FROUTOSALATA - MIXED FRUIT SALAD
Steps:
- Wash and peel apples.
- Using a sharp knife cut the apple in half through the center. Cut each half in half. Remove the core from each quarter and then slice each quarter into thin slices.
- Peel oranges. Remove as much of the pith as possible.
- While holding the orange firmly on a cutting board carefully cut the orange into rounds using a sharp knife.
- Arrange slices of apples and oranges on serving dish.
- In a small bowl combine honey and orange juice. Pour mixture over arranged fruit slices and sprinkle with cinnamon. Enjoy!

- Wash apples & pears [& peel, if desired], then core & cut into fairly small pieces, & place in large salad bowl.
- Peel nectarines, bananas & kiwi fruits & cut into fairly small pieces, as well, & add to other fruit pieces.
- Mix orange Juice & honey & pour over fruit, then toss to coat.
- Refrigerate at least an hour before serving.

- 1. Note: 1. To avoid any pesticides or chemicals fruit has now a days it is advised to peel all fruits. Except, of course if you buy from your local farmers market & they're really fresh . 2.Feel free add any other fruit you may like.
- 2. Wash and peel all the fruit. Cut into fairly small pieces. Place in a large salad bowl. Mix orange juice and honey and pour over the fruit. Toss and refrigerate for at least 1 hour before serving with feta, cottage cheese or any other cheese you prefer. Serve in individual bowls. Enjoy!!!

This fruit salad can be used as a dessert or as a side dish. It differs from other Greek fruit salad recipes I've made, and we all really liked this one the most because the creamy dressing adds a wonderful touch to the fruit salad.

- Rinse beans, soak for 24 hours and drain.
- Place drained beans and bay leaves in a large soup pot with 8 cups of water. Bring to a boil, reduce heat to low and simmer for 2 hours. Remove bay leaves.
- Add carrots, onion, celery, and simmer for 30 minutes longer.
- Add tomatoes, salt, pepper, and olive oil, and cook for 30 minutes. The beans should be soft and creamy, but not to the point of disintegrating.
- Remove from heat, season to taste, and serve in bowls, drizzled with olive oil and sprinkled with chopped parsley. Fassolatha bean soup is served warm or at room temperature.
