lime, sliced

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix pretzels and sugar together in a bowl; stir in margarine until evenly incorporated. Spoon mixture into a 9-inch pie plate; press into bottom and up sides of plate to form a firm, even crust.
  • Bake crust in the preheated oven until edges are lightly browned, about 5 minutes. Cool on a wire rack.
  • Mix sweetened condensed milk, limeade concentrate, tequila, orange liqueur, and green food coloring in a large bowl.
  • Beat cream in a glass or metal bowl until soft peaks form. Lift your beater or whisk straight up: the whipped cream will form soft mounds rather than a sharp peak. Fold whipped cream into sweetened condensed milk mixture. Spoon filling into cooled crust.

6 Tbsp. unsalted butter
10 graham crackers
3 Tbsp. sugar
1/2 tsp. kosher salt, divided
3/4 cup chilled heavy cream
4 limes, halved
1 (14-oz.) can sweetened condensed milk
3 Tbsp. tequila blanco

Steps:

  • Melt butter in a small saucepan over medium heat. Let cool slightly.
  • Crumble graham crackers into a food processor. Add melted butter, sugar, and 1/4 tsp. salt and process until mixture resembles wet sand. Transfer mixture to a shallow 9"-diameter pie dish. Using the bottom of a measuring cup, press crust firmly and evenly across bottom and up sides of dish. Freeze 20 minutes.
  • Meanwhile, whisk cream in a medium bowl until stiff peaks form, about 4 minutes.
  • Finely grate zest from 1 lime half into a small bowl; set aside. Squeeze juice from all of the limes into a fine-mesh sieve set over a glass measuring cup (you should have about 1/2 cup juice).
  • Pour lime juice into another medium bowl. Add condensed milk, tequila, and remaining 1/4 tsp. salt and whisk until mixture is smooth. Gently fold in half of the whipped cream just to combine, then add the remaining whipped cream and gently fold until no streaks remain (be careful not to overmix; you want to keep as much air in the whipped cream as possible).
  • Remove pie dish from the freezer and scrape filling into crust. Use a spoon to gently spread filling evenly all the way to the edges. Sprinkle with reserved lime zest and freeze until filling is set, at least 8 hours.
  • Do Ahead: Pie can be made 3 days ahead. Cover; keep chilled. Let soften in fridge 30 minutes before slicing.

1 cup pretzel, finely crushed
1/3 cup butter, melted

3 cups strawberries, hulled (reserve 4 for garnish)
1 (6 ounce) can frozen limeade concentrate, slightly thawed

1 tablespoon orange juice
1 quart vanilla ice cream, slightly softened
1 cup frozen whipped topping, thawed

Steps:

  • Heat oven to 350ºF.
  • Stir together all crust ingredients in medium bowl. Press onto bottom and up sides fo a 9-inch pie pan.
  • Bake for 8-10 min or until lightly browned. Cool completely.

1/2 teaspoon flaky salt
1 teaspoon apple pie spice
1 1/2 cups plus 2 tablespoons apple cider
3 1/2 cups ice
1/2 cup tequila
1/4 cup cinnamon schnapps
1/2 teaspoon vanilla extract
Squeeze lemon juice
2 apple slices, whipped cream and cinnamon sticks, for garnish

Steps:

  • Combine the sugar, salt and 1/2 teaspoon apple pie spice on a small plate. Pour 2 tablespoons apple cider on a second small plate. Dip the rims of two rocks glasses in the cider, then dip in the sugar mixture. Set aside.
  • Combine the ice, tequila, cinnamon schnapps, vanilla extract, lemon juice, remaining 1 1/2 cups apple cider and remaining 1/2 teaspoon apple pie spice in a blender. Blend until frothy. 1/4 c granulated sugar
1/2 stick butter, melted
1 can(s) condensed milk
1/4 c freshly squeezed lime juice
3 Tbsp tequila
3 Tbsp triple sec
1/2 c frozen strawberries with syrup, thawed
2 c heavy cream, whipped

  • 1. Combine crumbs, sugar and butter in a small bowl, press into bottom and sides of a 9 inch pie plate. Beat condensed milk, lime juice, tequila and Triple Sec in a large bowl with electric mixer at medium speed for three minutes until smooth. 5 tablespoons margarine or 5 tablespoons butter, melted
1/2 teaspoon lime zest
1 pint strawberry
2 limes
1 (14 ounce) can sweetened condensed milk
2 tablespoons orange-flavored liqueur
1 cup heavy whipping cream

Steps:

  • Prepare Crumb Crust: Preheat oven to 375 degrees F. In 9-inch pie plate, with fork, stir crust ingredients until crumbs are moistened. With hand, press mixture onto bottom and up side of pie plate, making a slight rim. Bake crust 10 minutes. Cool crust in pie plate on wire rack.
  • Prepare Strawberry Filling: Hull enough strawberries to equal 2 cups; reserve remaining berries for garnish. From limes, grate 1 teaspoon peel and squeeze 1/4 cup juice. In food processor with knife blade attached, pulse hulled berries with lime peel and juice, undiluted sweetened condensed milk, and orange-flavor liqueur until almost smooth. Transfer mixture to large bowl.
  • In small bowl, with mixer at medium speed, beat 2/3 cup cream until stiff peaks form; reserve remaining cream for garnish. Gently fold whipped cream into strawberry mixture, one-third at a time.

2 1/2 cups pretzel sticks, thin salted

  • Lightly coat a 9-inch pie plate with nonstick spray. Line a rimmed baking sheet with foil.

  • Mix together the blended pretzel (salt and all) with the melted butter and sugar, and pat into a large pie crust dish, or a number (8 or so) of smaller individual dishes. The crust should be about ¼ inch thick. Let set by allowing to freeze for about two hours.

If you want to wow your guests at your next Mexican fiesta, make this dessert. Period. This lime confection is a cross between an ice cream and a pie, and the pretzel crust adds just the right amount of saltiness to make it fun and totally unforgettable.

1 1/2 cups whole grain pretzel sticks
1/4 cup unsalted butter, melted
1/3 cup light agave nectar
1 (12-ounce) can evaporated skim milk
1 tablespoon arrowroot powder
1/2 cup light agave nectar
Freshly grated zest of 1 lime
6 tablespoons freshly squeezed lime juice (about 4 large limes)
2 tablespoons freshly squeezed orange juice (about 1 orange)
2 tablespoons good quality, preferably aged, tequila
1 tablespoon Cointreau or Triple Sec
1/2 teaspoon vanilla extract
1 cup heavy cream
Agave Nectar Whipped Cream (page 113)
Lime slices, for garnish

Steps:

  • Preheat the oven to 350°F. Lightly oil a 9-inch pie pan with canola oil spray.
  • To prepare the crust, grind the pretzels to a fine meal in a food processor. Add the butter and agave nectar and pulse to combine. Press into the prepared pie pan to form the crust. Bake for 5 to 7 minutes, until the edges turn slightly golden. Cool before filling.
  • To make the filling, first prepare an ice water bath. Then make a slurry by mixing 2 tablespoons of the evaporated skim milk and the arrowroot powder together. In a small saucepan, heat the remaining evaporated milk and the agave nectar until the mixture comes to a gentle simmer. Whisk the arrowroot slurry into the saucepan. Stirring constantly, let the mixture thicken slightly. Remove from the heat and place the saucepan in the ice water bath to cool down quickly, whisking often.
  • Pour the cooled filling mixture into a large bowl and add the lime zest, lime juice, orange juice, tequila, Cointreau, and vanilla extract. Whisk together well. Place in the refrigerator to cool about 30 minutes, or until semifirm.
  • Whip the cream until soft peaks form. Fold the whipped cream into the cooled lime mixture. Spoon the filling into the pie crust and freeze for about 4 hours, or until firm. To serve, let the pie defrost for about 10 minutes before slicing. Top the pie with lots of whipped cream and garnish with lime slices.
